SPANISH HOT CHOCOLATE RECIPE - THICK HOT CHOCOLATE
The Spanish hot Chocolate, also known as Chocolate caliente in Spanish, is one of the most popular winter drinks not only in Southern Spain but all around the world. This Spanish Chocolate drink had its origins in the XVIIth century and it used to be consumed only by the Spanish Aristocracy. The idea of the Hot Chocolate actually came from the Mayan Empire, but the Spanish merchants modified the recipe giving it a unique and distinguished flavor.

Steps:
- On a large pot mix cornstarch with milk until combined.
- Add sugar and dissolve. In the meantime chop chocolate into small pieces.
- Take the pot with milk and warm it at medium heat. Make sure to mix constantly.
- Add the chocolate to the hot milk and let it melt.
- *Optional; at this point, you can add cinnamon or any desired spice.
- Mix thoroughly until you get a thick and smooth consistency.
- Serve hot on individual cups.

SPICED SPANISH HOT CHOCOLATE
This thick, rich and decadent Spiced Spanish Hot Chocolate recipe is my favorite hot drink. Inspired by authentic Spanish Hot Chocolate, it is enhanced with the flavors of coconut milk, cardamom, vanilla, instant espresso powder, and both coconut flakes and Cinnamon Maple Syrup drizzle on top. I always get a Spanish Hot Chocolate the second I land in Barcelona, Spain whenever I visit my sister. Now you can make it in your own kitchen!

Steps:
- the milk and coconut milk in a large saucepan on low-medium heat.
- the cinnamon, nutmeg, cardamom, vanilla, and instant espresso powder. Stir constantly to make sure everything is combined.
- some of the hot milk in a cup and mix with the cornstarch until the lumps dissolve. Add the mixture back into the saucepan. Whisk until the cornstarch is well mix and there is not lumps.
- the dark chocolate and stir until the chocolate is melted.

- Sift all ingredients together into a large bowl. Whisk the mixture together to be sure the spices are evenly distributed.
- To serve, stir 3 tablespoons of the mix into 1½ cups (12 ounces) of hot milk. Serve in large mugs. Store the remaining mix in a tightly-sealed jar.
- Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife. Combine the sugar, vanilla pod and seeds together and store in an airtight container for at least 1 week before using.

This is a spiced version of hot chocolate that is absolutely fantastic. It can be a little rich, though. As with any recipe, you should try it first. Adjust the spices to your preference. If the drink is a bit rich for your taste you can add a cup of water to cut it down a bit.

- In a medium heavy-bottomed saucepan, warm the milk, curry powder, and cardamom pods over medium heat, stirring every now and then so it doesn't burn.
- Meanwhile, spoon the cocoa powder into a measuring cup. Once you see little bubbles forming around the perimeter of the saucepan, the milk is hot; turn off the heat. - Whip the 1/4 cup of the cream and set asie for later use.
- Combine chocolate pieces, sherry, salt and cinnamon in the top of a double saucepan, and cook gently over hot water, stirring occasionally, until the chocolate is melted and all the mix is well blended.
- Combine the milk and half a cup of the cream in a saucepan and heat through but DO NOT allow to boil. Add to the chocolate mix, beating well, whilst adding chocolate mix.
- Pour the hot chocolate mix into cups, top with the whipped cream and dust lightly with cinnamon.
- Serve and please enjoy!

- Pour the milk into a medium saucepan and add the cornstarch. Whisk until the cornstarch is dissolved. If you want a sweeter hot chocolate (using dark chocolate means the final drink won't be super sweet), now is the time to add sugar. I find that 2 teaspoons is enough to make it pleasantly sweet, but adjust to your liking. Whisk until dissolved.
- Add the chocolate to the saucepan and stir until completely melted. If the milk cools too soon, return it to the heat. Be careful not to keep over the heat too long, as the mixture will thin.
