1 teaspoon canola oil
⅔ cup finely chopped onion
1 small clove garlic, minced
⅔ cup dried lentils, rinsed
1 tablespoon taco seasoning, or to taste
1 ⅔ cups chicken broth
⅔ cup salsa
12 taco shells

Steps:

  • Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Mix lentils and taco seasoning into onion mixture; cook and stir for 1 minute.
  • Pour chicken broth into skillet and bring to a boil. Reduce heat to low, cover the skillet, and simmer until lentils are tender, 25 to 30 minutes.
  • Uncover the skillet and cook until mixture is slightly thickened, 6 to 8 minutes. Mash lentils slightly; stir in salsa.
  • Serve about 1/4 cup lentil mixture in each taco shell.

1 cup finely chopped onion

1 package (2.25 ounce) taco seasoning
2 1/2 cups vegetable broth
1/2 cup fat-free sour cream
1 chipotle chile in adobo sauce, finely chopped (use half for less heat)
2 teaspoons adobo sauce
8 taco shells
1 1/4 cups shredded lettuce
1 cup chopped tomato
1/2 cup shredded reduced-fat (2 percent) cheddar

Steps:

  • Heat oil in large skillet over medium-high heat. Cook onion, garlic and salt until onion begins to soften, 3 to 4 minutes. Add lentils and taco seasoning. Cook until spices are fragrant and lentils are dry, about 1 minute. Add broth; bring to a boil. Reduce heat, cover and simmer until lentils are tender, 25 to 30 minutes. 1 teaspoon dried oregano
2-1/2 cups vegetable or reduced-sodium chicken broth
1 cup salsa
12 taco shells
1-1/2 cups shredded lettuce
1 cup chopped fresh tomatoes
1-1/2 cups shredded reduced-fat cheddar cheese
6 tablespoons fat-free sour cream

Steps:

  • In a large nonstick skillet, heat oil over medium heat; saute onion and garlic until tender. Add lentils and seasonings; cook and stir 1 minute. Stir in broth; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes. , Cook, uncovered, until mixture is thickened, 6-8 minutes, stirring occasionally. Mash lentils slightly; stir in salsa and heat through. Serve in taco shells. Top with remaining ingredients.

This is a great recipe for those who want a vegetarian meal without fake "meat". This delicious and simple recipe is from Chef Jennifer Iserloh of New York City (aka "Skinny Chef") and was printed in this month's Self Magazine (February 2009). Following the recipe results in an al dente lentil with a little chew to mimic the texture of ground beef. If you want a softer lentil, you can cook them about 15 minutes longer (in step 1) with added broth until soft.

A healthy, spicy, and smoky lentil taco filling that is super easy to make. Perfect for tacos, bowls, nachos, or salads! Vegan and gluten-free.

1 1/2 cups dry green or brown lentils
oil for cooking (olive, avocado, etc.)
1 onion, chopped
4 garlic cloves, minced
1 tablespoon ground cumin
1 tablespoon ground chili powder
1 teaspoon salt
1-2 small chipotle peppers in adobo, finely chopped + 1 tablespoon adobo sauce (see notes)
2 tablespoons pure maple syrup (see notes)
juice of 1 lime
1/3 cup water
taco ingredients of choice like tortillas, avocado, sliced cabbage, cilantro, salsa, cotija, etc.

Steps:

  • Cook the lentils. Add lentils and 5 cups of water to a large pot. Bring to a boil and then reduce heat to a very low simmer. Cook for 20-30 minutes or until just tender but not mushy. Once done, drain and set aside.
  • While the lentils are cooking, prepare the remaining ingredients.
  • Heat a large skillet over medium heat. Add a bit of oil to coat the pan and then add the onion and garlic. Sauté until the onions are softened, about 5 minutes.
  • Add the cumin, chili powder, salt, maple syrup, chipotle peppers and adobo sauce (start with less and work your way up!), lime juice, and water. Stir so that everything is well mixed.
  • Add the cooked and drained lentils and give everything a good stir again, cooking until all the liquid has evaporated. Taste and season with more salt, if needed.
  • Serve with desired taco ingredients!

  • In a large frying pan over medium high heat, sweat the onion in 1 tbsp. oil. Stir frequently, about 4-5 minutes until the onion is translucent. Add the garlic and spice mixture and cook for another minute or two, stirring frequently. You don’t want to burn the spices just crank up the flavor by cooking them.
  • While you are cooking this, warm the tortillas. You can do this in the oven or microwave. I just place them on the burner behind my frying pan and let them warm up while I cook the filling, this way I don’t have to turn on the oven.
  • Add the lentils and stir to combine. Add the vegetable broth and using a potato masher or fork, gently mash the lentils until they start to look like ground meat. Cook another few minutes until hot. If the lentils start to dry out, add another tbsp. or two of vegetable broth (can also use salsa here)
  • Place a heaping spoonful or two into the taco shell and add your fillings. The filling will make about 10-12 tacos, depending on how stuffed you like them!
