- In a large skillet, saute the carrots, celery, onion and peppers in oil for 5-6 minutes or until vegetables are crisp-tender. Add the next five ingredients. , Stir in couscous. Add broth; bring to a boil. Cover and remove from the heat; let stand for 5-8 minutes. Fluff with a fork and serve immediately.

SPICY MERGUEZ & COUSCOUS POT

- Heat the oil in a pan. Squeeze the sausagemeat from the skins and shape into 8 meatballs. Add them to the pan and sizzle on a medium-high heat for 5-10 mins, rolling around the pan, until they are cooked. Set aside.
- Drain the fat from the pan, leaving 1 tbsp behind. Reduce the heat and add the lemon, onion, chilli and pepper. Stir for 5 mins. Add the ras el hanout and stir for 1 min more.
- Add the tomatoes and 300ml water, and crumble in the stock cube. Return the meatballs to the pan and simmer, covered with a lid, for 10-15 mins, until the sauce is rich and the veg are tender. Season and stir in the coriander. Transfer to 2 microwavable containers with tight-fitting lids, and chill until you're ready to eat. Weigh 50g couscous into 2 sandwich bags to take to work too.
- When you're ready to eat, add the couscous to the cold sauce. Stir well and microwave for 3 mins, until the couscous is cooked through.

SPICY PORK AND COUSCOUS

- Combine cumin and ginger. Crush garlic, and add to spices. Wash and dry pork, and cut into 3/4-inch cubes. Roll the pork in the spice mixture, and set aside.
- Following the package directions, bring the beef stock to a boil. Add the couscous, cover and remove from heat. Allow to sit for 5 minutes, until the couscous has absorbed the liquid.
- Heat nonstick skillet until it is very hot; reduce heat to medium high, and add oil. Saute pork cubes until they are brown on all sides and slightly pink in the center, about 5 minutes.
- Meanwhile, wash, trim and coarsely chop tomatoes. Pit and chop olives. Wash, trim and cut the scallions into thin rounds. Wash and chop cilantro and mint. Add tomatoes, olives, scallions and lemon juice to couscous. When pork cubes are cooked, stir into mixture. Stir in the cilantro and mint. Season with salt and pepper.

We are big couscous fans in my house and this recipe that my husband found from Ainsley Harriot is really tasty. Great as a snack on it's own or as an accompaniment to roasted veggies or grilled meats and fish.

- Heat 1 tbsp of the oil in large pan. add the cumin,garlic,coriander and paprika and fry over a gentle heat for 1 min,stirring.
- Add the stock and saffron and bring to the boil. Add the spring onion and then pour in the couscous in a steady stream and give it a quick stir.
- Cover the pan with a tight fitting lid, remove from the heat and set aside for 5 minutes, to allow the grains to swell and absorb the stock.
- If you are serving this warm, stir in the rest of the oil and the remaining ingredients now. Otherwise allow the couscous to cool and chill in the fridge for 1 hour before adding the other ingredients for a yummy cold couscous salad.

- Heat olive oil in a large pot over medium. Saute the onion for several minutes till softened. Add the garlic and saute for another minute till fragrant.
- Stir in the tomato paste, harissa, cinnamon, ginger and 1/2 cup of the low sodium vegetable broth till smooth. Bring to a boil.
- Add sweet potatoes, zucchini, carrots, shredded cabbage, dried apricots, golden raisins and cilantro to the pot. Stir till combined.
- Add remaining 2 cups of vegetable broth to the pot. Bring to a boil. Season with salt and pepper to taste (I use about 3/4 tsp salt and 1/4 tsp pepper).Reduce heat and cover the pot. Simmer the mixture for 50-60 minutes, stirring gently 2 times during cooking, till all the vegetables are fully tender. Season with additional salt and pepper to taste, if desired. Remove from heat.Add chickpeas to the pot and simmer for 5 minutes more till they're heated through.
- Meanwhile, prepare couscous according to package directions.Pour cooked couscous onto a large platter. Top with the cooked vegetable stew. Serve.

I'm always on the lookout for easy casseroles. This lovely recipe fits the bill, it's so tasty. Placed here so I don't lose the recipe; another of those comfort dishes that you don't want to miss. The flavor is outstanding.

- 1. Preheat oven to 350 F. In a large frying pan, heat oil and saute the onion for - 3 minutes. Next, add the red pepper, green onion and carrots, stirring often for 5 minutes.
- 2. In a small pot, boil the water and add the couscous and remove from heat, allowing to sit covered, for 5 minutes.
- 3. Now add the raisins and tomatoes to the pan, stirring for 4 minutes.
- 4. Bring another pot of water to a boil and add the spinach, boil for 3 minutes, remove and drain. Gently mix the spinach into the ingredients in the frying pan. Set aside until needed.
- 5. Using a 13″x9″ baking dish, add the couscous to form a bottom layer. Then add the spinach mixture. Crack your eggs and add them whole to the top of the casserole.
- 6. Bake for 10 minutes or until the eggs are cooked to your preference. The eggs are always sunny side up. Now you are ready to serve.

- It's important to have your vegetables chopped, sliced and fully prepared before you begin. There are a few different ways to roast the peppers -click here for options. With this dish I usually throw them directly on the burner of my gas stove and let them cook until the skin chars and blisters. With tongs, carefully turn the peppers so that they roast evenly on all sides. The peppers are done roasting when they are soft and starting to collapse.
- Transfer the roasted peppers to a large mixing bowl. Cover the bowl with plastic wrap and allow the peppers to steam for 15 minutes. You can also steam them in a paper bag if you prefer.
- While the peppers are steaming, prepare and chop the rest of your ingredients. The Roma tomatoes, zucchini, Japanese eggplant and yellow squash should be sliced very thin, about 1/16 in thickness.
