1 lb lean (at least 80%) ground beef
1 clove garlic, minced
2 boxes (16 oz each) Mexican prepared cheese product with jalapeño peppers, cut into cubes
2 cans (10 oz each) diced tomatoes with green chiles, drained
1/2 cup chopped green onions (8 medium)
22 oz tortilla chips

Steps:

  • In 10-inch skillet, cook ground beef and garlic, stirring frequently, until beef is thoroughly cooked; drain. Spoon into 3 1/2- to 4-quart slow cooker. Add cheese and tomatoes; mix well.
  • Cover; cook on Low heat setting 3 to 4 hours, stirring after 2 hours.
  • Before serving, stir in onions. Serve with tortilla chips.

1 tbsp. extra-virgin olive oil
1 onion, chopped, divided
1 lb. ground beef
1 tbsp. Worcestershire sauce
kosher salt
Freshly ground black pepper
1 bag Tortilla chips
2 c. shredded Cheddar
ketchup
mustard
1 c. diced tomatoes
1 c. Shredded lettuce
1 c. pickle chips

Steps:

  • Preheat oven to 425°. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add ground beef and Worcestershire and cook until no longer pink, 6 minutes more. Season with salt and pepper and drain fat.
  • Spread half the tortilla chips in an even layer onto the baking sheet. Top with half the ground beef and half the cheese. Repeat one more layer and bake until cheese is melty, 12 to 15 minutes.
  • Drizzle with ketchup and mustard and top with tomatoes, lettuce and pickles. Serve.

2 tablespoons unsalted butter
2 cloves garlic, chopped
1 jalapeno, seeded and minced
2 tablespoons all-purpose flour
1 cup whole milk
4 cups coarsely grated pepper jack
1 teaspoon prepared mustard or whole-grain mustard
Salt and freshly ground black pepper
2 boneless, skinless chicken breasts, cooked
1 cup your favorite barbecue sauce
8 cups tortilla chips (about 1 large bag)
1 cup chopped pickled jalapenos
3 tablespoons chopped fresh cilantro
1 cup sour cream or nonfat Greek yogurt

Steps:

  • For the sauce: In medium saucepan over medium heat, add the butter, garlic and jalapeno. Saute for 3 minutes, and then sprinkle in the flour. Cook, stirring frequently, until you create a blond roux, about 5 minutes. Add the milk, cheese and mustard and use a whisk to stir all together. Season with salt and pepper and let cook for 5 minutes on low.
  • For the nachos: Shred the chicken and place into a medium bowl. Pour in the barbecue sauce and mix well to combine. Arrange the tortilla chips on a platter and spread the chicken over the chips. Pour the warm cheese sauce over the top and sprinkle with the jalapenos and cilantro. Garnish with dollops of the sour cream.

Spicy and sweet! The Jamaican Jerk seasoning really works here, bringing all the flavors together. What an amazing taste sensation! I ended up being so busy today that I had to use pre-cooked shrimp, but it was still fabulous! I submitted the recipe the way it was written in Better Homes and Gardens, but I ended up using more cheese as we didn't think 4 oz. was enough. I used twice that much, a full 8 oz and broiled them on a baking sheet. It took about 5 minutes on the second-to-the-top position in my oven. YUM!

1 medium sweet red pepper, chopped

1 lb shrimp, peeled, deveined
nonstick cooking spray
8 ounces tortilla chips (8 cups)

  • Preheat broiler.
  • For salsa: In a bowl stir together mango, sweet pepper, onion, and chile pepper; set aside.

  • Add shrimp and toss to coat.
