1/2 cup heavy cream
1/4 teaspoon nutmeg (ground)
1 tablespoon sugar
1/2-3/4 teaspoon cinnamon (ground)
1 1/2 cups dark roast coffee (hot)
1 ounce Irish whiskey (optional)
2 teaspoons chocolate syrup

Steps:

  • Whip the cream with the nutmeg, sugar, and 1/4 teaspoon cinnamon.
  • Divide the coffee and whiskey (if desired) into 2 cups.
  • Stir 1 teaspoon chocolate syrup and 1/4 teaspoon cinnamon into each cup; top with spiced cream.

3/4 cup chilled whipping cream
1 cup freshly ground coffee (preferrable a mild roast)
2 teaspoons ground cinnamon
1 1/2 tablespoons powdered sugar
5 teaspoons ground cardamom
1 teaspoon ground nutmeg
1 tablespoon brandy
1 tablespoon sugar
7 cups water

Steps:

  • Using electric mixer, beat whipping cream in a large bowl to soft peaks.
  • Add powdered sugar and brandy; beat to peaks.
  • Place ground coffee, cardamom, sugar, cinnamon and nutmeg in coffee filter.
  • Using spoon, mix gently.
  • Add water to the coffee maker and brew according to manufacturer's instructions.
  • Divide coffee among 8 cups.
  • Garnish each with a dollop of whipped cream and serve immediately.

A deliciously spiced coffee which enhances the coffee drinking experience, and is therefore particularly welcome when you're aiming to reduce the calories in your daily diet. Because it has no milk, it has NO fat and, at 17 calories, it is super-low in calories. Compare that with a creamy cappuccino! Adapted from Australian chef flip shelton's 'green: modern vegetarian recipes', and posted for the post-ZWT Healthy for the Holidays Challenge! When I make this next time, I'm going to try it without the fennel seeds and with a tablespoon of orange juice.

2 cinnamon sticks
6 fennel seeds, crushed
1 teaspoon brown sugar or 1 teaspoon honey, to taste

  • Combine all the ingredients in a small (1 mug or 2 cup size) coffee plunger.
  • Add boiling water and allow to stand for 5 minutes before pouring.
