I created this recipe based on one served at the cafe I worked in during college. You can add nuts if you like, or easily double the recipe if you need more coffee cake.

½ teaspoon butter, or as needed
2 cups all-purpose flour
¾ cup brown sugar
½ cup vegetable oil
½ cup white sugar
4 teaspoons ground cinnamon
½ teaspoon fine salt
½ teaspoon ground ginger
¾ teaspoon baking powder
¾ teaspoon baking soda
¾ cup buttermilk
1 egg
2 apples - peeled, cored, and cut into 1/2-inch chunks

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter the inside of an 8-inch glass baking pan.
  • Mix flour, brown sugar, oil, white sugar, 2 teaspoons cinnamon, salt, and ginger together in a large bowl. Transfer 1/2 cup of the mixture into a second bowl for the crumble topping; stir in remaining 2 teaspoons cinnamon.
  • Whisk baking powder and baking soda into the flour mixture.
  • Beat buttermilk and egg together in a measuring cup to combine. Pour into the large bowl of flour mixture; add apples. Stir until just blended and no pockets of flour remain. Pour mixture into the prepared pan; cover with the crumble topping.
  • Bake in the preheated oven until apples are tender and a toothpick inserted into the center comes out dry, 40 to 50 minutes.

2 cups sugar
1 cup butter, softened
4 large eggs, beaten
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup buttermilk
BUTTER CREAM FROSTING:
1/2 cup shortening
1/2 cup butter, softened
1 teaspoon vanilla extract
4 cups confectioners' sugar
3 tablespoons whole milk

Steps:

  • In a bowl, cream sugar and butter. Add eggs; beat well. Combine dry ingredients; add to creamed mixture alternately with buttermilk. Mix well. Pour into a greased and floured 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until the cake tests done. Cool. For frosting, cream shortening and butter in a bowl. Add vanilla. Gradually beat in sugar. Add milk; beat until light and fluffy. Frost cake.

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.

Steps:

  • Preheat oven to 350 degrees and grease a 9X13-inch pan.
  • Combine 1 cup butter, 1/3 cup cocoa, and 1 cup water in a small saucepan and heat over low heat, stirring constantly, until butter is fully melted. You can cut the butter into pieces to speed up the process. Remove from heat.
  • Using an electric mixer, beat buttermilk, eggs, baking soda, and vanilla extract until smooth.
  • Gradually add melted butter mixture, beating until mixed.

Got this off of one of the wally world recipe cards that they have out during the holidays.. Credit was given to a Georgia C. Harris. This recipe is actually fairly mild in flavor - the spices lend a pleasant hint of fall ( and make me hanker for some eggnog ), but it isn't "spicy" so far as heat content. My preferance is fresh ground nutmeg, but all I had was pre-ground, and it turned out fine. I plan to try some vanilla extract next time - I'll update accordingly.

2 1/2 cups self rising flour
2 cups brown sugar, packed
1/2 teaspoon salt
2/3 cup shortening
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

1 cup buttermilk
1/2 cup walnuts (or pecans, finely chopped )

Steps:

  • Preheat oven to 350 degrees F, and coat 10 inch bundt pan w/non stick spray ( I like baking Pam with flour ).
  • In lrg bowl stir together flour, brown sugar & salt. Cut in shortening ( a fork will work, but pastry cutters are best ) until the mix looks like fairly coarse crumbs. Set aside 1/2 cup of crumb mix. Then stir the baking soda,cinnamon, & nutmeg into the "crumb" mix.
  • In a smaller bowl gently mix the eggs and buttermilk together. Slowly add to crumb/spice mix, until just combined ( no dry spots, but will look lumpy due to the shortening bits ).
  • Sprinkle reserved crumb mix and nuts into the bundt pan. Carefully pour batter over, and gently tap the sides of the pan to get a level surface.
  • Bake for 50-55 minutes, or until a toothpick or cake tester comes out clean. Cool in pan for 10-15 mins ( on a wire rack if possible ), then remove from pan. Can be served warm or cool.

1/2 cup all-purpose flour ((68 g))
1 teaspoon cinnamon ((3 g))
2 oz unsalted butter ((57 g, cold & cubed))
4 oz unsalted butter ((115 g, room temperature))
2/3 cup granulated sugar ((130 g))
1 teaspoon pure vanilla extract ((4 g))
2 large eggs ((room temperature))

Steps:

  • Add sugar, flour and cinnamon in a small mixing bowl and stir together with a whisk to distribute evenly. Toss in the cold cubed butter and cut with a pastry blender or a fork until the texture is sandy. Refrigerate until ready to use.

  • Brush a 9" springform pan with butter and set aside.

  • Bake for 40 minutes until a toothpick inserted in the middle comes out clean.
