SPICED-UP CALIFORNIA BURGERS



Spiced-Up California Burgers image

Skip the burger joint in favor of your own backyard. Barbecue sauce and French-fried onions take these grilled burgers over the top-mixed and made in 25 minutes!

1 lb lean (at least 80%) ground beef
5 medium green onions, sliced (1/3 cup)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup barbecue sauce
4 slices pepper Jack cheese
4 hamburger buns, split
4 leaves romaine lettuce
4 slices tomato
1/2 cup French-fried onions (from 2.8-oz can)

Steps:

  • Heat gas or charcoal grill. In large bowl, mix beef, green onions, salt and pepper. Shape mixture into 4 patties, about 1/2 inch thick.
  • Place patties on grill over medium-high heat. Cover grill; cook 8 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Top each burger with 1 tablespoon barbecue sauce and 1 slice cheese. Cover grill; cook about 30 seconds longer or until cheese begins to melt.
  • Remove burgers from grill; cover to keep warm. Place buns, cut sides down, on grill. Cover grill; cook about 1 minute or until golden brown.
  • On bun bottoms, layer lettuce and tomato. Top with burgers and French-fried onions. Cover with bun tops.

Beef burgers get a big flavor boost here from Cajun seasoning, while the classic trinity of Creole cuisine (onions, bell peppers, and celery) makes an appearance as well. Our burger blend of choice is 80% lean ground beef-it has the perfect ratio of juiciness to flavor.

1 1/2 pounds 80% lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch rounds
1 medium green bell pepper, sliced into 1/4-inch rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • SET UP: Prepare a grill or grill pan and heat to medium-high heat.
  • FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
  • MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.
