CHORIZO CORN CHOWDER

Steps:
- Preheat the oven to broil. Move the top oven rack to about 6 inches from the broiler. Place the chiles on a foil lined or well greased baking pan and broil for 15-18 minutes, turning over every 2-3 minutes. (Set a timer and be ready to turn them several times.) You want the chiles to be soft and blackened all over when you remove them from the oven. Transfer the roasted chiles to a dish with a lid (or a dish that can be tightly covered with foil). Cover and let rest for 10-15 minutes. The blackened portions should peel right off after resting. Peel and seed the chiles and chop into 1/4" - 1/2" pieces.
- In a large pot, cook and crumble the chorizo over medium heat, about 6-7 minutes. Drain the grease well and add the corn and broth. Bring to a boil and then reduce to a simmer just until the corn is tender and warm. Add the cream and poblanos. Stir and cook for about 2 more minutes, just to blend the flavors. Taste the broth and add salt and pepper, to taste.
- Scoop into bowls and top with onions and basil. Serve with a wedge of lime for squeezing on top. Enjoy!
SPICY SOUTHWEST CORN CHOWDER
A nice corn chowder with some bite. You can remove the seeds from the jalapeno pepper if you prefer it less spicy.

- Heat oil in large saucepan over medium-high heat. Cook and stir onion, jalapeno peppers, and garlic in the hot oil until the onion is tender, 5 to 7 minutes; season with cumin and cayenne pepper. Add corn, chicken broth, and diced chicken.
- Bring the soup to a boil. Reduce heat to low, place a cover on the saucepan, and cook at a simmer until the chicken is cooked through, about 15 minutes. Remove saucepan from heat and let soup cool.
- Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to the saucepan.
- Place saucepan over low heat; warm soup, stirring occasionally, until hot, about 5 minutes. Garnish servings with lime wedges, cilantro, and sour cream.

- In a small saucepan over medium heat, saute the bacon until crisp and browned and the fat is rendered. With a slotted spoon, transfer bacon to paper towel and reserve. There should be about 4 tablespoons of bacon grease in pan.
- Add the onions and red pepper to pan. Saute until tender and translucent, about 4 minutes. Season with salt and pepper, to taste. Add the jalapeno and garlic and saute until fragrant, about 1 minute. Stir in the flour until thoroughly combined. Cook the flour until it reaches a slight blonde color, about 1 minute. Stir in the chicken stock and the potatoes and simmer for 10 minutes; potatoes will become soft. Add the cream, corn, cayenne and bay leaf. Simmer for 15 more minutes. Pour into a serving bowl and garnish with the reserved bacon.

- In a large pot, add oil, butter, onion, red bell pepper, thyme, cumin, and turmeric.
- Saute until the onion and peppers are tender, but not brown - approximately 5-8 minutes.
- Add corn, potatoes, and stock.
- Cover, turn heat to high, bring to a boil and allow to boil for 10 minutes.
- Remove 2 cups of corn and potatoes from the pot. Blend remaining soup with a stick blender.
- Return reserved 2 cups of corn and potatoes to the pot.
- Slowly add the corn starch mixture to the soup, stirring constantly.
- Return to a boil and allow to thicken slightly.
- Remove from the heat and stir in heavy cream.
- Allow the soup to sit at room temperature for an hour.
- Reheat and sprinkle with chives, scallions, or red pepper flakes before serving.

- Place the shoepeg corn and fresh corn into a large pot with the wine and water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the onions, garlic, yellow bell pepper, red bell pepper, and jalapeno pepper. Cook and stir until the vegetables have softened and the onion has turned translucent, about 10 minutes.
- Stir the pepper mixture into the pot with the corn along with the soy milk, oregano, and chipotle salsa. - In a mixing bowl, squeeze lime juice over corn and mix in zest with a spoon; set aside.
- In a large saucepan over medium heat, cook oil and onion until the onion is translucent and softened.
- Add stock, potato, chili powder, red pepper flakes, and cumin and bring to a boil.
- Turn heat down to medium low, cover, and cook until potatoes are very soft.
- Add corn and cream, and continue to cook, uncovered, until soup thickens.
- Add cilantro and simmer a few more minutes.
- Taste and correct seasoning with salt if necessary.
- To serve, ladle into warmed bowls, garnish with a cilantro sprig and a dollop of salsa on each serving, and serve immediately.

Blend on the medium setting for about 1 minute. Add the blended mixture back into the pot. Stir the soup and return the pot to the stove over medium heat.
