SPICY INDIAN RICE

a mugful of American long grain rice
2 onions, sliced
2 tbsp sunflower oil
½ tsp turmeric
1 cinnamon stick
6 cardamom pods
1 tsp cumin seeds
large handful of sultanas and roasted cashew nuts

Steps:

  • Fry the onions in the sunflower oil in a large frying pan for 10-12 minutes until golden.
  • Fill a roomy saucepan with water, bring to the boil and tip in a heaped teaspoon of salt - the water will bubble furiously. Add turmeric and the cinnamon stick to the water. Pour in the rice, stir once and return to the boil, then turn the heat down a little so that the water is boiling steadily, but not vigorously. Boil uncovered, without stirring (this makes for sticky rice) for 10 minutes. Lift some out with a slotted spoon and nibble a grain or two. If they're too crunchy, cook for another minute and taste again. They should be tender but with a little bite. Drain the rice into a large sieve and rinse by pouring over a kettle of very hot water
  • Stir the crushed seeds of the cardamom pods into the onions with the cumin seeds and fry briefly.
  • Toss in a large handful of sultanas and roasted cashew nuts, then the hot drained rice. This is great with curry and will also give an exotic edge to grilled meat or fish.

MEXICAN BROWN RICE



Mexican Brown Rice image

Healthy Mexican rice that tastes amazing! This recipe is made with brown rice, which is perfectly fluffy after baking in the oven. This isn't a quick recipe, but it does clear the stovetop for use. Check the recipe notes for a shortcut, etc. Recipe yields 6 to 8 side servings.

2 medium ripe tomatoes, or 1 small can (15 ounces) diced tomatoes, undrained
1 small yellow onion, root end trimmed and quartered
2 cloves garlic, roughly chopped
1/4 cup extra-virgin olive oil
2 cups long-grain brown rice (do not rinse!)
1 medium jalapeño pepper, seeded and finely chopped (scale back or omit if sensitive to spice)
2 1/2 cups vegetable broth
1 tablespoon tomato paste
1 teaspoon salt, to taste
1/2 cup finely chopped fresh cilantro
Red pepper flakes, optional, for extra heat
1 lime, sliced into wedges, for serving

Steps:

  • Preheat the oven to 375 degrees Fahrenheit. In a food processor or blender, combine the tomatoes, onion and garlic, and blend until smooth. In a liquid measuring cup, measure out 2 cups of the tomato mixture and discard the rest.
  • Warm the olive oil in a medium Dutch oven* over medium heat until shimmering. Add the rice and jalapeño and cook, stirring occasionally, for about 2 to 3 minutes.
  • Add the vegetable broth (watch out for splatters), tomato mixture, tomato paste (add a little extra if you're using fresh tomatoes that aren't super flavorful), and salt. Stir to combine, then increase the heat to medium-high and bring the mixture to a boil.
  • Cover the pot with the lid and carefully transfer it to the oven. Bake until the liquid is absorbed (the rice will look dry when you take off the lid, but don't worry) and the rice is tender, about 1 hour 15 minutes to 1 hour 30 minutes, stirring halfway through cooking.
  • Stir in the cilantro and season to taste with additional salt, if necessary (I often add another 1/4 to 1/2 teaspoon). If you'd like spicier rice, add a pinch of red pepper flakes and stir again. Serve with lime wedges on the side.

HOMEMADE NANDOS RICE

If you want to make Nandos style peri peri at home then this recipe for Nando's style Portuguese rice is what you need. Perfectly cooked rice flavoured with warming cumin, chilli and turmeric can be on the table in less than half an hour. Ideal with chicken and other peri peri dishes.

2 teaspoon vegetable oil
1 red bell pepper (medium size)
2 cloves garlic
1 small onion
1/2 teaspoon chilli flakes or powder (more if you like it spicy )
1 teaspoon turmeric powder
1 teaspoon paprika (smoked if you have it )
1/2 teaspoon cumin (optional)
1 cup basmati rice (200g)
2 cups vegetable stock or broth (just under 500ml)
salt and pepper (to taste)
1/2 cup frozen peas

Steps:

  • Peel and chop the onion, garlic and red pepper.
  • Put the oil in a pan (I like to use a shallow casserole dish). Add the onion, garlic and pepper and sauté them over a low heat. You want them to soften with the onion just starting to turn golden
  • Add the chilli flakes, paprika, cumin and turmeric, stir in and fry for another minute until fragrant.
  • Add the rice and stir until it is coated with the spice and oil mixture.
  • Pour over the stock, Add a little salt. Bring to a gentle simmer. Then put the lid on the pan and leave on the lowest heat for 18 minutes.
  • Meanwhile pour the peas into a bowl and cover with boiling water to defrost and cook them.
  • After 18 minutes, turn the heat off and allow to stand for 5 minutes. The rice will have absorbed all the liquid. Drain the peas and add to the pan. Put the lid back on immediately and leave for another 5 minutes.
  • Fluff the rice with a fork to mix the peas in, replace the lid and allow to stand for up to 15 minutes before serving.

A cold rice salad that is an excellent companion dish in the summer. It is also a convenient make ahead dish to stream line meal prep for large gatherings. Feel free to play with the herbs used in the salad. Just remember that the herb that is added while the rice is still hot will be the dominant flavor.

1 cup brown rice
3 tablespoons olive oil
2 tablespoons wine vinegar
2 tablespoons balsamic vinegar (white is very nice)
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon tarragon
1/4 cup chopped green pepper
1/4 cup chopped parsley
1/4 cup chopped chives
1/2 cup chopped cucumber
1/4 cup chopped sweet onions or 1/4 cup green onion

Steps:

  • Cook rice. While still hot mix with olive oil, vinegars, salt, pepper, and tarragon.
  • Let stand to cool for at least an hour. Add remaining ingredients.
  • To increase protein in this dish, garnish with crumbled hard boiled egg.

1/2 cup water
8 ounces broccolini, cut into 1-inch pieces (about 3 cups)
1 tablespoon vegetable oil
1 cup diced red bell pepper
1 cup chopped green onions
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
1/4 teaspoon dried crushed red pepper
12 ounces bay scallops
1 1/2 cups brown basmati rice or other brown rice, cooked, drained, cooled
2 tablespoons soy sauce
2 teaspoons oriental sesame oil

Steps:

  • Bring 1/2 cup water to boil in large skillet over medium-high heat. Add broccolini; cover and cook until crisp-tender, about 3 minutes. Drain. Dry skillet.
  • Heat oil in same skillet over high heat. Add next 5 ingredients; stir 30 seconds. Push vegetables to side of skillet; add scallops to other side. Sprinkle with salt and pepper; stir-fry 1 minute. Stir vegetables into scallops. Add rice, broccolini, soy sauce, and sesame oil and stir-fry until heated through, about 2 minutes. Season with salt and pepper.

1 zucchini, trimmed, cut into long matchstick-size strips
4 fresh shiitake mushrooms, stems trimmed, cut into thin strips
12 snow peas, trimmed, halved lengthwise
3 cups cold cooked brown rice (about 1 cup uncooked)
3 tablespoons oyster sauce*
2 tablespoons water
1/2 teaspoon (or more) chili paste*
Chopped green onions
*Oyster sauce and chili paste are available at Asian markets and in the Asian section of some supermarkets.

Steps:

  • Heat oil in heavy large nonstick skillet over high heat. Add garlic and ginger and stir-fry 1 minute. Add next 5 ingredients and stir-fry until just tender, about 3 minutes. Add rice and toss to combine. Add oyster sauce, water and chili paste and stir-fry until sauce is evenly distributed and mixture is heated through, about 2 minutes. Mound in large bowl. Garnish with green onions and serve immediately.

¼ cup soy sauce
2 tablespoons avocado oil
2 tablespoons chili-garlic sauce, or more to taste
2 teaspoons grated fresh ginger
1 teaspoon honey, or to taste
½ teaspoon sesame oil
1 medium lime, juiced
2 cups cooked brown rice
1 cup matchstick carrots
1 cup snow peas, trimmed
1 medium avocado, sliced
½ medium red bell pepper, julienned
3 stalks green onion, chopped
¼ cup natural creamy peanut butter
1 tablespoon rice wine vinegar
½ teaspoon garlic powder
1 tablespoon water, or as needed
2 teaspoons sesame seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with aluminum foil and place salmon fillets on top.
  • Stir soy sauce, avocado oil, chili-garlic sauce, ginger, honey, sesame oil, and lime juice together in a small bowl; brush over salmon fillets. Set remaining sauce aside for dressing.
  • Bake salmon in the center of the preheated oven until it flakes easily with a fork, about 15 minutes. Remove from the oven and let cool, about 15 minutes.
  • Divide rice evenly between 4 bowls and top with salmon fillets. Distribute carrots, snow peas, avocado, and bell peppers evenly between the bowls; sprinkle green onion over top.
  • Stir reserved soy sauce mixture with peanut butter, rice wine vinegar, and garlic powder; add water until dressing reaches desired consistency. Drizzle over the bowls and sprinkle with sesame seeds.
