SPICY MANGO CHICKEN SALAD
This Mango Chicken Salad is made with Chipotle Chicken, loaded with Fresh Mango, Avocado and Chilli, then wrapped in a simple Homemade Dressing.

- In an empty jar combine extra virgin olive oil, lime juice, honey, dijon mustard, garlic powder and salt & pepper (to taste). Seal the lid and give it a good shake. Place to one side.
- Butterfly your chicken breasts right through to make 4 even sized breasts. Coat in 1 tbsp olive oil, 1 heaped tsp chipotle powder, 1/2 tsp cumin, oregano & salt and 1/4 tsp onion powder, garlic power and black pepper. Really rub the seasoning into the meat.
- Heat up a griddle or frying pan over medium-high heat and fry both sides until nicely charred, with the chicken white through the centre. Place to one side, allow to completely cool then slice into thin strips just before needed.
- In a large salad bowl add romaine lettuce. Top with chicken strips, avocado, mango, red onion, chilli and cashews. Give your dressing another quick shake then drizzle that over. Use salad tossers to combine everything then serve up and enjoy!

- For salsa, in a large bowl, combine the first six ingredients; chill until serving. In a large skillet, saute the chicken, cumin, onion powder, chili powder, cayenne and salt in oil until heated through. Add garlic; cook 1 minute longer., Toss greens with dressing; divide among seven serving plates. Top with chicken mixture, mango salsa and cheese. Serve immediately with tortilla chips.

- Combine dressing ingredients in a small bowl. Cover and refrigerate until needed below. Heat the oil in a non-stick skillet set over medium, medium-high heat. Sprinkle and rub chicken with chili powder, cumin, salt and pepper. Sear and cook the chicken 4 minutes per side, or until cooked through. Cool chicken, and then thinly slice. Divide and mound butter lettuce on each of 4 plates. Arrange some chicken, mango, cucumber, bell pepper and cilantro (or mint) on each salad. Drizzle each salad with some of the dressing and serve. Note: If time is short, instead of cooking your own chicken for this recipe, replace it, and its flavourings, with the hot, fully cooked BBQ chicken sold in our Deli Department. - Trim and butterfly chicken breasts. Salt and pepper to taste.
- At this point you can either grill the chicken breasts or cook in a medium skillet over medium-high with a small amount of olive oil. The chicken will need to cooked long enough that juices run clear. You'll prepare the mango mixture while the chicken cooks.
- Squeeze juice from lime into small dish and combine with vinegars.
- Finely chop cilantro and add to lime juice/vinegar mixture. Add the crystallized ginger and salt and set aside.
- Peel and dice mango into a bowl. Set aside.
- Remove the seeds from the jalapeno, and finally chop 1/2. Add to the mango. You can chop and use the remainder for a spicier dish.
- In a small skillet, heat a small amount of olive oil over medium heat.
- While the oil heats, mince garlic and then saute in oil for 1-2 minutes.
- Add the mango/jalapeno mixture to the garlic/oil and heat for 3 minutes over medium.
- Add the lime/vinegar/ginger to the skillet. Reduce heat to medium-low and continue to cook for 3 more minutes, stirring constantly. The mixture should thicken from the sugar in the mango. If the chicken is still not ready, keep the mixture warm over low heat.
- Spoon the mango mixture over the cooked chicken breast and serve.

- Heat a griddle or frying pan until hot. Rub the chicken with oil, garam masala and a good pinch of salt. Cook for 6 minutes on each side or until slightly charred and cooked through.
- Peel and slice the mango into slim wedges. Halve the cucumber lengthways and slice thickly at an angle. Thinly slice the onion. Toss the salad ingredients together with the coriander and pile onto plates.
- Mix the soured cream or yogurt with the lime zest and juice, season and dollop beside the salad. Cut the chicken in half or into thirds diagonally, arrange next to the salad and serve with naan bread.

- Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
- While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. Simmer until the orange juice has reduced to 1/3 of original volume and is beginning to get thick and syrupy. Once thick, remove from heat, and whisk in the butter pieces one at a time until melted; set aside.
- To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

- Combine the chicken, oil, garlic, chilli paste, lemon juice, honey and cumin in a large bowl. Cover with cling film and place in the fridge for 30 minutes to marinate if you have time. When you are ready to cook the kebabs, season the chicken then thread onto the skewers, don't pack the pieces of chicken too tightly together. To cook the kebabs: Heat a barbecue or grill to medium-high. Cook the kebabs for 5-6 minutes, then turn and cook for another 5-6 minutes until cooked through. For the chilli mayonnaise: Combine the mayonnaise, lemon juice, garlic and chilli paste in a small bowl. Taste and season. For the salad: Place all the ingredients in a serving bowl, stir to combine, taste and season.

SPICY THAI CHICKEN WINGS WITH MANGO SALAD

- Chicken Wings
- Rinse chicken wings with cold water and pat dry. Place wings in a large glass bowl.
- In a separate bowl combine pepper, ginger, garlic, palm sugar, soy sauce, vegetable oil, lime juice and chili garlic sauce and stir to evenly combine. Add the wings and toss evenly with the marinade. Place the wings in the refrigerator and allow them to marinate for a minimum of 2 hours and a maximum of overnight.
- When ready to bake the wings, preheat the oven to 400 degrees F (200 degrees C).
- Place the wings on a baking tray and bake for 20 minutes, turning them half way through.Wings are done when they look shiny, golden brown and have a bit of a crispy edge around them.
- Serve with your favourite hot sauce.
- Garnish with lime wedges and cilantro if desired. Serve with mango salad (see recipe).
- Mango Salad
- Remove the peel from the mango and cut into 1/4 inch dice. Add to a medium glass bowl.
- Add the garlic, cilantro, ginger and lime juice and stir to combine to evenly distribute the flavours. Season to taste with sugar.
- Chill well before serving.
- Serve with spicy Thai chicken wings.

- Description:Grenache is a medium to full bodied red wine with a fairly high alcohol level, lots of flavour, and low tannin. This one has ripe, juicy red fruit flavours like raspberry, plum, and strawberry, with chocolatey, smoky notes, and a nice, smooth, easy-drinking texture.
- Pairing:Grenache works really well with chicken wings because the ripe, juicy, berry flavours mellow out and cool down the intense spicy flavours of the marinade without tannin to interfere with the spice of the dish. The low tannin is also important in pairing a red wine with a white meat like chicken it has a nice, smooth feel in the mouth that works well with lighter meats.

THAI MANGO CHICKEN SALAD
Steps:
- Preheat your oven to 350 F, or warm up your grill.
- Stir together the marinade ingredients and slather over chicken breasts. Set chicken in a baking dish or pan.
- Add a little water to the bottom of the pan to keep from drying out.
- Bake 30 to 40 minutes, or until cooked through. Alternatively, grill chicken over a hot grill, basting with leftover marinade.
- When chicken is cool enough, slice into bite-size pieces.
- Combine all dressing ingredients in a bowl or cup, stirring to dissolve sugar. This dressing should be a mingling of sweet, sour, spicy and salty, but an emphasis on sweet and spicy. (Note: it will taste strong now, but will be delicious when combined with the salad). Set aside.
- Place coconut in a dry frying pan and stir continuously 2 to 3 minutes over medium heat, or until it turns light golden brown and fragrant. Transfer to a bowl to cool. Set aside.
- To finish, place all salad ingredients together in a large bowl: mango, red pepper, cucumber, sprouts, onion, basil, and chicken.
- Pour over the dressing and toss well. Add the toasted coconut and nuts and toss again.
- Do a taste-test. If you prefer it sweeter, add a little more sugar. If too salty or sweet, add more lime juice. Add more chili for more spice.
- Serve right in the salad bowl or portion out into individual bowls.

- First, if you can, I suggest marinating the chicken for 30 minutes to an hour before cooking. Simply lay the chicken pieces on a cutting board (close together) and sprinkle evenly with all of the spices and salt. Use your hands to massage the chicken meat to make sure the spices are distributed evenly. Leave in the fridge for an hour or overnight and make sure to remove from the cold for 10-15 minutes before frying.
- The next you can make the sauce. This can also be made ahead of time if you’re doing this as part of meal prep on the weekend. Heat a small saucepan over medium-high heat. Add the coconut oil, onion, chill and salt and sauté for 2-3 minutes, stirring a few times, until softened. Add the rest of the ingredients and stir through over heat until melted and well combined (for about a minute).
- Transfer the sauce mixture to a small blender or a food processor and blend until smooth. Transfer to a bowl and set aside. If storing in the fridge, simply reheat before serving to thin it out (you can add a little more water if gets too thick in the fridge).
- If not using a blender or a food processor, dice the onions, chill and garlic very finely, so that once the sauce is combined in the pot, you can leave it unprocessed. Make the salad before you start cooking the chicken. That way all the components are ready for service. Simply cut all the salad ingredients and assemble in a bowl or a large platter. Drizzle with lime juice, sprinkle with a little sea salt and drizzle with olive oil. Set aside.
