- Cut chicken wings into three sections discard wing tips. Place wings in a greased 15x10x1-in. baking pan. Combine the butter, hot pepper sauce, garlic salt and paprika; pour over wings. Bake at 375° for 30 minutes. Turn; bake 20-25 minutes longer or until chicken juices run clear., Meanwhile, for sauce, combine the sour cream, onion, milk, cheese, garlic salt and mustard in a blender. Cover and process until smooth. Pour into a bowl; sprinkle with paprika if desired. Cover and refrigerate until serving. Drain wings. Serve with sauce and celery if desired.

- In a large resealable plastic bag, combine the bread crumbs, onion powder, basil, garlic salt and paprika. In a small bowl, whisk egg and water. Cut chicken wings into three sections; discard wing tips. Dip wings in egg, then place in bag and shake to coat. Place in a greased 15x10x1-in. baking pan. Bake at 425° for 30-35 minutes or until juices run clear, turning once.

- Sprinkle the chicken pieces with salt and pepper, and place them in a deep-sided baking dish.
- Whisk together the buttermilk, hot pepper sauce, and 1 teaspoon of cayenne pepper in a bowl. Pour the mixture over the chicken, stir to coat all sides of the chicken pieces, and cover the dish with plastic wrap. Refrigerate for about 2 hours to marinate.
- Remove the chicken pieces from the buttermilk mixture, and shake off excess. Discard the remaining buttermilk mixture.
- Place the flour, 1 tablespoon of cayenne pepper, garlic powder, paprika, and salt and pepper to taste in a large plastic zipper bag, and shake well to combine. Place 2 or 3 pieces of chicken at a time into the plastic bag, and shake well to coat the chicken pieces with seasoned flour.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Gently place chicken pieces into the hot oil, and fry until chicken is cooked through and golden brown, 8-10 minutes (breasts and wings) or 13 to 15 minutes (thighs and drumsticks). Drain the fried chicken on paper towels.

PAT'S SPICY FRIED WINGS

- In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl.
- Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.
- Whisk eggs, hot sauce, red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl. Reserve. Put the flour into a shallow dish or pie plate.
- In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer.
- Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch. Sprinkle the wings with the reserved seasoning for extra hot wings.
- Serve with Spicy Dipping Sauce.
- Mix all the ingredients together in a small bowl.
SPICY BREADED CHICKEN WINGS
=) My first recipe from a magazine.. I got this off "simple & delicious" magazine- Nov/Dec.2007 issue from the hotel lobby while on vacation.. It was by Barbara White Katy, Texas.. I used the drumlettes. I also reduce the portion and used for shrimps, remove the shrimps from shell. Instead of oven, I pan-fry these and it's great with the sauce!! Enjoy..

- In a shallow bowl, beat egg and water. In another shallow bowl, combine the bread crumbs, onion powder, basil, cayenne, garlic salt and paprika.

SPICY ASIAN CHICKEN WINGS
Steps:
- Preheat oven to 425 F degrees.
- Line a baking sheet with aluminum foil or silpat.
- Salt and pepper the wings and then place them on the baking sheet.
- Bake them for 45 min to an hour depending on how crispy you want them.
- To make the vinaigrette, mix all remaining ingredients, minus the chives and whisk everything together.
- Pour the vinaigrette over the wings while they are hot and toss them around, making sure the wings soak up all the vinaigrette.
- Garnish with chives.

CRISPY SPICY CHICKEN WINGS

- In a deep frying pan, add enough oil to cover the wings. Keep oil on medium high heat.
- Mix the flour with flour seasoning and keep aside.
- Dip the chicken wing in the seasoned flour, then dip it in milk, and finally dip it again in the seasoned flour. Do the same with all the wings.
- Fry the wings in the hot oil for 9 minutes, flip and fry for 5 minutes on the other side.
- To check if the chicken wing is cooked, prick the chicken wing with a knife, if the knife goes through the chicken smoothly it means it's done. If it feels tough and or blood ooze out, cook for another three minutes.
- Place the cooked chicken wings on kitchen towel to remove excess oil.
- Serve hot.
