MICROWAVE NUT BRITTLE

Microwave Nut Brittle image

This is a really simple way of making nut brittle, without using a candy thermometer or doing any of the stage tests. A trick that I use is to line the cookie sheet with parchment paper so there's no sticky stuff to pry off and then wash up.

Time 12m

Yield 16 serving(s)

Number Of Ingredients 8

MICROWAVE SPICED NUTS

Microwave Spiced Nuts image

This is a great candied nut recipe I stole from my mom. She likes walnuts, I like pecans. It's dead easy and my wife says she needs to leave the house when I make them, so she won't eat them all! Try experimenting with the spices, maybe clove or allspice!

SPICY PEANUT BRITTLE

Spicy Peanut Brittle image

If you like a little hot with your sweet than this is the candy for you. Peanut brittle with a little spice added and all made in microwave so super simple.

Provided by Karrie Massotti

Categories     Candy

Time 15m

Yield 1 lb

Number Of Ingredients 8

1 1/4 cups dry roasted salted peanuts (Note, I have used unsalted and still tastes good but lower in sodium)
1 1/2 teaspoons hot pepper sauce
1/4 teaspoon allspice
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter
1 1/2 teaspoons baking soda
1 teaspoon vanilla

Steps:

  • Coat a cookie sheet with cooking spray.
  • Also spray a metal spatula (and yes it matters, goo will stick to all others and make it impossible to work with)
  • set aside cookie sheet and spatula.
  • In a large bowl, mix the peanuts, hot pepper sauce and allspice
  • Put sugar and corn syrup into a large glass microwavable bowl.
  • Stir mixture - will be very thick but will change when heated.
  • Microwave, uncovered on high for 4 minutes.
  • stir again.
  • add in spicy peanut mixture.
  • stir until blended.
  • Return to microwave and cook on high 4-5 minutes longer.
  • Stir in butter.
  • Microwave 45 seconds.
  • Very quickly add in baking soda and vanilla and stir. It will foam and the color witl lighten.
  • Immediately pour into prepared pan and spread as thin as possible with prepared spatula.
  • Cool, break into pieces (put in bag and use hammer to smash is easiest).

1200 WATT MICROWAVE PEANUT BRITTLE

1200 Watt Microwave Peanut Brittle image

Bravo to Love2Eat's Peanut Brittle in a Jiffy #58383 - it got me started, but with the adjustments for my higher powered microwave and some flavor changes I thought I should write my own recipe. I can not say how much Love2Eat's note about having everything measured out and ready to go was a life saver. I use an 8 cup pyrex measuring bowl with a handle as this mixture bubbles up and gets very hot (bowl gets very hot too) - it is MOLTEN SUGAR- if your work area is not right next to your sink - have a bowl of ice water in case of burns. THIS RECIPE IS FOR A 1200 WATT MICROWAVE. Oh yeah, I sorta faked it on how many this will serve - it is habit forming.

Time 16m

Yield 1 1/4 pounds, 18 serving(s)

Number Of Ingredients 7

1 cup white sugar
1 tablespoon molasses (unsulphured)
1/2 cup less 1 tablespoon corn syrup
2 cups salted peanuts
1 teaspoon vanilla
1 tablespoon butter
1 teaspoon baking soda

Steps:

  • Line a baking/cookie sheet with foil or parchment paper and spray with cooking spray or grease with butter.
  • Put 1 tablespoon molasses in a ½ cup measuring cup and then fill with corn syrup (spray cup with cooking spray first, so corn syrup will come out easier).
  • Put corn syrup mixture and white sugar in an eight cup bowl and mix well then microwave on high for 2 minutes, remove and stir and then microwave for 1 more minute.
  • Remove from microwave and add peanuts, stir into bubbling sugar mixture and microwave for 2 minutes.
  • Remove from microwave and then stir in butter and vanilla and microwave for 1 minute.
  • Remove from microwave and quickly stir in baking soda - it will get somewhat white and foamy - spread out onto baking sheet - you can let it cool at room temperature or cool in the fridge. Put mixing bowl cup in sink under hot running water to aid in cleanup.
  • * I add the molasses because it gives the brittle a beautiful color - it is not required to make the recipe - if you don't want to use it, just use a full ½ cup of corn syrup. Watch out with sampling - this stuff is habit forming - if you want to bump it up a notch - add 1 teaspoon cinnamon to sugars at begining (my daughter and I like) or if you really want to kick up it up - add the cinnamon and 1/3 teaspoon caynne pepper - hot stuff. I love the sweet and spicy.

MICROWAVE NUT BRITTLE

Time 40m

Yield About 2 pounds

Number Of Ingredients 7

2 cups raw nuts or seeds
2 cups sugar
1 cup corn syrup
1/2 teaspoon salt
2 tablespoons butter
1 teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Chop the nuts or seeds if they are large; otherwise, leave them whole. Put them into a 4-quart glass bowl with all other ingredients except the baking soda and vanilla extract. Stir in 3/4 cup water. Heat in a microwave oven on high power for 5 minutes. Using oven mitts or potholders, carefully transfer the bowl to a countertop and stir with a heat-resistant spatula. Repeat 2 or 3 more times, until the syrup thickens and the nuts begin to stick together. Then heat for 1-minute periods, stirring in between, until the syrup begins to turn light golden brown.
  • Line a baking sheet with foil. Add the baking soda and vanilla extract to the syrup and stir vigorously. Quickly pour the mixture out onto the baking sheet and use the spatula to spread it as thin as possible. Allow to cool to room temperature, then peel off the foil and break the brittle into pieces. Store in an airtight container.
