This twist on the classic Palm Springs date shake brings in flavours of cinnamon, nutmeg & malt. This sweetly spiced date milkshake made without ice cream is thick & creamy yet surprisingly healthy.

Number Of Ingredients 7

300 ml Milk (full-fat)
80 g whole pitted dates (soft ones, such as Medjool blend well)
2 teaspoons Vanilla extract
1 1/2 teaspoons Malted milk powder ((see notes))
1/4 teaspoon Ground cinnamon
1/8 teaspoon Ground nutmeg
1 tablespoons Cocoa powder (only for the chocolate version)

Steps:

  • Optional: soak the dates in hot water for 10 minutes to soften them. Drain well.
  • Place all ingredients into a blender (with a few ice cubes if desired).
  • Secure the lid and whizz together until the dates are finely blended.
  • Serve immediately.

1 cup pitted dates, coarsely chopped
1 quart skim milk
2 pints French vanilla ice cream
1 teaspoon grated fresh nutmeg

Steps:

  • For each date shake, place 1/4 cup coarsely chopped pitted dates, a handful, in a blender. Add 1 cup cold skim milk and 2 big scoops of French vanilla ice cream. Grate 1/4 teaspoon of fresh nutmeg into blender and blend date shake until smooth.

Malted Vanilla Milkshake image

Classic, diner-style malted milkshakes are a retro treat easy to whip up at home. Malted milk powder can be easily found in the dried milk or ice cream section of most grocery stores and gives the milkshake a creamy richness and caramel-like flavor. If you've never used malted milk powder before this is the perfect recipe to try it out. A dollop of fresh whipped cream caps off the treat while a cherry on top finishes the iconic look.

Yield 1 large 16-ounce milkshake or 2 smaller 8-ounce milkshakes

1/3 cup very cold heavy cream
1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup malted milk powder
1 1/2 cups vanilla ice cream
Maraschino cherry, for garnish, optional

Steps:

  • Chill one 16-ounce serving glass (or two 8-ounce serving glasses) in the freezer.
  • For the whipped cream: Combine the heavy cream and sugar in a large, deep bowl. Whisk vigorously by hand until soft peaks form, 30 to 60 seconds. Set aside.
  • For the milkshake: Blend the milk and malted milk powder in a blender on high speed until the malted milk powder dissolves, 15 to 20 seconds. Add the vanilla ice cream and blend on high until creamy and thick, pushing the mixture down as needed, 20 to 25 seconds.
  • Pour the milkshake into the chilled glass and top with the whipped cream. Garnish with a maraschino cherry if using and serve immediately.

Shake up your typical milk shake with a touch of malted milk -- it'll add an irresistible flavor that will make you feel transported to an old soda shop.

1 cup milk
6 tablespoons malted-milk powder, plus more for garnish
1 pint vanilla ice cream
1 pint chocolate or strawberry ice cream
Malted-milk balls, for garnish (optional)

Steps:

  • Place 1/2 cup milk and 3 tablespoons malt powder in the jar of a blender, and process until malt is dissolved. Add half the vanilla ice cream, and blend until smooth. With the motor running, add remaining vanilla ice cream, 1 scoop at a time, until it is fully incorporated. Pour half the shake into a glass measuring cup, and place in freezer. Divide remaining half between two glasses, and place glasses in freezer. Allow to chill for 10 minutes before proceeding to step two.
  • Place remaining 1/2 cup milk and remaining 3 tablespoons malt powder in clean jar of blender, and process until malt is dissolved. Add half the chocolate, or strawberry, ice cream, and blend until smooth. With motor running, add remaining ice cream, one scoop at a time, until fully incorporated. Divide half the shake between two empty glasses, and top off the two partially filled glasses from freezer with the remainder. Allow the half-filled glasses to freeze for 10 minutes. Stir reserved vanilla shake before topping off remaining glasses. Garnish with malted-milk powder and malted-milk balls if desired, and serve immediately.

SPIKED FRENCH VANILLA MALTED MILKSHAKE

1/2 cup whole milk
Fresh raspberries, for garnish
1/2 cup malted milk powder, plus more for garnish
4 cups French vanilla ice cream
4 ounces raspberry liqueur, such as Chambord
Raspberry Liqueur Coulis, recipe follows
1 pint fresh raspberries
1/2 cup sugar
Zest of 1 lemon (2 teaspoons)
4 tablespoons raspberry liqueur, such as Chambord

Steps:

  • Puree the milk and malt powder in a blender. Add the ice cream and liqueur. Blend until smooth and desired consistency is reached. Swirl around some Raspberry Liqueur Coulis on the inside of each glass. Pour the shake into each glass. Garnish with a dusting of malt powder and a couple raspberries. Do not operate heavy machinery while enjoying this malt.
  • Add 1/4 cup water, the raspberries, sugar and lemon zest in a small saucepan. Bring to a boil and cook down, about 10 minutes. Remove the saucepan from the heat and cool. Puree the mixture in a blender and strain into a small bowl, discarding any solids. Add the liqueur and mix to incorporate.

  • Cut the dates into medium size pieces. Medjool dates are really good for shakes because they’re so sweet. Deglet Noor dates also work well.
  • Next, put the top on the blender, and blend on the “milkshake” setting if you have one. If not, try the “chop” or “smoothie” setting so that the mixture is thick but not liquefied.
  • Pour the milkshake into serving glasses leaving about an inch of space from the top of the glass.
