This is a wonderful and light alternative to pumpkin pie -- very refreshing!

Ingredients

¾ teaspoon unflavored gelatin
⅓ cup unsweetened apple juice
1 cup pumpkin puree
1 tablespoon pumpkin pie spice
2 teaspoons white sugar
1 teaspoon honey
1 cup crushed pineapple

Steps:

In a small bowl, whisk together the gelatin and apple juice. Place bowl in a larger bowl with hot water and stir until gelatin is dissolved.
Blend together the pumpkin, spice, sugar, honey and gelatin mixture.
Spread 1/4 of the mixture in the bottom of custard cups. Top with 1/4 cup pineapple; repeat layers. Chill for 1 hour before serving.

Someone in my daughter's college speech class made this for their demonstration speech. My daughter loved it and got the recipe for me. I love it too.

Ingredients

1/2 cup margarine
1/3 cup sugar
1 3/4 cups graham cracker crumbs
5 ounces cream cheese
12 ounces Cool Whip
2 (15 ounce) cans pumpkin
1 (3 ounce) box instant vanilla pudding
milk
1 1/2 teaspoons cinnamon
4 ounces Cool Whip
chopped pecans (optional and to taste)

Steps:

Mix margarine, sugar, graham cracker crumbs.
Press into a 9x13-inch pan.
Beat cream cheese until smooth.
Add 12 oz Cool Whip until blended; spread over crust.
Make pudding with ½ of the milk called for on the box.
Mix well with pumpkin and cinnamon.
Spread over first layer.
Spread cool whip over pumpkin layer and sprinkle with nuts.
Refrigerate until cold.

Preheat oven to 350°F.. Line the bottom of two 8-inch round cake pans with parchment paper and spray with non-stick cooking spray.
In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, pumpkin pie spice, baking powder, baking soda and salt. In a small mixing bowl, lightly beat the eggs together. Make a well in the center of the dry ingredients and add the beaten eggs, vanilla, pumpkin and crushed pineapple. Stir until well combined.
Divide batter evenly between the prepared cake pans. Bake for 30 minutes or until a toothpick inserted in the center of each cake comes out clean.
Let cakes cool in pans for at least 15 minutes before running a sharp knife around the edges and turning out onto wire racks to cool completely.

Press the mixture into an 8x8 dish. Flatten the mixture using the bottom of a flat glass.Place in the freezer for 30 minutes.
In a large mixing bowl place, the softened cream cheese, powered sugar, vanilla extract and using a hand mixer combine until light and fluffy and no lumps. Set aside.
In the bowl with the remaining cream cheese/whipping cream mixture add the pumpkin puree, brown sugar and the remaining 1 ½ teaspoons of pumpkin pie spice. Gently fold together until combined and solid in color.
