SPICY PEANUT CHICKEN

A Thai-inspired dish consisting of chicken served with a spicy peanut sauce over spaghetti noodles.

1 ½ teaspoons curry powder
2 tablespoons Thai chili garlic sauce (Sriracha), or to taste
1 ½ teaspoons ground cayenne pepper, or to taste
½ teaspoon ground cinnamon
2 teaspoons soy sauce
½ pound uncooked spaghetti
1 tablespoon peanut oil
2 large skinless, boneless chicken breast halves, cut into 1-inch cubes
3 ½ cups water
2 cups extra chunky peanut butter
4 green onions, coarsely chopped
½ cup chow mein noodles

Steps:

  • Combine curry powder, Thai chili garlic sauce, cayenne pepper, cinnamon, and soy sauce in a small bowl, and set aside. Fill a saucepan with water, and bring it to a boil. When the water is boiling, drop in the spaghetti and cook for 8 to 12 minutes, stirring occasionally, until tender. Drain the spaghetti, and set aside.
  • Heat peanut oil in a skillet or wok over medium-high heat until barely smoking, and drop in the chicken. Cook and stir 5 to 8 minutes, until the chicken is just beginning to brown and the inside is no longer pink. Remove chicken from the skillet, and set aside.
  • Make the peanut sauce by stirring together peanut butter and 3 1/2 cups of water in a saucepan over medium heat until mixture is smooth and the peanut butter is melted. Pour in the curry-chili sauce, and simmer, stirring occasionally, until the sauce is thickened, about 15 minutes.
  • To serve, place the noodles in a large bowl, top with chicken, and spoon the peanut sauce over the chicken. Sprinkle the green onions over the dish, and garnish with chow mein noodles.

1 tablespoon wok oil or peanut oil
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 medium red bell pepper, chopped
1 ½ cups chicken broth
2 teaspoons soy sauce
1 tablespoon sugar
1 clove garlic, minced
¼ teaspoon ground cayenne pepper
1 (1 inch) piece fresh ginger root, peeled and chopped
1 tablespoon cornstarch
1 bunch green onions, chopped
1 bunch cilantro, chopped
2 cups chopped dry roasted peanuts

Steps:

  • Heat the oil in a wok over medium heat. Place chicken in the wok, and cook until juices run clear. Mix in red bell pepper, and continue cooking until tender.
  • In a bowl, mix the broth, soy sauce, sugar, garlic, cayenne pepper, ginger, and cornstarch. Pour into the wok. Toss green onions and cilantro into wok (reserving some of each for garnish). Continue to cook and stir 5 minutes, until slightly thickened. Mix in peanuts, and garnish with reserved green onions and cilantro to serve.

1/2 cup KRAFT Zesty Italian Dressing, divided
1/2 cup coarsely chopped fresh cilantro
1/2 cup PLANTERS Dry Roasted Peanuts
1 whole serrano chile, stem removed
1 onion, chopped
4 small boneless skinless chicken breasts (1 lb.)
1/2 lb. mushrooms, sliced
2 cups hot cooked long-grain white rice
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Blend broth, 1/4 cup dressing, cilantro, nuts and chile in blender until smooth.
  • Heat remaining dressing in large nonstick skillet on medium-high heat. Add onions; cook 5 min., stirring occasionally. Add chicken; cook 2 min. on each side or until browned on both sides. Stir in mushrooms; cook 5 min. or until liquid is evaporated, stirring occasionally.
  • Stir in broth mixture; cover. Cook 10 min. or until chicken is done (165°F). Serve over rice; top with sour cream.

1/2 cup natural peanut butter (the kind you have to stir)
1/4 cup honey
2-3 teaspoons sambal oelek
3 tablespoons soy sauce
2 garlic cloves (finely minced)
1 tablespoon water
Splash of milk
1 tablespoon vegetable oil
2 large red bell peppers (sliced)
1 1/4 pounds boneless, skinless chicken breast (cubed)
Salt and pepper (to taste)
Chopped peanuts (for topping (optional))
Chopped green onions (for topping (optional))

Steps:

  • In a small bowl or measuring cup, whisk together ingredients for the sauce.
  • In a large skillet, heat oil over medium high heat until hot then add the bell peppers. Cook until softened, about 5-7 minutes. Add the chicken and cook through, about 7-10 minutes.
  • Pour the sauce on top then toss to coat and let simmer. Remove from heat, season with salt and pepper, then stir with a spatula until evenly distributed. Serve over white rice and top with chopped peanuts and green onions, if desired.

3 lbs chicken breasts
1 cup vegetable oil
3/4 cup soy sauce
3/4 cup white vinegar
1 tablespoon sesame oil
2/3 cup creamy peanut butter
3/4 cup sugar
1 1/2 teaspoons cayenne pepper
1 bunch green onion, Minced
1/2 cup cilantro, Minced
4 cups cooked white rice

Steps:

  • Place chicken breasts in boiling water, lower temperature and simmer for 20 minutes. When finished cooking, cut breasts into 1/2 inch cubes.
  • Combine all other ingredients except rice in medium saucepan. bring to a boil over medium heat stirring regularly. Once boiling, remove from heat.
  • To Serve, place cubed chicken on rice then pour sauce over the top.

1 pound skinless boneless chicken breast halves, cut into 3/4- to- 1-inch cubes
1 tablespoon hot sauce
4 cups low-salt chicken broth
1/3 cup creamy peanut butter (do not use natural or old-fashioned)
2 tablespoons tomato paste
5 tablespoons butter
1 1/2 cups chopped onion
2 medium zucchini, trimmed, cut into 1/2-inch cubes
2 tablespoons all purpose flour
1 cup drained canned diced tomatoes in juice

Steps:

  • Combine chicken cubes and hot sauce in medium bowl and toss to coat well. Sprinkle with salt and pepper and toss again. Whisk chicken broth, peanut butter, and tomato paste in another medium bowl to blend.
  • Melt butter in large pot over medium-high heat. Add chopped onion and zucchini; sauté until tender, about 8 minutes. Add chicken and sauté until no longer pink on outside, about 3 minutes. Sprinkle with flour and cook 1 minute, stirring occasionally.
  • Add broth mixture and tomatoes to pot. Simmer until chicken is cooked through and flavors blend, about 5 minutes. Season soup to taste with salt and pepper. Serve.
