- Mix minced onion, salt, chili powder, cornstarch, cumin, red pepper flakes, cayenne pepper, dried minced garlic, and oregano in a bowl.
- Heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet. Cook and stir until the beef is completely browned, 7 to 10 minutes. Drain and discard any excess grease.
- Return ground beef to heat. Pour seasoning mixture and water over the beef; stir to combine. Bring to a simmer and cook until the moisture absorbs into the meat, about 5 minutes.

SPICY GROUND BEEF TACOS

- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring occasionally, until tender, about 4 minutes. Add the tomato paste, Worcestershire sauce, chili powder, cumin, coriander, paprika, oregano and garlic powder; cook, stirring, until the onion is coated, about 1 minute.
- Add the beef, 1 teaspoon salt and a few grinds of pepper to the skillet. Cook, breaking up the meat, until no longer pink, about 5 minutes. Add the tomatoes, hot sauce and 1/4 cup water and bring to a simmer. Reduce the heat and cook, stirring occasionally, until the juices are slightly thickened, 5 to 7 minutes. Season with salt and pepper.
- Meanwhile, warm the taco shells as the label directs. Fill with the beef mixture and top with lettuce, cheese and/or pickled jalapenos.

- 3. Add them to a glass jar, shake up, and tightly cover.
- 4. Chef's Note: Some people will add cornstarch or arrowroot to their seasoning mix. The idea is to have a bit of a thickener in the dry spice when you use it. In my opinion, if I want a taco spice that includes a thickener... I'll add it when I'm cooking... NOT to the dry spice mix.
- 5. Chef's Tip: Store in a cool dry place, out of the sunlight. It should be good for six months. Enjoy.

SPICY TACO SEASONING
I reverse engineered store-bought taco seasoning because I use a lot of it and wanted a more natural mix. I like the way it tastes and the texture, although I will note the color and texture of store-bought mix is different, probably due to the fact that they add yellow corn flour to theirs, so you could add that in if you like. This recipe also has a "spiciness" knob. I like things really spicy, so you may want to tone it down. Just use less (or more!) Cayenne and Chipotle powder for a different amount of heat. This version is also considerably less salty than store-bought, so if you want yours saltier (or less saltier), adjust the amount of salt.

- Crumble the raw ground beef (with a spatula or clean hands) and put it on a hot air fryer tray. Carefully put the tray back in the air fryer (top rack for air fryer ovens).
- Air fry the beef for 4 minutes at 375°F (190°C). Then chop the beef crumbles up even smaller with a metal spatula (or crumble using clean hands), and put the beef back in the air fryer. Air fry for 1 more minute at 375°F (190°C).

- Combine seasoning blend: Put all the ingredients for the spice mix in a small bowl - paprika, cumin, oregano, chili powder, onion powder, garlic powder, and coriander. Add 1 1/4 teaspoons salt and 1/2 teaspoon black pepper. Stir well to combine.
- Season beef: Put the beef on a clean surface. Sprinkle two tablespoons of the seasoning blend over the beef. Work the spices into the meat with your hands.
- Sear beef: In a Dutch oven or large heavy-bottomed pot, heat 1 1/2 tablespoons oil over medium-high heat. Add meat (in batches if necessary) and brown on all sides, about 8 minutes. Add more oil if necessary if browning meat in batches. Remove to a plate.
- Sauté vegetables: As soon as the pot is now empty, reduce the heat to medium and add the remaining 1 1/2 tablespoons of oil, followed by the onions. Season the onions with a pinch of pepper and a pinch of salt. Sauté, stirring occasionally, for about 3 minutes. Stir in garlic and the remaining seasoning blend. Cook, stirring constantly, for about 30 seconds before it becomes fragrant. Then add the tomato paste and chopped chipotles. Stir constantly until the paste is caramelized, about 1-2 minutes.
- Deglaze + add beef: Deglaze the pan with lime juice. Cook, scraping up any browned bits at the bottom, then add the adobo sauce, the stock, the Picante sauce, and the bay leaf. Mix well, and then add the seared beef, along with any accumulated juices, to the pot.
- Cover + cook: Bring the contents to a simmer. Cover the pot and reduce the heat to low. Simmer covered for 3 - 3 1/2 hours, or until the meat becomes tender and falls apart. You should stir the beef every hour to achieve the best results.
- Shred beef: Turn off the heat in the pot. Remove the bay leaf with tongs and discard it. Shred the beef with two forks (you can also remove the beef to a cutting board, shred it, and return it to the pot.)
- Gently simmer to warm: Reduce the heat to low and gently simmer the meat for about 10-15 minutes.
- Serve: To serve, place beef in a serving dish and top with cilantro. Serve with lime wedges.
- For tacos: Add shredded cheese to warmed corn tortillas and top with shredded beef; garnish with chopped veggies, pico de gallo, fresh cilantro, guacamole, or sour cream.
