1 pouch Tilda Premium USA Long Grain rice
1 tbsp sunflower oil
1/2 small red onion, peeled and finely chopped
1/2 red pepper, de-seeded and finely chopped
1/2 tsp hot chilli powder
2 spring onions, trimmed and finely chopped
1/2 of a 400g can of mixed beans in a spicy tomato sauce or red kidney beans in chilli sauce
100g cooked chicken, shredded
2 large tortilla wraps
75g mature cheddar, coarsely grated
Salt and freshly ground black pepper
Soured cream to serve

Steps:

  • Heat the oil in a large non-stick frying pan and fry the onion and pepper for 5 minutes over a medium heat, stirring occasionally.
  • Sprinkle over the chilli powder and stir-fry for 2 minutes.
  • Add the spring onions, beans and chicken and simmer for 5 minutes until piping hot.
  • Cook the rice according to pack instructions and stir into the bean mixture. Season to taste.
  • Heat the wraps for 1 minute on each side in a large, hot frying pan.
  • Working quickly, place half of the rice mixture into the centre of each wrap. Sprinkle over the cheese.
  • Fold the top and bottom over the filling, then fold in the sides to form 2 burritos.
  • Serve with the soured cream.

2 teaspoons Gay Lea Butter
1 pinch Pinch salt

2 cups shredded Ivanhoe Old Cheddar

⅓ cup salsa
½ cup sliced black olives
1 jalapeno pepper, seeded and minced

Steps:

  • Cut chicken into small 1-inch (2.5cm) cubes. In skillet, melt butter over medium high heat and cook chicken for about 8 minutes or until no longer pink inside. Salt and pepper to taste. Pour into large bowl and stir in 1/2 cup (375mL) of the cheese, sour cream, green pepper, salsa, olives, jalapeno, and cilantro.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Divide mixture among tortillas: Fold and roll to enclose filling completely; place seam side down in small baking dish. Sprinkle with remaining cheese.
  • Bake in centre of oven for about 20 minutes or until cheese is melted and tortillas are crispy.

2 -3 tablespoons fajita seasoning mix (Lisy's is the best (can buy at Wal-Mart)
1 (8 ounce) container mexican cheese (melting or crumbled)
1/8 cup ranch dressing
1 tablespoon sriracha sauce
1 (8 count) packet tortillas
2 cups lettuce

Steps:

  • Fry bacon in pan and set aside.
  • Use same bacon pan and fry chicken in the bacon grease to add more flavor.
  • Heat up your Mexican melting cheese.
  • Mix ranch and sriracha sauce to add the spicy part!
  • Clean and cut up lettuce.

CHICKEN CHIMI CHIMIES ( CHIMICHANGAS )

This is an easy chimichanga, great for a busy day. I like to cook the chicken ahead, so that dinner can be ready in under 30 minutes. One chimi is good for smaller eaters, two for those hearty appetites. This is a mild dish, unless you add lots of cumin, which makes it great for kids. If you like spicy add a few dashes of hot sauce or a diced jalapeño. After reading a couple of reviews I realized that I too was increasing the sour cream without paying exact attention to the recipe this adapted from. I don't always start with the same amount of chicken so, you want the mix to be slightly wet and gooshy without being drippy, it should cling together. I sometimes add 1/2 cup of shredded cheese to the mix, but you can leave it out to avoid the extra fat. Serve with your favorite side dishes, I like Spanish rice and fruit with this.

2 lbs chicken breasts
10 large flour tortillas
1/2 onion, chopped
1 large garlic clove, minced
1 tablespoon oil
1 (4 ounce) can green chilies
1/4-1/2 cup sour cream

4 tablespoons butter or 4 tablespoons margarine, melted
1 1/2-2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 450°F.
  • Boil chicken in water until done, about 15 minutes. For extra flavor add some onion & garlic (fresh or dry), and salt and pepper to the water. Shred chicken.
  • Sauté garlic and onion in the oil about 5 minutes, don't brown.
  • Stir together chicken and all the ingredients except for butter, tortillas and cheese.
  • Brush tortillas one at a time with melted butter, to the dry side and a spoon a generous scoop of chicken mixture in a line about 1 inch from one edge of the tortilla, tuck in sides as you go and roll up tortilla, and place seam side down on a cookie sheet, repeat until all you mixture is used.
  • NOTE: You can wait an brush with butter after it's rolled, this is done best if tortillas are room temperature.
  • Bake 15 minutes or until golden brown.
  • OPTION:.
  • If you prefer your cheese melted, a few minutes before removing from the oven, sprinkle each chimi with shredded cheese.
  • Serve chimis with shredded cheese, also good with sour cream, chopped tomatoes and black olives.

3 tbsp vegetable oil, plus 60ml (if frying rather than baking)
5 skinless and boneless chicken thigh fillets, or about 300g leftover cooked chicken
½ onion, chopped
1 small red pepper, roughly chopped
100g green chillies from a jar, finely chopped
85g Monterey Jack cheese, grated plus extra for serving
½ tsp garlic powder
½ tsp ground cumin
½ tsp chipotle chilli powder
6 large flour tortillas
400g can refried beans (optional)
240ml red enchilada sauce
soured cream and a handful of chopped coriander, to serve

Steps:

  • Heat 1 tbsp of the oil in a frying pan on a medium heat, add the chicken thigh fillets and fry for 6-8 mins each side until cooked through, then remove from the pan and set aside. Add another tbsp oil to the pan, then the onion and red pepper and cook until softened, about 5 mins.
  • Shred or cut chicken into small pieces and put in a bowl with the cooked onions and peppers, chillies, cheese and spices, season and mix well.
  • Heat the tortillas briefly in a dry frying pan for a few seconds on each side to make them a little more pliable, or heat in a microwave. Spoon a layer of the beans, if using, into the centre of each tortilla, then spoon some of the chicken mixture on top. Repeat so all the wraps and filling are used up.
  • Roll-up the chimichangas - fold the bottom over the filling, fold the sides in, then roll away from you so all the filling is sealed in.
  • To bake, heat the oven to 200C/180C fan/gas 6. Place the chimichangas on an oiled baking sheet and brush lightly with more oil. Bake until golden, about 20-25 mins. Or to fry them, heat a heavy-based frying pan over a medium heat. Once hot, add the 60ml oil to the pan and place the chimichangas seam-side down. Turn gently every few seconds until lightly golden on all sides and the filling has heated through.

1/2 medium red onion, coarsely chopped
2 garlic cloves
1 (7 1/16 ounce) can chipotle chiles in adobo
1 tablespoon chili powder
3 tablespoons vegetable oil, divided
2 teaspoons kosher salt, divided

2 teaspoons red wine vinegar
1 teaspoon dried oregano
1/4 teaspoon fresh ground black pepper
2 lbs boneless chicken breasts, about 3
1/2 head romaine lettuce, shredded
2 cups salsa
6 flour tortillas (10-inch diameter)
3 cups cooked long-grain rice
2 cups monterey jack cheese

Steps:

  • Marinade:.
  • To the bowl of a food processor or blender add 1/2 cup water, onion, garlic, 2 tablespoons adobo sauce (from can of chili's), 1 chipotle chili, also from can, chile powder, 1 tablespoon oil, 1 teaspoon salt, cumin, vinegar, oregano, and black pepper.
  • Blend until completely smooth, add 1/2 cup water stirring to combine.
  • Place chicken in a large non-reactive container, with enough room for the adobo sauce.

  • Heat oven to 375°F In a large cast-iron skillet, over medium, heat remaining 2 tablespoons oil. Remove skillet from heat and transfer to oven. Cook until chicken is opaque throughout, but still juicy, about 8 to 10 minutes chicken should be165°F on a instant-read thermometer. Carefully remove pan from oven. Remove chicken to a cutting board, tent with foil, and allow to rest for 5 minutes. Slice chicken into 1/2-inch chunks.
  • Assemble: Heat tortillas according to package instructions. One at a time, dividing fillings evenly, mound chicken, rice, cheese, beans, and guacamole on one side of tortilla. 1 tablespoon vegetable oil
2 tablespoons southwest seasoning (Emerils or recipes on genius kitchen)
1 ripe avocado
1/4 cup sour cream
3/4 teaspoon salt, divided
3 plum tomatoes
1/4 cup cilantro
1 jalapeno pepper, seeded
2 tablespoons lime juice
1 garlic clove, pressed
3 cups coleslaw mix
4 (11 inch) flour tortillas

Steps:

  • Prepare grill for direct cooking over medium coals. Season tilapia fillets with oil and seasoning mix. Lightly grease grid of grill. Grill fillets, covered, 5-6 minutes or until tilapia flakes easily with a fork, turning once. Remove tilapia from grill.
  • Mash avocado in medium bowl. Stir in sour cream and 1/4 tsp of the salt; cover and set aside. Dice tomatoes; set aside. Snip cilantro and finely chop jalapeño pepper. This recipe includes instructions for everything you will need including the chicken, salsa, guacamole, cilantro lime rice, vegetables, and black beans. They are even better on the second day once the flavours have fully soaked in.

Steps:

  • Put beans in a bowl and cover with 5 cups of cold water. Soak beans for at least 8 hours or overnight. (This makes the beans less gassy and increases the nutritional value of the beans).
  • Boil chicken in hot water for 10-15 minutes or until almost fully cooked and easy to shred. Shred chicken once cooled and set aside.
  • Combine shredded chicken, chicken broth, garlic, salsa, yellow onion, tomatoes, juice of lime, cumin, coriander, paprika, onion powder, garlic powder, Tabasco, salt, pepper, and cilantro in a crock pot and simmer on low for 8 hours.
  • Prepare Salsa (See my recipe Nicker's Salsa) and let sit in fridge while chicken cooks.
  • Prepare Guacamole (See my recipe Nicker's Guacamole) and let sit in fridge while chicken cooks.
  • Drain the beans you have been soaking and rinse them REALLY well.
  • Put the beans in a pot and cover with 4 cups water. Add bay leaf and cilantro. Bring to a boil then reduce heat and simmer until the beans are tender but firm. Check occasionally to see if you need to add more water. Beans should take 40 min to 1 hour to cook.
  • Once beans are cooked drain any remaining water and remove the bay leaf and cilantro. Add the chicken broth, coriander, cumin, salt. Bring to a boil, reduce heat and simmer for 7 minutes. Add the juice of 1 lime and gently smoosh some of the beans slightly with the back of a spoon or spatula (don't over smoosh).
  • Set a medium heavy pot over medium heat, add 1 Tablespoon butter, bay leaf and rice. Sauté rice for about 2 minutes, stirring constantly. Next pour in water and salt. Bring to a boil. Once boiling, cover pot and reduce heat to a simmer. Simmer covered for about 15-17 minutes, until water is absorbed and rice is fluffy. Remove from heat. Remove bay leaf. Stir in 1 Tablespoon of butter, cilantro, lime juice and lemon juice. Stir until well combined.
  • Heat oil in frying pan on high heat until it starts to smoke. Add butter and peppers and onion. Sauté with salt and pepper until vegetables are cooked but crisp and making a sizzling sound. Remove from heat immediately.
  • Set up your burrito building station where each person can put what they want in their burrito. Don't fill up the burritos too much or you won't be able to fold them. Fold the burrito and fry on all sides on high heat so that the burritos don't get soggy.

I love the way mexican restaurants make a chicken burrito, with mexican rice and shredded, juicy chicken, After some experiments I came quite close, however, I omit the refried beans, cheese and cream. This makes it a perfect pre-work-out food: I eat one every now and then before going for a 10 mile run! Works perfectly and doesn't give you that overstuffed feeling in the stomach. I usually do add some guacamole (see my guacemole recipe if you want to make it yourself). This way it is lighter and healthier, but no less tasty! Ofcourse you can always choose to add the refried beans, cheese and cream if you got your heart set on it!

Steps:

  • Cut the chicken in coarse pieces.

  • In frying pan, add half the vegetable oil and add chicken. Fry for about 1-2 minutes and add the salsa. Bring to a boil and simmer on low for about 40 minutes.
  • In the mean time, shred the 2nd onion. In large frying pan or wok, add remaining oil and put on med-high heat. Add the uncooked rice and fry until the rice gets a bit puffy and glazy, about a minute or 2. Add cumin, cayenne pepper, chili powder and onion and cook till onion is softened. Add chicken stock, tomato cubes and salt, about a teaspoon. Bring to a boil, cover and simmer on low for about 25 minutes, until liquid has been absorbed.
  • When chicken is done, take the chicken pieces out of the salsa. Add the salsa to the rice and stir. Using two forks or clean hands, shred the chicken pieces into little shreds. set aside.
  • Stir beans and corn into rice. Warm through.
  • On tortilla, scoop some rice and put some of the shredded chicken on top. Roll up.
