3/4 pound beef
1 tablespoon fermented black beans (Chinese dried black beans)
2 garlic cloves
2 stalks celery
1 scallion
2 large carrots
1/2 teaspoon sesame oil
5 tablespoons oil (for stir-frying, or as needed)
For the Marinade:
1 tablespoon soy sauce
1 tablespoon wine
1 teaspoon cornstarch
1 dash pepper
For the Sauce:
1 tablespoon soy sauce
1 tablespoon sugar
1/4 cup chicken broth
1 tablespoon chili paste
1 teaspoon cornstarch (dissolved in 1 tablespoon water)

Steps:

  • Gather the ingredients.
  • Cut the beef into bite-sized chunks. Add the soy sauce and wine and then the cornstarch.
  • Marinate beef for 20 minutes.
  • While marinating beef, prepare the sauce and vegetables. In a small bowl, mix the soy sauce, sugar, chicken broth, and chile paste. In a separate small bowl, dissolve the cornstarch in the water. Set aside.
  • Rinse the black beans and let sit for a few minutes to soften. Use a cleaver or knife to chop finely. Mince the garlic and mash with the black beans.
  • String the celery and peel the carrots. Cut on the diagonal into thin slices. Cut the green onion into thirds.
  • Heat the wok ​and add 2 tablespoons of oil . When oil is ready , add the scallion. Stir-fry briefly, then add the carrot and celery. Stir-fry until tender and crisp. Remove vegetables from the wok and set aside.
  • Reheat the wok and add 3 tablespoons of oil. When the oil is hot, add the mashed garlic and black beans. Stir-fry until fragrant. Add the marinated beef. Stir-fry until there is no redness in the beef.
  • Add the sauce in the middle of the wok. Give the cornstarch-water mixture a quick stir and add in the middle of the wok. stirring quickly to thicken. When the sauce is boiling add the cooked vegetables. Mix well. Remove from the heat and stir in the sesame oil. Serve hot.

2 x 250g rump steaks
1 tbsp cornflour
2 tbsp sesame oil
1 large white onion, cut into thin wedges
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
2 fat garlic cloves, crushed
1 thumb-sized piece ginger, peeled and grated
1-2 red chillies, finely chopped
5 tbsp black bean sauce
1 tbsp rice wine vinegar
2 tsp sugar
sticky rice, to serve
coriander leaves, to serve (optional)

Steps:

  • Remove the thick layer of fat running down the side of the steaks and discard. Slice the steak into 1cm-thick, long strips and toss with the cornflour and some seasoning.
  • Heat the oil in a large frying pan or wok over a high heat then add the steak, frying for 3-5 mins or until golden brown on the outside. Remove with a slotted spoon and transfer to a plate.
  • Add the onion and peppers to the pan and fry for 6-7 mins or until beginning to soften. Stir through the garlic, ginger and chilli and cook for a further min. Return the beef to the pan and stir through the black bean sauce, rice wine vinegar, sugar and 2 tbsp water to loosen a little. Bring to a simmer and then remove from the heat.
  • Serve the stir-fry in deep bowls with mounds of sticky rice and top with coriander, if you like.

1 pound flank steak ((sliced 1/4-inch thick))
1/4 teaspoon baking soda
2 tablespoons water
1 teaspoon oyster sauce
1/3 cup cornstarch
1 red Holland pepper
1 small green bell pepper or poblano pepper ((100g, deseeded))
1 small red bell pepper ((100g, deseeded))
2 banana peppers ((80g, deseeded))
8 whole dried chili peppers
1/2 teaspoon granulated sugar
2 tablespoons hot water
1/2 teaspoon Chinese black vinegar
2 1/2 tablespoons soy sauce
1/4 teaspoon white pepper
1/3 cup vegetable or canola oil ((for frying))
1 tablespoon fresh ginger ((8g, sliced))
1/2 cup shallots ((thinly sliced, 40g))
2 tablespoons Shaoxing wine
5 cloves garlic ((15g, sliced))
2 tablespoons fermented black beans ((20g, rinsed))
2 scallions ((60g, cut at an angle into 2-inch lengths))

Steps:

  • In a medium bowl, combine the sliced flank steak with the baking soda, water and oyster sauce. Massage these ingredients into the beef until any liquid has been absorbed by the meat. Marinate for 30 minutes.
  • Lightly dredge all of the beef slices in cornstarch. Set aside until ready to fry.
  • Slice all the fresh peppers crosswise into thin slices on the diagonal. Set aside the dried red peppers. Do not break them open or chop unless you want a very spicy Hunan Beef!
  • Stir the sugar into 2 tablespoons of hot water until dissolved. Add the Chinese black vinegar, soy sauce, and ground white pepper. Mix until well combined and set aside.
  • Heat your wok over high heat until smoking. Spread ⅓ cup oil around the wok, and sear the beef in three batches on both sides until browned and slightly crispy on the outside. Be sure the wok and oil are hot each time you add a batch of beef.
  • Drain the crispy beef by moving it up to the side of the wok. The oil will drain to the bottom and you can then transfer the beef to a sheet pan or plate. No need for paper towels or wire racks!
  • After frying the beef, leave about 2 tablespoons of the oil in the wok, and remove any excess. If your wok got burned in the frying process, this is a good time to wash it. While you want the beef flavor from frying, you definitely don't want burned bits in the stir-fry if you got carried away with the heat during frying.
  • Set the wok over medium heat. Add the sliced ginger and fry until caramelized, about 30 seconds.
  • Next, add the shallots. Continue to fry for another 30 seconds, and add the fresh peppers (except for the red holland or fresno peppers). Turn the heat up to high and stir-fry for 1 minute to get a nice sear on the peppers.
  • Clear a section on the bottom of the wok, and add the dried chili peppers. Let them toast in the oil for 20 seconds. (If you want your dish spicier, add the dried chili peppers earlier, along with the shallots.)
  • Next, pour the Shaoxing wine around the perimeter of the wok. Add the sliced garlic, fermented black beans, and the red Holland or Fresno peppers. Stir-fry for another 30 to 60 seconds on high heat.
  • Next, add the fried beef and pour over the pre-prepared sauce. Maintain the highest heat possible and stir-fry everything together for 20 seconds. Add the scallions. Continue to stir fry until most--if not all--of the sauce has evaporated.

1 pound beef flank steak or beef chuck ((thinly sliced against the grain))
1 teaspoon baking soda
1/4 cup water
2 teaspoons cornstarch
2 teaspoons vegetable oil
2 teaspoons oyster sauce
1 teaspoon Shaoxing wine
1 1/2 cups low sodium beef or chicken stock
2 tablespoons black bean and garlic sauce ((such as Lee Kum Kee))
1 tablespoon oyster sauce
1/2 teaspoon sugar
1/2 teaspoon dark soy sauce
1/2 teaspoon sesame oil
1/8 teaspoon ground white pepper ((or to taste))
2 tablespoons vegetable oil
2/3 cup onion ((cut into 1-inch/2.5cm pieces))
1 cup red bell pepper ((cut into 1-inch/2.5cm pieces))
1 tablespoon Shaoxing wine
1 cup snow peas ((trimmed))
1 1/2 tablespoons cornstarch ((mixed into a slurry with 2 tablespoons water))

Steps:

  • In a medium bowl, add the beef, baking soda, and water. Massage the beef with your hands until most of the liquid is absorbed. Let stand for 1 to 2 hours (less time for more tender beef, or longer for a tougher cut like chuck). Then rinse the beef thoroughly under running water until the water runs clear. Drain. This step tenderizes the meat before marinating.
  • Then add the cornstarch, vegetable oil, oyster sauce, and Shaoxing wine. Mix well and marinate the beef for at least 30 minutes, or even overnight if you'd like to make this ahead.
  • In a liquid measuring cup, mix together the stock, black bean garlic sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper, and set aside.
  • Heat your wok over high heat until it starts to smoke lightly. Add 1 tablespoon of oil around the perimeter of the wok. Add the beef in 1 layer, and sear the beef on both sides until browned (this should only take 2-3 minutes). Turn off the heat, remove the beef from the wok, and set aside.
  • Reduce the heat to medium-high, and add the remaining 1 tablespoon of oil, onions, and bell peppers. Stir-fry for 30 seconds, until the onions and peppers have very light sear on them. Next, add the Shaoxing wine to deglaze the wok.
  • Stir in the sauce mixture you made earlier. Bring to a simmer, and add the beef (along with any juices) back to the wok. Stir it in, then add the snow peas.
  • Bring the contents of the wok to a simmer. Stir the cornstarch and water until incorporated into a slurry, and gradually add the slurry to the sauce, stirring constantly until the sauce is thickened to your liking (if it's too thick, add a splash of water or stock; if it's too thin, add more slurry). Cook until the snow peas are just crisp-tender. Serve immediately with steamed rice!

2 pounds boneless beef stew meat
Salt and pepper to taste
2 tablespoons oil, or as needed
1/2 large onion, chopped
1 1/2 tablespoon (or to taste) salted, fermented black beans, rinsed and mashed
1 teaspoon minced garlic
3/4 cup dry white or red wine, preferably Merlot
1 cup low-salt chicken or beef broth
1/2 cup tomatoe puree (8 ounce can)
1 bay leaf
1 generous teaspoon chopped thyme or a scant 1/2 teaspoon dried thyme
1 teaspoon minced chipotles in adobo sauce

Steps:

  • Season the beef with salt and pepper. Heat 1 tablespoon of the oil in a medium-size Dutch oven over medium-high heat. Working in batches, brown the beef on all side, removing the cubes as they brown to a bowl and adding more oil to the pan as needed; do not crowd the pan. When all the meat has browned, add the remaining tablespoon of oil to the pan. Reduce the heat to medium. Add the onion and black beans, and saute until the onion starts to turn translucent and the beans become fragrant. Add the garlic and cook 15 to 30 seconds longer. Deglaze the pan with the wine, then simmer until reduced by half. Stir in broth, tomatoe puree, bay leaf, thyme and chipotles in adobo suace. Return the beef to the pan. Add water to cover the beef. Bring to a slow simmer, partially cover, and cook until fork-tender, about 1 1/2 hours, depending on the cut of meat and size of the cubes. Stir occasionally. Uncover the pan, and if needed, simmer until the sauce is reduced to desired consistency. Taste and adjust seasoning. Serve on a roll with salad on the side, or serve like a stew with mashed potatoes and a vegetable.

Steps:

  • Fill a bowl with ice; add enough salted water to make an ice bath. Bring a large pot of lightly salted water to a boil. Cook the bitter melon in the boiling water until tender yet firm, about 2 minutes; strain the melon. Place the melon into the ice bath; allow to sit until bitterness is extracted, about 1 hour. Drain melon.
  • Whisk 1 teaspoon soy sauce, 1 teaspoon cornstarch, and baking soda together in a bowl. Add beef and toss to evenly coat. Marinate in the refrigerator for 1 hour.
  • Heat wok, or a large skillet, on high until smoking. Add 1 tablespoon oil. Lay beef evenly across the bottom of the wok; cook until browned, about 2 minutes per side. Remove beef. Pour in 1 teaspoon of oil; allow to heat. Add onion, garlic, and ginger; cook and stir until fragrant, about 30 seconds. Stir in bitter melon; cook until combined, about 1 minute.
  • Stir black bean sauce into melon mixture. Stir in remaining soy sauce, oyster sauce, and sugar. Pour in 3/4 cup water; cover and let simmer until flavors combine, 2 to 3 minutes. Uncover and mix in remaining cornstarch and 1 teaspoon water and stir until thickened.

2 tbsp olive oil
8 thick braising steaks , 1kg meat in total
2 large onions , very finely chopped, preferably in a food processor
4 garlic cloves , sliced
25g ginger , peeled and cut into slivers
good pinch saffron
2 cinnamon sticks , snapped in half
1 tbsp ground coriander
1 tbsp harissa
2 tbsp ground almond
1.2l hot beef stock
2 bay leaves
85g dried cranberries

Steps:

  • Heat the oil in a large flameproof casserole dish. Add the steaks 4 at a time and brown them well on both sides, then transfer to a plate. Now add the onions, garlic and ginger to the oil, plus juices left in the dish, and fry for at least 15 mins, stirring very frequently, until they are golden and soft. Add the saffron, cinnamon sticks, coriander, harissa and ground almonds, and stir well for 1 min.
  • Tip in the stock, then return the meat to the dish. Add the bay leaves, cover and simmer for 1 hr. Remove the lid and cook for another 1 hr 30 mins, checking occasionally to ensure the mixture doesn't catch on the bottom. Add the cranberries 10 mins before the end of the cooking time so they can plump up in the gravy. Check the beef after the cooking time - it should pull apart easily with 2 forks. If not, add a splash more water or stock and cook for another 30 mins. Remove cinnamon and bay leaves.
  • To freeze: Cool completely, then pack into freezer bags. Use within 3 months. Thaw in the bags at room temperature for 5-8 hrs depending on the bag size, although batches of 2 can be unwrapped and reheated in a pan with a little water in the base. This will also keep in the fridge for a couple of days if you don't want to freeze it. Serve with mash, rice or couscous (or gluten-free alternative).

3 ½ tbsp vegetable oil
1kg stewing beef , cut into chunks
1 onion , sliced
2 garlic cloves , sliced
1 tbsp plain flour
1 tbsp black treacle
1 tsp cumin
400g can chopped tomato
600ml beef stock (from a cube is fine)
2 red peppers , deseeded and sliced
400g can cannellini bean , drained and rinsed
soured cream and coriander, to serve

Steps:

  • Heat 1 tbsp of oil in a large saucepan with a lid. Season meat, then cook about one-third over a high heat for 10 mins until browned. Tip onto a plate and repeat with 2 tbsp of oil and rest of the meat.
  • Add a splash of water and scrape pan to remove bits. Add ½ tbsp oil. Turn heat down, fry onion and garlic until softened. Return meat to the pan, add flour and stir for 1 min. Add treacle, cumin, tomatoes and stock. Bring to boil, reduce heat, cover and simmer for 1 hr 45 mins. Stir occasionally and check that the meat is covered with liquid.
  • Add peppers and beans, and cook for a further 15 mins. The stew can now be cooled and kept in the fridge for 2 days, or frozen for 1 month. Serve in bowls, with sour cream, coriander and cornbread.

Mapo tofu is a justly popular menu item in many Chinese restaurants. It is a quickly cooked dish of braised tofu with minced pork (sometimes beef) in a bracing spicy sauce made with fermented black beans and fermented broad bean paste, along with hot red pepper and Sichuan pepper. This meatless version with fresh shiitake mushrooms is completely satisfying, and surprisingly easy to make. For the best texture, use soft tofu rather than firm, taking care to cook it gently to keep it from crumbling.

8 ounces shiitake mushrooms
2 cups water
15 ounce block of soft tofu (do not use silken)
Salt
3 tablespoons vegetable oil
3 small dried hot red peppers
1 tablespoon fermented black beans, rinsed
1 tablespoon fermented spicy broad bean paste (doubanjiang)
2 teaspoons minced garlic
1 tablespoon grated ginger
2 teaspoons soy sauce
1 teaspoon toasted sesame oil
1 teaspoon finely ground Sichuan pepper
1 tablespoon corn- or potato starch, dissolved in 3 tablespoons cold water
1/2 cup slivered scallions, both white and green parts
Cilantro sprigs, for garnish

Steps:

  • Remove stems from mushrooms. Make a light mushroom broth by simmering stems in 2 cups water for 15 minutes, then strain and reserve broth (discard stems). Dice mushroom caps and set aside.
  • Cut tofu into 1-inch cubes. Cover with boiling salted water, let steep for 15 minutes, then drain.
  • Put oil in a wok or wide skillet over medium heat. Add red peppers, black beans and bean paste and cook, stirring until fragrant, about 1 minute. Add garlic and ginger and let sizzle, then add mushrooms, soy sauce, sesame oil and Sichuan pepper. Add 1 1/2 cups mushroom broth and cook mixture gently for 2 minutes.
  • Carefully add tofu cubes. Shake pan to distribute sauce, using a wooden spoon to help. Try to avoid smashing tofu. Drizzle in cornstarch mixture, gently swirling pan to incorporate (sauce will thicken) and simmer tofu in sauce for 2 minutes more. Thin with a little mushroom broth if necessary. Transfer to a low bowl or platter. Sprinkle with scallions and cilantro sprigs.
