6 TBSP olive oil, divided
2 TBSP fresh lime juice
2 TBSP chopped mint
1/2 tsp coriander
4 skinless boneless chicken breast halves
2 bell peppers (1 red, 1 yellow) cored, seeded & sliced into 1/4-in. wide strips
1 lg fresh poblano chile cored, seeded, thinly sliced
1/2 medium red onion, thin slice

Steps:

  • 1. Whisk 4 TBSP oil, lime juice, mint and coriander in medium bowl. Season dressing w/ salt & pepper 2. Heat remaining 2 TBSP oil in lg nonstick skillet over medium-high heat. 3. Sprinkle chicken w/ salt and pepper. Add to skillet & saute until brown on bottom, 6. Turn ck over. Reduce heat to medium-low. cover and cook until just cooked through, about 5 min. Txf to plate. 7. Return skillet to med-high heat. Add bell peppers, poblaon chile, & onipon to same skillet. 8. Sprinkle veggies w/ salt & pepper. Toss till tender & just beginning to color. 4-5 min. 9. Cover & cook 1 min. Mix in 2 TBSP dressing. Mound veggies top chicken.

1/2 teaspoon ground coriander
4 skinless boneless chicken breast halves (5 to 6 ounces each)
2 bell peppers (preferably 1 red and 1 yellow), cored, seeded, sliced into 1/4-inch-wide strips
1 large fresh poblano chile,* cored, seeded, thinly sliced
1/2 medium red onion, thinly sliced

Steps:

  • Whisk 4 tablespoons oil, lime juice, mint, and coriander in medium bowl. Season dressing with salt and pepper.
  • Heat remaining 2 tablespoons oil in large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add to skillet and sauté until brown on bottom, about 5 minutes. Turn chicken over. Reduce heat to medium-low; cover and cook until just cooked through, about 5 minutes. Transfer to platter.
  • Return skillet to medium-high heat. Add bell peppers, poblano chile, and onion to same skillet; sprinkle vegetables with salt and pepper. Toss until tender and just beginning to color, 4 to 5 minutes. Cover and cook 1 minute. Mix in 2 tablespoons dressing. Mound vegetables atop chicken. Drizzle with remaining dressing and serve.

1 tablespoon garlic, minced
1/3 cup safflower oil, plus more for brushing
1/4 cup fresh mint leaves, chopped, plus whole leaves for serving
1 pinch kosher salt, to taste
1 pinch freshly ground pepper, to taste
1 1/2 pounds 4 chicken-breast halves, boneless and skinless
1 bunch radishes, small
1 piece serrano pepper
1 bunch water cress, tough lower stems removed
1 piece mango, peeled, pitted and cut into sticks
6 ounces queso fresco or goat cheese, crumbled(1 cup)

Steps:

  • Preheat grill to medium-high. In a medium bowl, combine lime juice and garlic. Whisk in oil, then chopped mint, season with salt and pepper. Pound chicken to an even1/2-inch thickness, transfer to a baking dish. Season with salt and pepper, toss with half of dressing. Let stand 10 min.

1 cup fresh cilantro
1/4 cup lime juice
1 teaspoon white wine vinegar
1/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 tablespoon honey
1/4 cup grated parmesan cheese
1/4 cup canola oil
2 tablespoons olive oil
4 cups romaine lettuce, torn into bite-sized pieces
1/2 lb chicken breast, cooked and cubed
1 roasted red pepper, seeded and chopped
2 roasted poblano peppers, seeded and chopped
1 roasted jalapeno pepper, seeded and chopped
1 cup cooked rice
1/4 cup corn
1/4 cup black beans
1/4 cup diced tomato

Steps:

  • To make the dressing:.
  • Finely chop garlic and ginger in a food processor.
  • To the garlic-ginger mixture add the next 8 ingredients (cilantro through parmesan cheese) and puree until blended.
  • Add both oils through the food processor shoot to combine.
  • To make the salad:.
  • Roast peppers under the broiler until charred on all sides (about 7-10 minutes), Put peppers in a bowl and cover with plasic wrap. Cool until easy to handle. Peel and seed the peppers. Chop peppers.
  • Combine peppers and remainder of salad ingredients. Mix with approximately one-half of the cilantro-lime dressing.
  • Serves 2 - 4 as an entree.
