CHINESE HOT-AND-SPICY ASPARAGUS SALAD
Found this years ago from a California Çulinary Academy CD. Great to have a double batch of the dressing on hand.

Steps:
- 1. Bring a large pot of water to a boil over high heat. Trim ends of Asparagus and slice each stalk diagonally into 3-inch pieces (or leave whole). Steam until tender (8 to 10 minutes). Drain.
- 2. In a blender combine garlic, gingerroot, salt, honey, soy sauce, sesame oil, vinegar, cayenne, and hot-pepper flakes. Pour over Asparagus or set in a bowl as a dipping sauce. Chill or serve warm.

Steps:
- Wash Asparagus - Trim off hard ends, Cut along Diagonal in 1 inch pieces.
- In medium pot half full of water bring to boiling add asparagus continue to heat until it starts to Boil again - Then Drain immediately using colander. Make sure to drain well. Asparagus should be slightly crunchy.
- While the asparagus is cooking mix the balance of the ingredients in a small bowl. Mix the drained Asparagus and the sauce. Chill and serve. Keeps in the refrigerator for several days. Cover tightly - or it will stink up the refrig!
- You can find the Korean Hot Bean Paste in an Oriental Grocery Store.

QUICK-PICKLED SPICY ASPARAGUS
I love pickled asparagus but got tired of spending so much money on tiny little jars and decided to pickle my own. I also like it spicy but feel free to halve the crushed red pepper or omit it altogether if spice is not your thing.

- Place trimmed asparagus in a quart-sized canning jar. Add garlic, pepper flakes, mustard seed, and peppercorns.
- Combine vinegar, water, salt, and sugar in a medium saucepan over medium heat; bring to a boil. Reduce heat and simmer for 5 minutes. Turn heat off.
- Pour vinegar mixture over the asparagus. Screw on the lid and let sit until lid has sealed, about 1 hour.
- Place in the refrigerator until pickled, at least 2 days.

SPICY ASPARAGUS WITH GARLIC

- Bring a large pot of water to a boil. Add asparagus and blanch until the asparagus turns a vibrant green, about 1 minute. Transfer asparagus to an ice bath to stop the cooking process. Remove asparagus from the ice bath, drain, and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, just until it becomes fragrant, about 30 seconds. Season with pepper flakes, add asparagus, and quickly toss in the seasoned oil. Heat until asparagus is just crisp-tender, not overly soft, 1 to 2 minutes.
- Stir in olives and season with salt and pepper. Serve with lemon wedges.

- In a mixing bowl large enough to fit all of the ingredients, make the dressing: whisk together the rice vinegar, vegetable oil, brown sugar, soy sauce, lime juice, sesame oil, ginger, garlic, and jalapeño.
- Snap or cut off the tough ends of each asparagus spear. Cut the asparagus on the bias into very thin slices (about 1/8-in thick), leaving the tips intact. Add the sliced asparagus to the mixing bowl and toss with the dressing. Add the scallions, cilantro, mint, and sesame seeds and toss again. Taste and adjust seasoning with salt, if necessary. Refrigerate for at least 2 hours or overnight. When ready to serve, stir in the almonds and then taste and adjust seasoning (you will likely need to add more lime or rice vinegar, as the flavors mellow).
