2 tablespoons Cajun seasoning
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon honey
1 tablespoon soy sauce
1 pinch cayenne pepper
1 pound uncooked shrimp, peeled and deveined
cooking spray

Steps:

  • Whisk olive oil, Cajun seasoning, lemon juice, parsley, honey, soy sauce, and cayenne pepper together in a large glass or ceramic bowl. Add shrimp and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a baking dish with cooking spray.
  • Transfer shrimp into the prepared baking dish and pour any remaining marinade over top.
  • Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, about 10 minutes.

Here, headless shrimp take on fragrance from cinnamon and star anise and get heat from jalapeños. The presentation is spectacular for a dinner party. Let the salt cool completely before you toss it out.

3 pounds rock salt
1/4 cup whole green cardamom pods
2 tablespoons black peppercorns
1 cinnamon stick
4 bay leaves
3 star anise
1 lemon, cut into four wedges
10 sprigs of thyme
2 jalapeño peppers, cut into thick slices
1 head of garlic, outer skin removed and smashed into several pieces
2 pounds medium or large shrimp, about 20 to 25 pieces, with shells and tails on
Cocktail sauce, tartar sauce or melted butter, for serving

Steps:

  • Heat oven to 475 degrees. In a bowl, add salt, cardamom, peppercorns, cinnamon, bay leaves, anise, two lemon wedges, the thyme, the jalapeños and the garlic and mix well.
  • In a large shallow baking dish, add half the salt mixture. Place in oven for 10 to 12 minutes.
  • Carefully remove pan from oven and set shrimp in a single layer on salt and then cover with remaining, cool salt mixture.
  • Return to oven. Bake for 8 to 10 minutes more, or until shrimp are just cooked through.
  • Serve shrimp in the salt, or remove to a platter. Garnish with remaining lemon. Serve with cocktail or tartar sauce or melted butter.

3 slices bacon
¾ cup butter
2 tablespoons Dijon mustard (such as Grey Poupon Country Mustard™)
1 ½ teaspoons chili powder
¼ teaspoon crushed red pepper flakes
¼ teaspoon dried basil
¼ teaspoon dried thyme
2 tablespoons chopped onion
2 cloves garlic, minced
½ cup dry white wine
1 tablespoon seafood seasoning (such as Old Bay®)
2 pounds uncooked medium shrimp, peeled and deveined

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes.
  • Transfer bacon to a paper-lined plate to drain, reserving bacon grease in the skillet. Dice the bacon once cooled enough to handle.
  • Melt butter in the remaining bacon grease over medium heat. Cook and stir diced bacon, Dijon mustard, chili powder, red pepper flakes, basil, thyme, onion, and garlic until onion is tender, about 5 minutes.
  • Stir wine and seafood seasoning into onion mixture; add shrimp and toss to coat.

4 pounds rock salt
1 pound jumbo shrimp (20 to 24 shrimp per pound), with heads on

Steps:

  • Divide salt evenly among 2 (9 by 13-inch) metal pans divide salt evenly. Heat your oven to 400 degrees F and put the pans of salt into the oven to heat. When the oven reaches 400 degrees F, allow the salt to continue heating for another 15 minutes. After 15 minutes have passed, put the shrimp on top of the salt in 1 of the pans. Then cover with all of the salt in the second pan. The shrimp should be evenly and completely covered. Roast for 8 minutes. Remove from oven and check 1 shrimp for doneness. The shrimp should be opaque and white and pink in color. If not done, return to oven for 1 to 2 minutes. Serve immediately.

2 garlic cloves, finely chopped
3 tablespoons extra virgin olive oil
1/2 teaspoon hot pepper flakes
1/2 teaspoon cinnamon
1/4 teaspoon ground allspice
1 (28 ounce) can diced tomatoes
1 pinch sugar
1 1/4 lbs large peeled and deveined shrimp
1/4 lb feta, crumbled
2 tablespoons chopped dill

Steps:

  • Pre-heat oven to 375 degrees F. with rack in middle.
  • Cook onion and garlic in oil with 1/4 tsp salt in a 4-quart heavy sauce pan over medium heat until softened, about 5 minute.
  • Stir in spices and cook, stirring, 30 seconds.
  • Add tomatoes and sugar, simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes.
  • Remove from heat.
  • Season shrimp with 1/8 tsp salt, then stir into sauce.
  • Transfer to a 2 quart shallow baking dish and top with feta.
  • Bake until just cooked through, 18 to 20 minutes.
  • Serve sprinkled wiht dill.

These shrimp are really zippy! They're pretty quick and easy, too. You can control the heat by reducing the chili sauce. When I make this for my little girl, I eliminate all but 1 tablespoon of the chili sauce and it's still great! She loves this dish and I'll bet you will, too! It serves 6 as an appetizer but only 2-3 as a main dish.

1 egg
1 tablespoon Dijon mustard
1 tablespoon minced garlic (or more)
1/4 cup chili sauce
1 lemon, juice of
salt and pepper
granulated garlic powder
1 cup olive oil
2 tablespoons olive oil
18 large shrimp, cleaned and deveined
1/2 cup grated parmesan cheese
paprika
1 tablespoon finely chopped parsley (or 1 tsp dried)

Steps:

  • Preheat oven to 400.
  • In the food processor with the metal blade, combine the egg, mustard, garlic, chili sauce and lemon juice. Process until smooth. Season with a little salt and pepper.
  • With machine running, add 1 cup of olive oil in a steady stream. Process until mixture is thick.
  • Heat remaining oil in skillet over medium- high heat. Season shrimp with salt, pepper and granulated garlic powder. Add shrimp to hot oil and sear for about 1 minute on each side.
  • Place 3 shrimp on each of 6 scallop shells (or place all the shrimp in a casserole dish). Spoon a heaping tablespoon of the chili/oil mixture over the shrimp in each shell (or spoon over shrimp in casserole) and sprinkle with parmesan cheese, a tiny bit of paprika and parsley.
  • Place shells on cookie sheet (casserole doesn't need one). Bake until the top is golden brown and bubbly, around 1 to 2 minutes for the shells and 3 to 4 minutes for the casserole. Sometimes this takes a little longer- just watch them and pull them out whern they brown. Don't over-cook them or your shrimp will be rubbery (YUCK!).

2 tablespoons salt
1/4 teaspoon five-spice powder (see note)
1/2 pound sea scallops
1/4 teaspoon baking soda
12 large whole shrimp
1/2 pound fresh squid (meat only, no tentacles)
3 cups water
1/2 teaspoon sesame oil
Pinch of white pepper
1/4 teaspoon salt
4 tablespoons cornstarch
4 cups peanut oil
1 tablespoon fresh hot peppers, cut into 1/8-inch rounds

Steps:

  • Mix salt and five-spice powder. Heat dry wok over high heat for 45 seconds. Add salt mixture and stir thoroughly until you smell the spices, about 1 minute. Remove from wok and reserve.
  • Wash scallops and drain. Place them in a bowl and add baking soda. Mix well to coat and refrigerate for 2 hours.
  • Wash shrimp thoroughly, remove feelers and cut shell along vein. Devein but leave shells on. Reserve.
  • Cross-cut squid meat, but do not cut it through. Then cut into 2-inch pieces. Reserve.
  • Add water to wok and bring to a boil. Blanch scallops for 1 minute, then remove. Blanch shrimp for 1 minute, then remove. Blanch squid for 2 minutes, then remove.
  • Marinate scallops, shrimp and squid, each in a separate bowl, and reserve.
  • Place cornstarch in a large plate. Toss scallops until lightly coated. Repeat with shrimp and squid.
  • Heat wok over high heat. Add peanut oil and heat to 325 degrees. Place scallops in a strainer and lower into oil for 1 minute. Remove, drain and reserve. Bring oil back to 325 degrees and repeat process with shrimp for 1 minute. Remove, drain and reserve. Bring oil back to 325 degrees again and repeat process with squid for 2 minutes. Remove, drain and reserve.
  • Drain wok. Heat over high heat. Add hot pepper slices and stir. Add all seafood. Then turn off heat, add 3/4 teaspoon of the five-spice salt and stir together quickly until it is well mixed. Remove from wok and serve immediately.

1/2 pound medium-large shrimp (about 12), feelers removed, shell slit along vein and deveined
1/2 teaspoon baking soda
3 cups water
1 tablespoon plus 1/2 teaspoon salt
2 tablespoons cornstarch
1 quart peanut oil
1 tablespoon minced fresh Thai chilies

Steps:

  • Place the shrimp and baking soda in a bowl and mix well to coat. Allow to rest for at least 20 minutes.
  • Place the water and 1 tablespoon salt in a pot, cover, and bring to a boil over high heat. Add the shrimp and water-blanch for 10 seconds. Remove the shrimp with a strainer and run cold water through them to cool. The water-blanching removes all of the liquid from the shrimp.
  • Place the shrimp in a dish, sprinkle with cornstarch to coat them lightly, and shake off excess. Heat a wok over high heat for 1 minute, add the peanut oil, and heat to 350 degrees F. Place the shrimp in a Chinese strainer, lower into the oil, and oil-blanch for 1 minute. Turn off the heat, remove with the strainer, and drain. Transfer the oil from the wok to a bowl.
  • Return 1 tablespoon of the reserved oil to the wok and heat over high heat for 20 seconds. Add the remaining 1/2 teaspoon salt and the chilies and cook, stirring, for 45 seconds. Add the shrimp and cook, stirring, making certain they are well coated, for 1 minute. They should be dry and crusted. Turn off the heat, transfer to a heated platter, and serve.

We make this at least once a month. I think it is originally from long, long ago Bon Apetit magazine, I clipped out the recipe and have it pasted in a cooking scrap-book. Prep time does NOT include peeling and deveining the shrimp as many stores now sell shrimp all cleaned up for you and ready to prepare! Prep time DOES include time for marinating. Keep in mind, many Creole and Cajun Seasonings can be salty, so you may want to adjust for that in regards to the recipe in general or the use of soy sauce!
