SPICY THREE BEAN SOUP
This wonderfully hearty soup is great for chilly fall or winter nights. Three types of beans and plenty of vegetables combine in this flavorful medley. Dry beans may be substituted, but will require soaking overnight.

Steps:
- Heat the olive oil in a large saucepan over medium heat. Place onion and garlic in the saucepan and slowly cook and stir until tender and browned.
- Place the great northern beans, red kidney beans, black beans, celery, carrots, potatoes, tomato-vegetable juice cocktail, brown sugar, thyme, water and vegetable bouillon in the saucepan. Cook over medium-high heat approximately 25 minutes. As the mixture thickens, stir in the red wine.

SPICY CHILLI BEAN SOUP

Steps:
- Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 mins until combined. Sprinkle in the spices and cook for another 1 min.
- Tip in the chopped tomatoes, half fill the can with water, and add to the pan. Pour in the stock and simmer on a medium heat for 10-15 mins, uncovered. Season, then whizz using a hand blender until smooth. Add the beans and red pepper, and cook for another 15 mins until the pepper is tender.
- Serve in bowls topped with a small pile of tortilla chips and a lime wedge.

- Peel onion and chop. Rinse and halve chile pepper, remove seeds and ribs, chop. Rinse bell peppers, halve and remove seeds and ribs, chop. Heat grapeseed oil in a saucepan, saute onion, chile pepper and bell peppers for a few minutes. Season with cumin powder and sugar and deglaze pan with chicken broth. Simmer for 5 minutes. Peel bananaa, mash with a fork and mix with lime juice.
- Add bananas and 200 ml (approximately 3/4 cup) of cream to the soup, bring to a boil and puree with an immersion blender. Season with salt. Beat remaining cream until stiff. Pour soup in bowls and top with whipped cream. Garnish with banana chips and serve.

- Put your olive oil to a large soup pot and heat to medium high heat.
- Add your onions, mushrooms and sausage and turn the heat down to medium. Sauté until the sausage is browned and the onions translucent. Break up the sausage as you brown it.
- Add in the diced tomatoes, peppers, broth and Better than Bouillon.
- Bring to a simmer, cover and cook for about 10 minutes.
- Add your garlic and cook another 5 minutes.
- Add your spinach right when it's done. Mix well and spinach will wilt.
- Serve with grated cheese. (optional)

SPICY BUTTERNUT SQUASH SOUP
This simple and delicious spicy butternut squash soup is perfect to warm you up on a cold, rainy day!

- Heat the oven to 200C / 180C fan. Cut the squash into medium cubes and transfer into a large roasting tin with 1-2 tbsp olive oil. Roast for 30 minutes, until soft and golden, turning half way through.
- In a meantime, in a large saucepan heat the remaining olive oil then add the onions, garlic and chillies. After about 10 minutes, add fresh sage leaves and cook covered for another 5 minutes.
- Tip the squash into the saucepan, add hot vegetable stock. Using a stick blender whizz all the ingredients until smooth. Add seasoning, like salt and pepper to taste. Serve with swirls of soya yogurt on top, decorate with fresh sage leaves and chilli flakes. Enjoy!

- Combine all ingredients in a blender and process until very smooth. Chill in the fridge for about 1/2 hour. Serve in bowls and enjoy!
SPICY CREAM OF BANANA SOUP
Steps:
- Cut bananas into chunks and place in your blender. Add the chicken stock, milk, whipped cream cheese, spices, and seasonings to the blender and puree until smooth. Pour the pureed mixture into a saucepan and bring to a boil. Cook at low to medium heat for about 10 to 15 minutes, stirring occasionally. Serve hot. Optional: Serve topped with sour cream or yogurt. ALTERNATIVES 1. Add cooked winter squash to the banana broth mix and puree. 2. Add ½ cup leftover cooked rice to the pureed soup and reheat. 3. For a more robust soup sauté finely chopped carrots, onion and celery and add to the soup along with a can of pumpkin. Cook and puree as described above. Reheat, and season to taste with salt and pepper. Serve topped with yogurt or unsweetened coconut flakes

Steps:
- Peel and dice onion.
- Clean and dice the chili pepper.
- Heat 1 Tbsp oil in a meium sauce pan and sauté onion and pepper until soft but don't brown.
- Add orange juice, zest, and 2 cups vegetable broth.
- Stir in the ketchup.
- Cover pot bring to boil, low heat to medium and cook for 5 minutes.
- Add two of the bananas to the soup and puree.
- In a dry frying pan roast the grated coconut, until lightly browned, then let cool slightly on a plate.
- Peel and slice the last banana, coat with the coconut by pressing the banana slices slightly and turning then pressing again.
- In a frying pan heat 1 tbsp oil, then fry the coated banana slices on both sides.
- To serve laddle the soup into bowls then float the fried banana slices on top, sprinkle any left over coconut on top. Can garnish with finely sliced chili pepper rings and fine herbs.
- Enjoy.
