SPICY STIR-FRIED CABBAGE

Spicy Stir-Fried Cabbage image

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, weekday, one pot, main course

Time 10m

Yield Serves four

Number Of Ingredients 11

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil
1 small cabbage, 1 to 1 1/2 pounds, quartered, cored and cut crosswise into 1/8-inch shreds
1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Cover and cook over high heat for one minute until just wilted. Uncover and stir-fry for another 30 seconds, then stir in the chives or cilantro and remove from the heat. The cabbage should be crisp-tender. Serve with rice or noodles.

SPICY CAJUN CABBAGE

Spicy Cajun Cabbage image

I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

SPICY CABBAGE KIMCHI

Spicy Cabbage Kimchi image

Kimchi, a popular Korean dish, is best described as a spicy, slightly sweet, pickled or fermented cabbage. I spent a year in South Korea and fell in LOVE with Kimchi! My friend Myong was kind enough to share her recipe and technique with me. Some ingredients may not be readily available in your local supermarket. Look for Kimchi (Fish) Sauce and Korean chili powder in Asian markets or online. Use kimchi in stir fries or your favorite Korean dishes.

Time P4DT7h

Yield 56

Number Of Ingredients 9

2 heads napa cabbage
1 ¼ cups sea salt
1 tablespoon fish sauce
5 green onions, chopped
½ small white onion, minced
2 cloves garlic, pressed
2 tablespoons white sugar
1 teaspoon ground ginger
5 tablespoons Korean chile powder

Steps:

  • Cut the cabbages in half lengthwise and trim the ends. Rinse and cut into pieces about 2 inch square. Place the cabbage into large resealable bags and sprinkle salt on the leaves so they are evenly coated. Use your hands to rub the salt in to the leaves. Seal the bags and leave at room temperature for 6 hours.
  • Rinse the salt from the cabbage leaves and then drain and squeeze out any excess liquid. Place the cabbage in a large container with a tight fitting lid. Stir in the fish sauce, green onions, white onion, garlic, sugar and ginger. Sprinkle the Korean chile powder over the mixture. Wear plastic gloves to protect your hands and rub the chile powder into the cabbage leaves until evenly coated. Seal the container and set in a cool dry place. Leave undisturbed for 4 days. Refrigerate before serving, and store in the refrigerator for up to 1 month (if it lasts that long!).

  • Preheat oven to 400°F. Lightly coat a 3-quart rectangular baking dish with cooking spray; set aside. Carefully remove 12 outer leaves from cabbage; set aside. Finely chop enough of the remaining cabbage to measure 6 cups. Transfer chopped cabbage to a colander; sprinkle with salt. Set colander in a sink and let stand for 30 minutes. Meanwhile, trim away the heavy vein off the back of each cabbage leaf so it's even with the rest of the leaf. Immerse leaves, four at a time, into boiling water for 2 to 3 minutes or just until limp.
  • In a large bowl combine egg, cooked rice, mushrooms, soybeans, snipped cilantro, carrot, green onion, pickled ginger, soy sauce, and sesame oil. Add ground pork; mix well. Squeeze excess water from chopped cabbage; stir cabbage into pork mixture.
  • Place about 1/2 cup of the pork mixture on the stem end of each cabbage leaf. Fold in sides and roll up leaf to enclose filling. Place cabbage rolls, seam sides down, in the prepared baking dish. Pour Asian Braising Sauce over cabbage rolls.
  • Bake, covered, for 20 minutes. Bake, uncovered, for 15 to 20 minutes more or until an instant-read thermometer inserted in the centers of cabbage rolls registers 165°F. If desired, garnish each serving with cilantro sprigs.
