Steps:
- In a large bowl, add all ingredients except nuts, and stir to combine or use a handheld electric mixer and beat on low speed to combine. Make sure cream cheese is very well softened before beginning or it will be unnecessarily difficult to combine the ingredients.
- Using a spatula (or your hands), pat mixture into a ball inside bowl; it's okay if it's not perfectly round.
- Turn ball out onto a large piece of plasticwrap and wrap it up. Gently pat it into a nice smooth ball, and place ball inside a ziptop bag to prevent fridge smells.
- Refrigerate for at least 3 hours, or overnight, to chill and firm up.
- Prior to serving, combine the walnuts and almonds in a medium bowl and gently roll the ball in nuts until it's completely covered.

Steps:
- Put the cream cheese, cheddar, garlic, parsley, cayenne, black pepper, and salt in a food processor. Process for 5 to 10 seconds, until well blended. Scrape the mixture into a bowl, cover, and refrigerate for 1 hour.
- Spread the chopped walnuts on a plate. Shape the cheese mixture into 35 to 40 small cheese balls, each about the size of a large marble. Roll each cheese ball in the walnuts, coating the outside (you may to press a little to ensure sticking).
- Serve the cheese balls on a large platter. You can put a toothpick in each ball, but you could also surround them with crackers and let guests use their hands. It all depends on what kind of party you're having.

- Mix grated cheese with 1/2 teaspoon chili powder. Take 1 teaspoon of the cheese mix and form a ball.
- When all cheese balls are done, roll them through flour. Mix egg with water and beat well. Mix the bread crumbs with remaining chili powder. Dip the cheese balls in egg, one at a time, then roll through flour again then back to egg dipping. Lastly roll through bread crumbs and nicely coat the whole ball.
- When all balls are coated as above, heat oil in a skillet. The oil should cover at least half the balls. Cook the cheese balls until golden, about 3 minutes on each size. Remove on a paper towel. Stick a toothpick so they're easier to grab and serve.

- Place cashews in a bowl and cover with cool water. Soak overnight or for at least 6 hours. If you can't get to them right away, drain, place back in bowl, and cover with plastic wrap. They will keep refrigerated for up to 2 days. Although not ideal for this recipe, you can also quick soak the cashews by covering with boiling hot water and soaking for 1 hour, then draining and proceeding with recipe as instructed.
- Once soaked, drain cashews thoroughly and add to your food processor (or a blender - though it's a little tougher to blend as there's not that much liquid added).
- Add minced garlic, garlic powder, lemon zest, lemon juice, nutritional yeast, salt and olive oil. Blend until very creamy and smooth, scraping down sides as needed. Then add vegan cream cheese, pimento peppers, smoked paprika and cayenne (optional). Blend once more until creamy and smooth.
- Taste and adjust seasonings as needed, adding more lemon zest for tartness, nutritional yeast for cheesiness, garlic for zing, salt for saltiness, paprika for smokiness, or cayenne for heat. I added a bit more nutritional yeast, salt, cayenne and paprika. You want this to be super flavorful, so don't be shy!
