1/2 cup water
1/4 cup dried cranberries
1 unpeeled medium orange, seeded and finely chopped (about 1-1/4 cups)
1/2 cup sugar
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
Dash ground ginger
Dash ground cloves
8 ounces Brie or cream cheese
1/4 cup chopped pecans, toasted
Assorted crackers

Steps:

  • Preheat oven to 400°. In a small saucepan, bring water to a boil. Stir in cranberries; remove from heat and let stand 5 minutes., Drain cranberries, reserving 1 tablespoon soaking liquid. Return cranberries and reserved liquid to pan. Stir in orange, sugar, lemon juice and spices; bring to a boil. Reduce heat; simmer, uncovered, 5-10 minutes or until orange is tender and liquid is almost evaporated, stirring occasionally., Place cheese in a 9-in. pie plate. Bake 8-10 minutes or just until softened. , Spoon chutney over warm cheese; sprinkle with pecans. Serve warm with crackers.

3 Bosc pears, peeled, cored, and cut into 3/4-inch pieces (3 cups)
3 strips (each 3 inches) orange peel, plus 1/3 cup fresh juice (from 1 large orange)
2/3 cup sugar
1 cinnamon stick
Kosher salt

Steps:

  • Combine cranberries, pears, orange peel and juice, sugar, cinnamon stick, and 1/2 teaspoon salt in a large saucepan. Bring to a boil, stirring until sugar is dissolved.
  • Reduce heat to medium-low and simmer, stirring occasionally, until cranberries begin to burst and pears are tender, 8 to 10 minutes. Let cool completely; discard cinnamon stick and serve.

1 1/4 cup granulated sugar
1/2 cup fresh orange juice
2 Granny Smith apples (peeled, cored, and diced (about the size of cranberries))
1 red pear (peeled, cored, and diced (about the size of cranberries))
1 shallot or 1/2 small yellow onion (diced)
3/4 cup golden raisins
2 cinnamon sticks
5 whole cloves

Steps:

  • Combine all ingredients in a 4 qt slow cooker.
  • Turn on high and cook for 3 - 4 hours until the cranberries have burst and the apples are tender.
  • Remove the lid from the slow cooker and continue simmering until the chutney has reached desired consistency.
  • Serve hot, cold, or at room temperature.
  • Store in the refrigerator for up to 2 weeks.

Number Of Ingredients 10

1½ kg raw beetroot, trimmed, peeled and diced (wear gloves!)
3 onions, chopped
3 eating apples, peeled and grated
zest and juice 3 oranges
2 tbsp white or yellow mustard seeds
1 tbsp coriander seed
1 tbsp ground cloves
1 tbsp ground cinnamon
700ml red wine vinegar
700g golden granulated sugar

Steps:

  • In a preserving pan or your largest saucepan, mix together all the ingredients well. Bring to a gentle simmer, then cook for 1 hr, stirring occasionally, until the chutney is thick and the beetroot tender.
  • While the chutney is cooking, prepare your jars by running through a short hot wash in your dishwasher. Or wash thoroughly by hand, then put in a hot oven to sterilise for 10-15 mins. Once the chutney is ready, let it settle for 10 mins, then carefully spoon into the jars and seal while still hot. You can eat it straight away but it will be even better after a month. Will keep for up to 6 months in a cool dark place. Once opened, refrigerate and eat within 2 months.

2-1/4 cups packed brown sugar
1-1/2 cups cranberry juice
1/2 cup cider vinegar
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
3 packages (12 ounces each) fresh cranberries
2 tablespoons grated orange zest
2 medium oranges, peeled and sectioned
1 medium tart apple, peeled and coarsely chopped
1/2 cup dried currants
1/2 cup coarsely chopped dried apricots

Steps:

  • In a 6-qt. stockpot, combine the first 5 ingredients. Cook, uncovered, over medium heat until brown sugar is dissolved. Stir in cranberries, orange zest, oranges, apple, currants and apricots. Bring to a boil. Reduce heat; simmer, uncovered, 50-60 minutes or until thickened, stirring occasionally. Serve chilled.

SPICED APRICOT AND ORANGE CHUTNEY

This is a superlative chutney: it makes an elegant accompaniment to the Terrine with Three Cheeses, is excellent with Pheasant Terrine and is the main ingredient for a wonderful sauce for Roast Loin of Pork. To sterilise the jar, wash it thoroughly in warm soapy water, rinse and heat in a moderate oven for 5 minutes.

Yield Makes a 1¾ pint (1 litre) jar

Number Of Ingredients 11

14 oz (400 g) dried ready-to-eat apricots
1 level tablespoon salt
½ level teaspoon cayenne pepper
grated zest and juice 1 small orange
1 level teaspoon whole coriander seeds
8 oz (225 g) soft light brown sugar
15 fl oz (425 ml) cider vinegar
1 medium onion, chopped
2 oz (50 g) sultanas
2 level tablespoons finely grated fresh root ginger
2 cloves garlic, finely chopped

Steps:

  • Begin by chopping the apricots into smallish chunks, then place them in a sieve and rinse them under cold water. Shake off the excess water and put them in a large saucepan. Now place the coriander seeds in your smallest saucepan and heat the pan whilst tossing the seeds around it - as soon as they begin to splutter transfer them to a pestle and mortar and crush them lightly before sprinkling them over the apricots. Add all the remaining ingredients to the apricots, then heat gently, stirring all the time until the sugar crystals have dissolved. Next bring everything up to simmering point and simmer the chutney (covered) for 45 minutes-1 hour. The apricots and onion need to be quite tender, but it's important not to overcook the chutney or it will be too thick - the right consistency is like chunky rather than liquid jam. Remember, too, that it does thicken as it cools down. When it's ready, spoon into the warmed, sterilised jar and seal straightaway, then label when cold. This is best kept for 1 month before eating.

2 cups fresh cranberries
2 cups white sugar
3 tablespoons water, or more as needed
1 large Granny Smith apple - peeled, cored and chopped
2 stalks celery, finely chopped
1 tablespoon grated orange zest
1 cup fresh orange juice
¼ cup pecans
1 cup golden raisins
½ teaspoon ground ginger
¼ teaspoon ground cloves
1 pinch salt, or to taste

Steps:

  • Place the cranberries, sugar, and water in a large saucepan, and bring to a boil. Reduce heat to medium, and cook until all the cranberries have popped, 8 to 10 minutes. Stir in the apple, celery, orange zest, orange juice, pecans, raisins, ginger, cloves, and salt, and cook over medium heat, stirring frequently, until the celery is tender and the sauce is reduced, about 35 minutes. Turn off the heat, cover the saucepan, and let the chutney stand to thicken, about 15 minutes. Serve warm.

2 tablespoons panch phoron (Bengali five-spice blend)
1 pound cranberries, thawed if frozen
1 cup packed light brown sugar
1/2 cup distilled white vinegar
2 tablespoons grated peeled fresh ginger
1/2 teaspoon chili powder
Kosher salt

Steps:

  • Heat the oil in a medium saucepan over medium-high heat. Add the spice blend; when the seeds start to crackle and toast, add the cranberries. Stir in the brown sugar, vinegar, ginger and chili powder. Bring to a boil, then reduce to a simmer and cook until the cranberries have softened and the liquid is reduced by half, about 15 minutes.
  • Season the chutney with salt. Transfer to a bowl and refrigerate until cold, about 1 hour. Serve chilled.

MANDARIN ORANGE CRANBERRY CHUTNEY



Mandarin Orange Cranberry Chutney image

3/4 cup dried cranberries, soaked in warm water 30 minutes, and then drained
3-4 medium mandarin oranges, peeled, pulled into segments, and sliced
2 Tbsp. fresh lime juice, or to taste
2 Tbsp. brown sugar
1 Tbsp. chopped fresh mint or cilantro
1 green onion, halved lengthwise, and thinly sliced
1 tsp. finely grated fresh ginger
Salt to taste
Pinch crushed chili flakes

Steps:

  • Combine all the ingredients in a bowl. Let flavours meld 20 minutes before serving. Recipe Options: Instead of dried cranberries, use raisins in the chutney. When mandarin oranges are not available, make the chutney with 2 medium, navel oranges, peel and pith removed, flesh cut into small cubes.
