HERB-ROASTED PECANS



Herb-Roasted Pecans image

With fresh thyme, rosemary, black pepper, and a touch of sugar, these herb-roasted pecans strike that perfect sweet-and-salty balance. They make a great addition to a spread of snacks for a pool party or backyard barbecue.

3 cups (11 ounces) pecan halves
2 tablespoons sugar
4 sprigs fresh thyme
3 sprigs fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 large egg white, whisked

Steps:

  • Preheat oven to 350°. In a bowl, combine pecans, sugar, thyme, rosemary, salt, and pepper; stir in egg white.
  • Spread mixture in a single layer on a rimmed baking sheet. Bake, stirring once, until golden, 15 to 18 minutes (if mixture sticks to pan, scrape up with a spatula). Let cool completely before serving, about 30 minutes. Store in an airtight container at room temperature up to 1 week.

SPICED PEPITAS

These hulled pumpkin seeds are tossed with lime juice for zing and chili powder for spice (we like arbol for its extra kick), and then toasted into a crunchy-and addictive- appetizer or snack. Counter the heat by washing them down with a refreshing Mexican beer.

1 tablespoon fresh lime juice
1 teaspoon chili powder, preferably arbol
1 teaspoon sugar

  • Stir together pepitas, lime juice, chili powder, sugar, and 1 teaspoon salt.
  • Heat pepitas in a large skillet over medium heat, stirring occasionally, until toasted, about 4 minutes.

Nonstick cooking spray or vegetable oil
2 tablespoons egg white (1 extra-large egg)
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon chile powder
1/4 teaspoon ground cloves
Kosher salt and freshly ground black pepper
2 cups whole pecan halves (8 ounces)
1/2 teaspoon fleur de sel

Steps:

  • Preheat the oven to 300 degrees F. Spray a sheet pan with the cooking spray or brush it lightly with oil.
  • Place the egg white in a large bowl and whisk vigorously for 15 seconds, until light and frothy. Whisk in the brown sugar, vanilla, cinnamon, ginger, chile powder, cloves, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Add the pecans and mix well, until thoroughly coated. Pour the mixture, including any liquid, onto the prepared pan and spread in a single layer. Bake for 30 minutes, tossing twice with a metal spatula. Each time you toss the pecans, spread them out again in one layer. When they're done, sprinkle with fleur de sel and allow to cool completely; they will crisp as they cool. Serve at room temperature.

  • In a large skillet, melt butter. Add cumin and cayenne; cook and stir for 1 minute. Remove from the heat; stir in the pecans, sugar and salt; toss to coat. , Spread in a single layer in a greased 15x10x1-in. baking pan. Bake at 300° for 25-30 minutes or until lightly browned, stirring occasionally. Cool. Store in an airtight container.

4 tablespoons unsalted butter
1 tablespoon white vinegar
1 tablespoon fresh thyme leaves
3/4 teaspoon cayenne pepper
Kosher salt
3 cups rice or corn cereal, such as Crispix or Chex
2 cups mini pretzels
2 cups cheddar crackers or Goldfish, or a combination
1 cup roasted unsalted peanuts
1 cup pepitas

Steps:

  • Preheat oven to 275 degrees. Combine maple syrup, butter, vinegar, thyme, cayenne, and 1 teaspoon salt in a saucepan. Bring to a boil, stirring, until butter has melted and mixture is combined. Remove from heat. Stir together remaining ingredients in a large bowl. Drizzle maple mixture over cereal mixture, stirring to evenly coat. Spread on a rimmed baking sheet.
  • Bake, stirring a few times, until crisp and golden, about 1 hour. Let cool completely before serving. Mix can be stored in an airtight container at room temperature up to 1 week.

1 tablespoon water
3 cups pecan halves
½ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.
  • In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Spread nuts on prepared pan.
  • Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn the nuts.

2 cups raw pepitas (shelled pumpkin seeds)
2 cups shelled pecan halves

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, beat the egg whites and water until frothy. In a small bowl, combine the sugar, cinnamon, allspice, cumin, salt and cayenne. Stir the sugar mixture into the egg whites, then add the pepitas and pecans. Toss until the nuts are completely coated.

1/3 cup natural cane sugar
2 tablespoons fresh rosemary
1 tablespoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground cayenne pepper
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon pure vanilla extract

Steps:

  • Preheat the oven to 400°F.
  • Spread the pecans on a rimmed baking sheet and place in the oven to lightly toast, 5 to 7 minutes.
  • While the pecans are toasting, combine the cane sugar, rosemary, salt, black pepper, and cayenne in a bowl and stir to mix. Place the butter and vanilla in a separate bowl, remove the pecans from the oven and add them to the butter and vanilla mixture, tossing to coat. Add the spice mixture and toss again to coat evenly.
  • Return the pecans to the baking sheet, spread them evenly, and bake for 8 to 10 minutes more, until toasted and fragrant, stirring halfway through. Sprinkle with additional salt, if desired. Let cool completely-they will get crispy after they cool-before storing in an airtight container until ready to serve, or for up to 1 week.

  • Mix things up by flavoring the nuts with different combinations of herbs and spices. For a spiced orange rendition, omit the rosemary and add ground cardamom and orange zest. Or, to showcase Indian flavors, replace the rosemary with crushed red pepper flakes, ground cumin, and ground coriander. For more savory pecans, use Worcestershire sauce in place of the vanilla.
