SPICY STEWED ZUCCHINI
Tender, spicy zucchini slices would be a great veggie side for any grilled or roasted meats.

Steps:
- Heat the oil in a large skillet over medium heat until lightly smoking.
- Add the garlic, and cook a minute or two until fragrant, then add the zucchini and onions and cook the vegetables for about 15 minutes, stirring often, until they soften and begin to brown.
- Add the chili pepper, and 1/2 cup of wine and lower the heat to medium low and continue to cook until the zucchini begin to break down, about 10 minutes.
- If the mixture begins to dry out as it cooks, add a little water as needed.
- Stir in the basil and season with salt and pepper.
- Serve at room temperature.

- Cook chopped bacon until done, but not crispy.Drain and set aside.
- Saute sliced zucchini in large skillet, tossing in chopped onion, at the last moment adding crushed garlic cloves.
- Transfer to 6-8 qt pot, adding bacon and canned tomatoes, seasonings and more garlic, plus just enough water to make sure everything is covered. C over and cook over medium-low heat until zucchini is tender, keeping an eye on the fluid.
- Optional: Top with parmesan or grated mozzarella.

- Heat a skillet over moderate heat. Go 1 turn of the pan with a slow stream of extra-virgin olive oil. Add crushed garlic and red pepper flakes to the pan. Saute garlic and red pepper flakes 1 or 2 minutes. Add zucchini and season with salt, cumin and chili powder. Saute, stirring occasionally, about 3 minutes. Add chick peas, tomatoes and scallions to the pan and stir to combine. Cook over medium low heat for 10 minutes. Stir in cilantro and serve.
- To reduce the heat level, omit the red pepper flakes from the recipe and method.

- Blend sugar and oil together in a mixing bowl. Beat in eggs and vanilla; add grated zucchini. Stir in flour, cocoa powder, cinnamon, baking soda, nutmeg, salt, baking powder, and allspice. Hand mix in chocolate chips and nuts. Pour batter into the prepared loaf pan.

- Start by cooking the basamti rice with 1 1/4 cup of water in a medium sized pot. Bring the water to a boil, season with a pinch of salt, and then add the rice. Once the pot comes back to a boil, cover the pot with a lid and reduce the heat to medium-low. Cook for 12- 15 minutes. Once the rice is cooked, fluff the rice with a fork and keep warm until ready to serve.
- While the rice is cooking on the stove, cut the onion into small 1/4 inch pieces. Then, cut the bell pepper and zucchini into 1/2 inch pieces. Set the chopped vegetables aside. Roughly chop the garlic, then zest and juice half the lime. Cut the remaining lime into small wedges.
- Heat 1 tbsp of oil or butter in a large pot over medium-high heat. Add the chopped onions, bell pepper, zucchini, and garlic. Cook for 3-5 minutes until the peppers start to soften. Mix in the curry paste and cook, stirring often for about 30 seconds to gently toast the spices.
- Add the canned chickpeas (including the liquid), coconut milk, and soy sauce to the pot. If you like a little heat in your curry, add the chili flakes at this point. You can add less than the listed amount for a milder curry.

- Halve the zucchini lengthwise and scoop out the flesh, leaving 1/4-inch-thick shells. Reserve 1 cup of the zucchini flesh and finely chop it.
