SPICY BUTTERBEANS ON TOAST



Spicy Butterbeans on Toast image

Delicious homemade gluten free & vegan spicy butterbeans on toast. The perfect healthy breakfast/brunch or lunch!

glug olive oil
1 garlic clove (crushed)
400 g can of butterbeans (drained and rinsed)
400 g tinned tomatoes
2 tsp paprika
2 pinches chilli flakes
1 tbsp maple syrup
1 tbsp tamari
handful spinach
pinch salt and pepper
gluten free bread for toasting

Steps:

  • To a pot add a glug of olive oil, 1 crushed garlic clove and the drained and rinsed butter beans and stir
  • Now add the tinned tomatoes, 2 tsp paprika, 2 pinches chilli flakes, 1 tbsp maple syrup, 1 tbsp tamari and stir
  • Cook on a high heat for about 7-8 minutes until the sauce starts to thicken
  • Now take off the heat, add the spinach and stir though until it wilts
