It's easy to love these delicious appetizers. They're nice to serve outside when you invite friends over for a grilled meal. They remind me of the potato skins I have had in restaurants-only better! -Mitzi Sentiff, Annapolis, Maryland

2 large baking potatoes
2 tablespoons butter, melted
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese
3 bacon strips, cooked and crumbled
2 green onions, chopped
Sour cream

Steps:

  • Cut each potato lengthwise into four wedges. Cut away the white portion, leaving 1/4 in. on the potato skins. Place skins on a microwave-safe plate. Microwave, uncovered, on high for 8-10 minutes or until tender. Combine the butter, rosemary, salt and pepper; brush over both sides of potato skins., Grill potatoes, skin side up, uncovered, over direct medium heat for 2-3 minutes or until lightly browned. Turn potatoes and position over indirect heat; grill 2 minutes longer. Top with cheese. Cover and grill 2-3 minutes longer or until cheese is melted. Sprinkle with bacon and onions. Serve with sour cream.

2 cooked russet potatoes
4 slices bacon
1 small bunch asparagus, trimmed to just the top 1/3 of the spears
BBQ sauce
1 cup shredded Cheddar
Sour cream

Steps:

  • Preheat grill over medium-high heat.
  • Peel each potato and cut ends off, (so they are flat on both sides), then cut in half across the center. Scoop out 1/2-inch of the potato's center to form a crater. Wrap a piece of bacon around each chunk of potato and secure with toothpicks to keep the bacon in place.
  • Put the potatoes on the grill, cut side down, until the bacon is cooked. Flip once to get color on each side. Cover with foil to create a tent and turn heat down to medium to "steam" the potatoes. Put the asparagus on the grill and coat with BBQ sauce. Remove the foil from the potatoes, add the cheese to the crevice and cook until melted.
  • Arrange a potato in center of each plate and remove the toothpicks. Stick 3 to 4 pieces of asparagus in the cheese crevice so the asparagus is standing upright. Garnish with sour cream and serve.
  • Eat and enjoy.

6 large baking potatoes (3 lb.)
2 Tbsp. butter, melted
1/2 cup TACO BELL® Verde Salsa
1 cup KRAFT 2% Milk Shredded Cheddar Cheese
3 slices OSCAR MAYER Turkey Bacon, cooked, chopped
2 large plum tomatoes, seeded, chopped
2 green onions, sliced
1/2 cup light sour cream

Steps:

  • Heat grill to medium heat.
  • Pierce potatoes with fork or small sharp knife. Wrap individually in foil.
  • Grill 1 hour or until tender. Unwrap potatoes; cool 10 min.
  • Cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Discard removed centers or reserve for another use. Brush insides of shells with butter; fill with salsa, cheese and bacon.
  • Grill 10 to 12 min. or until skins are crisp. Top with remaining ingredients.

4 slices cooked bacon, crumbled
2 tablespoons butter, melted
1 clove garlic, minced
3/4 cup Cheddar
1/2 cup barbecue sauce, warm
1/2 pound pulled pork
Sour cream, for topping
2 tablespoons snipped chives, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Bake potatoes on middle rack until fork tender, about 1 hour. Remove from oven and let sit until cool enough to handle.
  • Bake 4 strips of bacon on a small sheet pan in the oven for 15 minutes. Crumble bacon when it's cooled.
  • Preheat grill to medium heat.
  • Cut potatoes in half, lengthwise, and spoon out the flesh, leaving a half inch shell.
  • Melt the butter in saucepan and add minced garlic. Brush potatoes with the butter and garlic mixture. Flip over and butter the bottoms.
  • Place potatoes on grill and cook until crisp, about 4 to 4 1/2 minutes on each side and remove from grill.
  • Divide the cheese, barbecue sauce and pulled pork among the potatoes. Top potato skins with sour cream, crumbled bacon and chives for garnish.

These tasty potato skins are lower in fat than the original version because they are baked and not fried. Serve them with ketchup or sour cream, you can sprinkle green onions into the sour cream to brighten the dish up a bit and get everyone in a party mood!

¼ cup olive oil
1 teaspoon salt
½ teaspoon ground black pepper
1 ½ teaspoons chili powder
1 ½ teaspoons curry powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake the potatoes for 1 hour. Remove the potatoes from the oven, but keep the oven on. Slice the potatoes in half lengthwise, and let them cool for 10 mins. Scoop out most of the potato flesh, leaving about 1/4 inch of flesh against the potato skin (you can save the potato flesh for another use, like mashed potatoes)
  • Cut each potato half crosswise into 3 pieces. Place the olive oil in a small cup. Dip each potato piece into the olive oil and place it on a baking sheet. Repeat this with the remaining potato pieces
  • Combine the salt and the spices and sprinkle the mixture over the potatoes. Bake the potato skins for 15 minutes or until they are crispy and brown. Serve them immediately.
