1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon dried ground orange peel
1 pound pecan halves
4 tablespoons unsalted butter
1/4 cup packed light brown sugar
2 tablespoons packed dark brown sugar
2 tablespoons water

Steps:

  • Line a half sheet pan with parchment paper and set aside.
  • Mix the salt, cumin, cayenne, cinnamon and orange peel together in a small bowl and set aside.
  • Place the nuts in a 10-inch cast iron skillet and set over medium heat. Cook, stirring frequently, for 4 to 5 minutes until they just start to brown and smell toasted. Add the butter and stir until it melts. Add the spice mixture and stir to combine. Once combined, add both sugars and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.
  • Transfer the nuts to the prepared sheetpan and separate them with a fork or spatula. Allow the nuts to cool completely before transferring to an airtight container for storage. Can be stored up to 3 weeks.

These candied pecans are perfect to serve with cocktails or toss over salads, and the best part is that they take just 15 minutes to make!

½ cup Confectioners' sugar
¾ teaspoon kosher salt
½ teaspoon cayenne pepper
4 teaspoons water
2 cups pecans

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the Confectioners' sugar, kosher salt, cayenne pepper, and water.
  • Add the pecans to the sugar mixture and stir until the nuts are evenly coated.
  • Transfer the pecans to the prepared baking sheet and arrange in a single layer. Do your best to make sure the nuts are evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from the bowl and drizzle over the nuts. Bake for 10 to 12 minutes, until the pecans are caramelized and the caramel on the baking sheet is a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
  • Immediately slide the parchment off of the hot baking sheet and allow the pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove the pecans from the parchment, breaking apart any clusters if necessary, and store in an airtight container for up to two weeks.
  • Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.

1 egg white, lightly beaten
1 tablespoon water
3 cups pecan halves
½ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.
  • In a small bowl, mix together sugar, salt, cinnamon, cloves and nutmeg. Sprinkle over the moistened nuts. Spread nuts on prepared pan.
  • Bake in preheated oven for 30 minutes, stirring once or twice. Be careful not to overcook and burn the nuts.

½ teaspoon ground cinnamon
¼ teaspoon ground cumin
¼ teaspoon ground cayenne red pepper
¼ teaspoon ground cardamom
16 ounces pecan halves ( (about 4 cups))
4 tablespoons unsalted butter
⅓ cup packed light brown sugar
2 tablespoons water

Steps:

  • Line a half sheet pan with parchment paper; set aside.
  • Mix the salt, cumin, cayenne, cinnamon and cardamom in a small bowl; set aside.
  • Place the nuts in a medium skillet over medium heat. Cook, stirring nearly constantly, for 4 to 5 minutes until they start to brown and smell like they are toasting.
  • Add the butter and stir until melted. Add the spices and stir until combined. Add sugar and water, stirring until the mixture thickens and coats the nuts, approximately 2 to 3 minutes.

1/3 cup sugar
2 tablespoons orange juice

Steps:

  • Place pecans on an ungreased 15x10x1-in. baking pan. Bake at 275° for 10 minutes. , After 6 minutes, in a small heavy saucepan, combine the sugar, orange juice, cinnamon, cloves and salt. Cook and stir until mixture comes to a boil. Cook and stir 2 minutes longer. Remove from the heat. , Stir in warm pecans until evenly coated. This is a wonderful and very easy recipe for the holidays! I found it in Taste of Home Magazine. If you decide to prepare a double batch, please make sure you spread in only a single layer on the baking sheet. It is important that these pecans dry as they bake to become crispy. I hope you enjoy this recipe. I think it is a real treat!

5 cups pecan halves

Steps:

1 Tbsp grated orange rind
1 Tbsp fresh orange juice
1 large egg white
2 cups pecan halves
1 Tbsp dark brown sugar
1 tsp. salt
1/2 tsp. ground chipotle chili pepper
Cooking spray
1/2 cup sweetened dried cranberries

Steps:

  • Preheat oven to 225 degrees F.
  • Whisk together orange zest, orange juice and large egg white in a medium bowl. Stir in pecans, coating well. In a separate bowl, combine sugar, salt and chili pepper; add to pecan mixture and toss well.
  • Spread mixture in a single layer on a jelly-roll pan coated with cooking spray. Bake at 225 for one hour, stirring occasionally.
  • Remove from oven and cool completely. Stir in cranberries and enjoy! Can be stored in an airtight container for up to one week.

  • In a deep saucepan, combine the sugar, water, orange zest, and cinnamon and bring to a boil. Add the pecans and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque, and crystallize as the water cooks away.
  • When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.)
