CRISPY SPICY FRIES
Who says fries can't be healthy? These Crispy Spicy Fries are just what they say...crispy, on the outside, spiced with smokey heat and NOT deep fried!!

Steps:
- Cut washed potatoes into fries. Feel free to leave the peel on.
- Place in a bowl and coat with 1/2 tablespoon of avocado oil.
- Season with chili powder and smoked paprika.
- Mix to coat well.
- Add the additional oil to the air fryer.
- Add the potatoes.
- Cook for approximately 25 minutes.
- Season with salt.
- Enjoy!

CAJUN FRIES (CAJUN FRENCH FRY SEASONING)
Steps:
- Set out a large bowl of ice water. Cut the potatoes into long strips 1/3 to 1/2 inch wide. You can leave the peel on the potatoes to add a little texture on the sides, or peel them first. Once each potato is cut into fries, submerge the potato strips in the ice water. Soak the fries in cold water for a minimum of one hour, but the longer the better. You can even soak them overnight for extra crispy fries. (Pulling the excess starches out of the potatoes with cold water gives the fries the best crispy on the outside, soft in the middle texture.)
- Meanwhile set out a small bowl. Measure and combine all the ingredients for the french fry seasoning. Mix well.
- When ready to fry, remove the potato strips from the cold water. Lay them out flat on paper towels and pat dry. (They need to be well-dried before going in the oil to avoid splatter.) Set a large saucepot on the stovetop. Add 2 quarts of fry oil to the pot, and attach a cooking thermometer to the side of the pot.
- Turn the heat to medium and wait for the fry oil to reach 310° F.
- Set a large rimmed baking sheet to the side of the pot lined with paper towels to hold the fries.
- Once the oil is hot, use a skimmer to lower 1 to 2 portions of fries down into the hot oil. Stir well and fry for 4 to 6 minutes until golden brown. Use the skimmer to move the fries to the holding tray. Immediately sprinkle with fry seasoning and shake to coat.
- Repeat with several more small batches. Adjust the temperature as needed to keep the oil around 300°F. You can place the tray of fries in a 200°F oven to keep warm if desired.

SPICY HOME FRIES
Steps:
- Place the potatoes in a large saucepan, cover with cold water and add 1 tablespoon salt. Bring to a boil over high heat and cook until the potatoes fall apart when a fork is inserted, 20 to 25 minutes. Drain well.
- Heat the butter over medium heat in a large saute pan. Add the onion and jalapeno and cook until soft. Add the garlic and cook for 30 seconds. Stir in the ancho chile powder and stir until combined. Add the potatoes, salt and pepper and toss the mixture, slightly mashing the potatoes with a metal spatula. Press the potato mixture into one even layer and cook until golden brown on the bottom. Turn over and gently mash again into an even layer and cook until the bottom is golden brown. Stir in the cilantro and lime zest and transfer to a bowl.
SPICY CALF FRIES
My uncles make these at our family bbq's. Yes, they really use trash bags. When they gave me the recipe, this is exactly how they wrote it. Be brave, these are very good. You can dip them in ranch, or a horseradish sauce. When you get your calf fries from the butcher make sure you ask them to remove the outer membrane. They should be flat when you take them home.

- Mix flour and peppers together in an unused, clean trash bag.
- Add calf fries; shake thoroughly.
- Divide into batches.
- Drop calf fries in a turkey fryer heated to 350 degrees and cook until golden brown.
- While cleaning, mixing, and cooking, sample the beer frequently to make sure it doesn't go bad.

- Prepare 1 pound frozen french fries as the label directs. Meanwhile, cook 1/2 thinly sliced onion, 1 tablespoon hot paprika and 1 teaspoon salt in 2 tablespoons butter in a large skillet over medium-high heat, stirring, 4 minutes. Add 1 minced garlic clove and cook 2 more minutes. Remove from the heat and add 3 chopped scallions and 2 tablespoons chopped parsley. Add the fries and toss to coat.
SPICY CUMIN FRIES

- Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Line 2 rimmed baking sheets with foil, then divide the fries between them. Bake, tossing once or twice, until crisp and golden brown, 30 to 45 minutes. Transfer to a large bowl.
- Place the chiles in a bowl, cover with a plate and shake to release the seeds. Fish out the chiles, leaving the seeds behind.
- Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds, peppercorns, chopped chiles and 1 teaspoon salt and cook, stirring, until toasted, 2 to 3 minutes. Stir in the scallions and remove from the heat.
- Toss the fries with the spiced oil and season with salt. Remove and discard any large chile pieces.

- Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
- Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat.
- While the oil is heating, sift the flour and spices into a large bowl.
- Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first.
- The fries must be placed into the skillet one at a time, or they will clump together.
- Fry until golden brown and crispy.
- Remove and drain on paper towels.
