Steps:
- Heat in a large skillet, 2 tbls olive oil.
- Add shallots and cook until translucent.
- Add spinach (2 cups at a time) until just wilted.
- Once spinach is wilted add tomatoes, salt, cayenne pepper and black beans.
- Remove from heat and place in serving bowl.
- Mix 4 tbs olive oil and 3 tbls of lime juice and zest in a small mixing bowl.
- Pour on spinach mixture and toss.
- Sprinkle with pine nuts.
- Serve at room temperature.
MEXICAN CHICKEN AND BLACK BEAN SALAD
I call this diet haters' diet food because simple substitutions mean you won't feel deprived. You shouldn't miss the tortilla chips because you have delicious black beans instead, and you still get the yummy spicy Mexican flavor and cheese. While not necessarily authentic, this salad is easy to make! If you have time, it's is also wonderful topped with onions and maybe fresh jalapenos.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
- Place the chicken breasts in the prepared dish. Mix the tomato sauce, water and taco seasoning in a small bowl; pour sauce over the chicken.
- Bake in preheated oven until chicken is no longer pink in the center, about 30 minutes.
- Divide spinach between two plates. Place the chicken breasts on the spinach beds and spoon half the black beans over each piece. Divide sour cream, shredded cheese and salsa to top each salad.

SWEET & SPICY BLACK BEAN SALAD (OR DIP)
I could honestly eat this for days in a row...nothing else. It's a great combination of sweet corn and black beans and lots of other tasty things! It's worth the bit of mincing and is a great dish to make ahead of time. This can be served as a salad, but I've always made it as an appetizer dip, served with tortilla chips.

Steps:
- In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
- In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
- Pour dressing over bean mixture and toss to coat.
- Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
- To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.
- To serve as an appetizer, I like to eat it with tortilla chips.
SWEET N' SPICY BLACK BEAN SALAD
This black bean salad is fresh, full of different textures and very flavorful. It's sweet and tangy with a slight kick from the jalapeno. Cilantro adds freshness to the salad. Simple to make, this would be a great side dish for a potluck or a summer cookout. Very yummy.
