SPICY CHEESE CRACKERS
My mom made this for a couple of decades; now, it's my turn. These are highly addictive and make a great food gift.

- Preheat oven to 350 degrees F (175 degrees C).
- Whip Cheddar cheese and softened butter together in a large bowl using an electric hand mixer until smooth. Beat 1/2 cup flour into the cheese mixture at a time, assuring each addition is incorporated fully before adding the next. Add cayenne pepper, garlic powder, salt, and hot pepper sauce; beat to incorporate.
- Use a wooden spoon to fold the cereal into the cheese mixture; shape into 1-inch balls and arrange onto a baking sheet. Use the back of a spoon to flatten the balls slightly.
- Bake in preheated oven until set but not yet browning, 15 to 17 minutes. Let crackers cool on pans for 1 minute before transferring to a wire cooling rack to cool completely.

SPICY CHEDDAR PALMIERS

- In a small bowl stir together chili powder, brown sugar, cayenne, and salt. On a work surface sprinkled with 2 tablespoons parsley roll out 1 sheet puff pastry into a 12-inch square. Sprinkle square evenly with half of spice mixture and 3/4 cup Cheddar, pressing cheese gently onto pastry. Roll up 1 edge to middle of pastry sheet and roll up parallel edge in same manner so that the 2 rolls are touching. Repeat procedure with remaining parsley, pastry sheet, spice mixture, and Cheddar. Wrap pastry rolls in plastic wrap and chill 30 minutes. Pastry rolls may be made 2 weeks ahead and frozen, wrapped well in refrigerator 2 hours before proceeding.
- Preheat oven to 375°F.
- Cut pastry rolls with a sharp knife crosswise into slices just under 1/2 inch thick and arrange 1 inch apart on large baking sheets. Bake palmiers in batches in middle of oven 20 minutes, or until golden brown, and transfer with a metal spatula to racks to cool.

- Cook bacon and chop up into small pieces. (You can do this all at once and very easily in the oven. Add your bacon to a wire rack and bake at 400°F for 10-12 minutes.)

- Defrost the puff pastry, preferably overnight in the refrigerator. (You can defrost on the countertop, according to the manufacturer's directions, but be careful not to let it get to room temperature.) It should be chilled but not so cold that it is still stiff when you unroll it.
- On a silicone mat or piece of parchment, roll out the sheet of puff pastry to a rectangle between 9 x 15-inches and 10 x 16-inches.
- Mix the taco seasoning and 2 - 2 & 1/2 tablespoons of the olive oil. Evenly brush the mixture onto the puff pastry.

- Lay each piece of puff pastry on a floured work surface and roll them lightly to remove the fold lines. Mix minced garlic, rosemary, and thyme in a small bowl.
- Sprinkle the herb mix over the puff pastry sheets. Then sprinkle both sheets evenly with Borden® Finely Shredded Extra Sharp Cheddar Cheese.

- Place the puff pastry sheet on top of a parchment paper. Apply fruit spread evenly over the puff pastry sheet. There'll be bits of fruit in the spread, and that's OK.
- Sprinkle a thin layer of cheese on top. There should be about 1/2 cup of shredded cheese leftover - leave that aside for later.
- Roll up the puff pastry from both sides until it meets in the middle. Make sure it's rolled up fairly snugly.
