SPICED FRUIT LOAF



Spiced fruit loaf image

A treat when freshly baked and spread with butter, then try it toasted for breakfast the next day

Yield Makes 2 x 2lb loaves, each cuts into 8 slices

Number Of Ingredients 15

450g strong white flour , plus extra for dusting
2 x 7g sachets easy-blend yeast
50g caster sugar
150ml warm milk
1 egg , beaten
50g unsalted butter , melted, plus extra for greasing
oil , for greasing
1½ tsp ground cinnamon
1 tsp ground ginger
50g dried apricot , chopped
50g dried fig , chopped
50g pitted date , chopped
50g sultana
50g glacé cherry , chopped
juice 1 orange

Steps:

  • Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
  • Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
  • Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
  • Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
  • Bake for 20 mins, then cool in the tins before turning out and slicing.

1/4 cup chili sauce
1 tablespoon hot mustard

4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • Preheat broiler. In a small saucepan, combine the first five ingredients; cook and stir over medium heat until heated through., Place chicken in a 15x10x1-in. baking pan coated with cooking spray. Broil 3-4 in. from heat until a thermometer reads 165°, 6-8 minutes on each side. Brush occasionally with preserves mixture during the last 5 minutes of cooking.

This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

Number Of Ingredients 11

1 cup snipped dried apricots
2 cups warm water
1 cup sugar
2 tablespoons butter, softened
1 large egg
3/4 cup orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts

Steps:

  • Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

1 cup boiling water
1 cup dried apricots, chopped
3 tablespoons margarine
½ cup cream cheese, softened
1 cup white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup dates, pitted and chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
  • Pour boiling water over apricot pieces in a small bowl. Cool.
  • In another bowl, combine flour, baking powder, soda, salt, and dates.
  • In a large bowl, cream butter or margarine, cream cheese, and sugar. Beat in eggs, one at a time, until smooth. Stir in cooled apricots and water. Pour in flour mixture, and stir until moistened. Turn batter into greased 9x5x3 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done. Let stand 10 minutes. Remove from pan to rack. Cool.

1/4 cup apricot jam
1/4 teaspoon red-pepper flakes
4 boneless, skinless chicken breast halves (about 6 ounces each)
Coarse salt and ground pepper

Steps:

  • Heat broiler, with rack set 4 inches from heat. In a small bowl, stir together jam and red-pepper flakes; set glaze aside.
  • Place chicken on an aluminum-foil-lined baking sheet; season with salt and pepper. Broil until chicken begins to turn opaque, 5 to 6 minutes.
  • Brush glaze on chicken. Broil until glaze is browned and an instant-read thermometer inserted in thickest part of chicken registers 165 degrees, 4 to 5 minutes more.

500 g lean lamb leg steaks (or casserole lamb for slow cooking)
1/2 cup dried apricot (I left these out) (optional)
1/4 cup plain flour
1 cup onion, diced
1 cup carrot, sliced
1 cup celery, sliced
2 cups apricot nectar
2 teaspoons chicken stock powder
300 ml medium salsa
1 teaspoon curry powder
1 cup water

Steps:

  • Pre-heat oven to 180.C.
  • Cut lamb into cubes and cut apricots, if using, in half.
  • Coat lamb in flour and place in a non-stick pan coated in oil to brown and seal in the juices.
  • Place all remaining ingredients in a large oven-proof casserole dish (with a lid) and stir until combined.
  • Place lid on casserole dish and cook for approx 90 mins or until vegetables are cooked to your liking.
  • Serve over rice.

While I love it served fresh and hot, a good next-day meatloaf sandwich is also a comfort food. I serve it with a nice arugula salad with cherry tomatoes, raisins, chopped walnuts, and vinaigrette dressing, or for a southern flare--garlic-smashed potatoes and freshly steamed snap green beans. Just yummy deliciousness and mum is always right!

1 ½ pounds ground beef
1 cup bread crumbs
1 small onion, minced
1 large egg, beaten
2 cloves garlic, minced
1 ½ tablespoons apricot preserves
1 tablespoon kosher salt

½ cup apricot preserves
¼ cup brown sugar
2 tablespoons hot sauce (such as Frank's Red Hot ®)

  • Preheat the oven to 350 degrees F (175 degrees C).
