I enjoy oatmeal for brekkie on cooler days. I also love to add spice to pretty much everything. This hits the spot. Makes 6 *diabetic legal* servings of 1/2 a cup each.

3 cups water
1 cup steel cut oats
1 tablespoon packed brown sugar or 1 tablespoon brown sugar substitute, equivalent to 1 tablespoon packed brown sugar*
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground allspice
1 dash ground cloves or 1 dash ground nutmeg
3 cups nonfat milk (optional)

Steps:

  • In a 2-quart saucepan, combine the water, steel-cut oats, brown sugar, cinnamon, salt, allspice, and cloves or nutmeg.
  • Bring to boiling; reduce heat.
  • Simmer, uncovered, for 10 to 15 minutes or until desired doneness and consistency, stirring occasionally.
  • Serve with milk on the side.
  • Makes 3 cups (six 1/2-cup servings).

Spiced Irish Oatmeal With Cream and Crunchy Sugar image

A shower of heavy cream and plenty of caramelized Demerara sugar may make these Irish oats seem more like dessert than something you'd serve first thing in the morning, but that's all the more reason to bake them up for a special occasion breakfast or brunch. Cardamom and cinnamon give them an especially earthy, perfumed aroma, and toasting the oats in butter before baking them lends nuttiness and depth. They're also extremely easy, and you can assemble the dish the night before, then bake them in the morning. Just add about 10 minutes to the baking time if you're starting them cold from the fridge.

6 tablespoons unsalted butter, plus more for greasing the pan
2 cups steel-cut oats
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
6 1/2 cups boiling water
1/2 cup heavy cream, plus more for serving
1/2 teaspoon kosher salt
1/2 cup Demerara sugar, plus more for serving
Flaky sea salt, for serving

Steps:

  • Heat oven to 350 degrees. Butter a 2-quart shallow gratin or baking dish.
  • Cut 2 tablespoons butter into small cubes, and put them in the refrigerator until needed.
  • In a large skillet, melt remaining 4 tablespoons butter. Add the oats and sauté until they smell nutty and toasted, 2 to 4 minutes. Stir in the cardamom and cinnamon, and sauté for another minute, until fragrant. Scrape oats into the buttered baking pan and stir in the boiling water, cream and salt.
  • Bake oats for 40 minutes, then give them a stir. Sprinkle sugar all over the oats, and scatter reserved cubed butter on top. Continue to bake for 15 to 20 minutes longer, until the top is glazed and bubbling.
  • Sprinkle oatmeal with flaky sea salt, if you like. Serve oats with more cream and sugar on the side.

CREAMY SCOTTISH OATMEAL (WITH CROCK-POT INSTRUCTIONS)

Oh, man. Properly made steel-cut (aka Scottish or Irish) oatmeal will change your opinion about oatmeal. Scottish oatmeal, without the benefit of added fat, comes out creamy and delicious; the trick is the long cooking time. I had mine with milk added and, honestly, it was totally unnecessary. You can also make this in a crockpot; just fix it up before you go to bed and you will wake up to breakfast!

1 cup steel cut oats
1 cup skim milk
3 cups water
1 teaspoon cinnamon (also good with pumpkin pie spice)
1/3 cup dark brown sugar
2 tablespoons light maple syrup
1/2 teaspoon vanilla extract
1/2 cup golden raisin (optional)
1/2 cup pecans, chopped (optional)
1/4 teaspoon salt

Steps:

  • If you are making this in a crockpot, the first and only step is to throw everything together in a 2-quart crockpot [increase the water to 3-1/2 cups to allow for evaporation]. Okay, now nighty-nite! We'll see you in the morning!
  • Otherwise, bring 1 cup milk and 3 cups water to a boil in a 2-quart saucepan.
  • Stir in oats, spices, and raisins.
  • Reduce heat to low, cover, and cook for 30 minutes, stirring occasionally.
  • When cooking is complete, stir in brown sugar, maple syrup, vanilla, pecans, and salt (don't add the salt with the boil; the oats won't cook right).
  • If you are using a crockpot, you may notice that a crust has formed on the bottom of the crock after cooking. This is perfectly normal. You can eat it if you want to, or you can just leave it. Just make sure to transfer the recipe into a resealable bowl and soak your crockpot right away. This stuff will stick like glue if it dries.
  • Serve! You can add more fresh or dried fruit, butter, more milk, whathaveyou, but it's awesome all on its own.

Steps:

  • Pour the cinnamon and oats into boiling water until and stir until it begins to thicken.
  • Lower the heat until it begins to simmer and cook for 30 minutes, stirring occasionally.
  • It's important not to overcook the oats so that you get a nice nutty flavour.
  • Add the remaining ingredients and enjoy!
