SPICED SALAD CREAM



Spiced salad cream image

A different take on a nostalgic condiment, Tom adds curry powder to recreate the retro flavours of Coronation sauce

Number Of Ingredients 9

1 egg
40ml white wine vinegar
squeeze of lemon juice
½ tbsp medium curry powder
½ tbsp plain flour
2 tbsp sugar
½ tbsp English mustard powder
pinch cayenne pepper
75ml double cream

Steps:

  • Add all the ingredients except the cream to a heatproof bowl with a pinch of salt, then place over a pan of simmering water. Whisk until the mixture becomes thick, then remove from the heat and leave to cool.
  • In another bowl, whisk the cream until soft peaks form. Once the mixture has cooled, fold the cream in, then pour the salad cream into a container and chill until needed.

  • Combine 1/2 cup each sliced dried apricots and dried cherries, 3 strips lemon zest, the juice of 1 lemon, a spoonful of sugar, 1 cinnamon stick and 2 tablespoons water in a microwave-safe bowl. Microwave 30 seconds. Toss with 2 segmented oranges, 2 sliced pears and a dash of vanilla; let sit at least 30 minutes. Serve with yogurt.

1 quart heavy cream
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg

Steps:

  • Beat the cream with an electric mixer on high speed in a large mixing bowl for about 2 minutes. Add the sugar, cinnamon, and nutmeg and beat again until the mixture thickens and forms stiff peaks, another 1 to 2 minutes.

2 packages (3 ounces each) orange gelatin, divided
1-3/4 cups boiling water, divided
3/4 cup cold water
1 cup sweetened applesauce
1 cup sour cream
1/4 teaspoon ground cinnamon
Lettuce leaves and sliced apples, optional

Steps:

  • In a large bowl, dissolve one package of gelatin in 1 cup boiling water. Stir in cold water. Pour into a 6-cup ring mold coated with cooking spray. Refrigerate until set but not firm, about 1 hour., Meanwhile, in a large bowl, dissolve remaining package of gelatin in remaining boiling water. Stir in the applesauce, sour cream and cinnamon. Refrigerate for 1 hour or until thickened. Gently spread over gelatin in mold. Refrigerate until firm., Line a serving plate with lettuce leaves if desired; unmold gelatin onto plate. Garnish with apples and additional lettuce if desired.
