SPICY CHICKEN DRUMSTICKS

- Preheat your oven to 400 degrees F. Line a rimmed baking sheet with high-heat-resistant parchment paper.
- Wipe the chicken drumsticks dry with paper towels. Arrange them in a single layer on the baking sheet.
- Prepare the rub: In a small bowl, combine the olive oil, kosher salt, chili powder and cayenne pepper to create a paste. Pour the paste over the chicken pieces and, using your hands or a pastry brush, coat the chicken on all sides.
- Bake the drumsticks until cooked through (their internal temperature should reach 165ºF) and juices run clear, about 40 minutes. Check them after the first 30 minutes and loosely cover them with foil if they seem to be darkening too fast on top.
- If you wish, garnish with chopped parsley and red pepper flakes, then serve.

- Rinse drumsticks and pat dry. Arrange in single layer on a baking sheet. Bake at 400°F for 10 minutes. Meanwhile, in a small bowl, combine remaining ingredients until well blended. Spoon half of agave mixture over drumsticks bake 10 minutes. Using tongs, turn drumsticks over. Spoon remaining agave mixture over drumsticks bake 10 minutes longer. Let cool slightly before serving.

- In a food safe bowl or bag, place your chicken drumsticks. Add the achiote seasoning, lime juice, orange juice, mezcal, habanero hot sauce and canola oil. Mix together thoroughly then place in the fridge to marinate for at least 4 hours but ideally overnight.
- Pull the chicken drumsticks out of the bowl and begin skewering them. Make sure to only skewer them on one side as to avoid breaking the bone. If possible, pour any of the excess marinade over the top of the skewered drumsticks for added flavor.

- Mix the water, kosher salt and the 4 tablespoons of Tabasco in a large bowl or stockpot fitted with a lid. Add the drumsticks and brine in the refrigerator overnight or up to 8 hours.
- Take the drumsticks out of the brine and rinse in cold water and pat dry. Line the bottom of a baking sheet with foil and top with a baking rack. Spray the rack with cooking spray then place the drumsticks on the rack. Mix the canola oil with 10 shakes of Tabasco and baste the drumsticks then season with freshly ground black pepper. Cook for 25 minutes, then raise the temperature to 500 degrees F and cook for an additional 10-13 minutes or until golden browned and internal temperature is 185 degrees.
- Remove from the oven and garnish with freshly crumbled blue cheese and chopped green onion. Serve with more tabasco if desired.
