Spicy Honey-Mustard Glazed Pork Ribs image

These sumptuous, habit-forming ribs can be mild, to very spicy depending on your taste. My husband and I like things HOT, and the honey, mustard, onion and spices blended together will have you beggin' for more! The ribs have a beautiful presentation and will be well-enjoyed at intimate dinners, as well as backyard barbeques.

2 tablespoons vegetable oil
1 small onion, minced
1 ½ cups honey
1 cup Dijon mustard
½ cup cider vinegar
¼ cup crushed red pepper flakes
1 teaspoon Cajun seasoning
½ teaspoon salt
ground black pepper to taste
2 (2 pound) slabs baby back pork ribs

Steps:

  • Preheat grill for medium heat and lightly oil grate.
  • Heat oil in a saucepan over medium heat. Saute minced onion for about 5 minutes, or until caramelized. Stir in honey, mustard, and vinegar. Season with crushed red pepper, Cajun seasoning, salt, and black pepper. Reduce heat, and simmer 5 minutes, stirring occasionally. Remove from heat, and set aside.
  • Generously sprinkle ribs with salt and pepper on both sides. Place ribs on grill rack, cover, and open vents halfway. Cook for 35 minutes. Turn ribs once, making sure they are not being over-cooked. Brush tops of ribs with sauce, and cook covered for 5 to 10 minutes Turn ribs over, cover, and cook for another 5 to 10 minutes. Remove ribs from grill. Heat remaining sauce, and serve as a dipping or mopping sauce.

4 pork spare rib racks, untrimmed (about 3 pounds each)
4 garlic cloves
1 cup light brown sugar, packed
1 1/3 cups honey
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 1/2 tablespoons salt
2 teaspoons ground ginger
2 teaspoons Tabasco sauce

Steps:

  • Make marinade:.
  • With flat side of a large knife smash garlic.
  • In a small saucepan heat brown sugar, honey, and vinegar over moderate heat, stirring, until sugar is dissolved.
  • Remove pan from heat and stir in garlic and remaining marinade ingredients until combined well.
  • Cool marinade to room temperature.
  • Fold up spareribs and fit into two 1-gallon heavy-duty sealable plastic bags.
  • Divide marinade between bags and seal bags, pressing out excess air.
  • Marinate ribs in bags in a large roasting pan, chilled, turning them once, for 1 day.
  • Preheat oven to 350°F.
  • Open bags and, holding ribs in bags, pour marinade into a saucepan.
  • Discard garlic.
  • Simmer marinade until reduced to about 1 cup.
  • Pour 1 cup marinade into a bowl and reserve as sauce for serving with ribs (remainder will be used for basting ribs).
  • Arrange ribs, overlapping slightly, in 2 large roasting pans and roast in upper and lower thirds of oven 30 minutes.
  • With tongs turn ribs over so they will brown evenly.
  • Roast ribs 30 minutes more and with tongs turn them over.
  • Switch position of pans in oven and baste ribs with some of remaining marinade in saucepan.
  • Roast ribs 30 minutes and with tongs turn them over.
  • Brush ribs with remaining marinade in saucepan and roast 30 minutes more, or until meat is very tender.
  • Ribs may be made 30 minutes ahead and kept, tightly covered with foil, at room temperature.
  • Transfer ribs to a cutting board and cut apart between bones.
  • Serve ribs with reserved sauce.

You don't have to be a grill master to make perfect bourbon honey ribs because there is an easy, no-fuss technique that works every single time. And our homemade BBQ sauce will knock your oven-mitts off. It's sweet, spicy and you're going to want to slather it on everything!

4 lbs pork baby back or spare ribs (about 2 racks.)
8 oz apple juice
For the Dry Rub (or use a good store-bought rub:)
2 tablespoons white sugar
2 tablespoons brown sugar
About 1/2 tablespoon ground mustard powder
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
A tablespoon paprika
A tablespoon smoked paprika
1 1/2 tablespoons coarse kosher salt
1/2 tablespoon cracked black pepper
1/2 tablespoon cumin
For the Bourbon-Honey Glaze BBQ Sauce
1/2 cup plus 3 tablespoons honey
1/2 cup bourbon (+ 1 tablespoon at the end)
3 tablespoons hoisin sauce
2 tablespoon Dijon mustard
1 tablespoon gochujang
1 tablespoon dark molasses
1/4 cup ketchup
3 tablespoons cider vinegar
4 teaspoons soy sauce
3 teaspoons Worcestershire sauce
2 teaspoons Chili garlic sauce
1/2 teaspoon ground black pepper

Steps:

  • For the Sauce: Combine all the ingredients (except for 1 tablespoon of the bourbon) in a medium saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by 1/3, stirring often. Sauce should be dark and slightly thickened (about 20 minutes). Turn of the heat and stir in the last tablespoon of bourbon. Sauce can be made up to 4 days ahead and stored in the refrigerator.
  • For the Ribs: Preheat the oven to 225º F. Remove the membrane from the back of the ribs. Slide a sharp knife under the white membrane on the back of the ribs and cut a hole into the membrane. Use your fingers to slide under the membrane and pull it away from the meat. Usually it helps to use a paper towel for extra grip. Remove all of the outer membrane and discard.
  • Pat ribs very dry with paper towels and cut each rack in half (to make them easier to turn later). Sprinkle a good tablespoon of dry rub on each side of the ribs and press until it's well-coated all over. (you should use about 4 tablespoons for 2 whole racks).
  • Lay a large piece of foil on a baking tray and place one rack on it, meat-side up. Fold up 3 sides of the foil to create a rim: pour half the apple juice into this pocket and then fold over and crimp the packet closed. Wrap the packet in a 2nd layer of foil. Repeat with the second rack. Cook for 4 to 4 1/2 hours. The ribs are ready when you can pierce them easily with a fork. Remove the ribs from the oven and set aside. Unwrap the ribs carefully and place them on a baking tray, meat side up. (Ribs can be par-cooked the day ahead and refrigerated at this point. If making the day ahead, let the ribs cool for 20 minutes, then take them out of the foil and place in sealable bags and refrigerate overnight. Let them come to room temperature before the next step).
  • Note: Ribs can be finished in the oven or on a grill. Turn the broiler on high (or prepare a grill with medium-high heat) and set an oven rack about 6 inches from heat. Coat the the ribs well with BBQ sauce. Place the ribs under the broiler or on grill and cook until the sauce just starts to bubble (4-5 minutes). Take them out and apply another coat of glaze and cook again until glaze bubbles and browns (Do not walk away while broiling! They can burn easily so watch carefully). Remove from the broiler or grill, cut the ribs and serve.

1 cup soy sauce
1 cup sake, optional
1 teaspoon ground dried chile flakes
4 tablespoons honey
2 tablespoons minced fresh ginger
2 tablespoons minced fresh garlic
6 tablespoons sesame oil
2 sides (about 3 pounds) baby pork ribs

Steps:

  • In a bowl, mix together all of the ingredients for the marinade. Place the ribs in a container just large enough to hold them 1 side on top of the other. Pour the marinade over the ribs, cover with plastic wrap or aluminum foil and let marinate in the refrigerator overnight.
  • Preheat the oven to 300 degrees F.
  • Place half of the marinade in a baking pan with the ribs and bake, turning the ribs frequently, for 2 hours, or until the meat is tender. Reserve the remaining marinade.
  • Under a preheated broiler or on a wood-fired grill, glaze the ribs for 3 to 4 minutes on each side. Watch carefully so they don't burn. Remove the ribs and cut each side into individual pieces. Bring the reserved marinade to a boil.
  • Arrange the ribs in an overlapping fashion on each plate or on a large serving platter. Spoon the warm marinade over them.

4 teaspoons coriander seeds
4 teaspoons packed dark brown sugar
4 teaspoons smoked paprika
1/2 teaspoon red pepper flakes
2 1 1/2- to 2-pound racks baby back pork ribs, membranes removed
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1/4 cup honey
2 tablespoons apple cider vinegar

Steps:

  • Preheat the oven to 325˚ and set a wire rack on a rimmed baking sheet.
  • Put the cumin and coriander seeds in a resealable plastic bag and crush with a heavy skillet. Transfer to a bowl and add the brown sugar, paprika and red pepper flakes. Season the ribs generously with salt and pepper, rub all over with the vegetable oil, then rub all over with the spice mixture, pressing to adhere. Transfer the ribs meat-side up to the rack.
  • Stir together the honey and vinegar in a small bowl. Bake the ribs, rotating the baking sheet after 45 minutes, until well browned, 1 hour 30 minutes to 1 hour 45 minutes. Brush half of the honey mixture on both sides of the ribs and bake 15 more minutes, then brush with the remaining honey mixture and continue baking until the ribs are deeply browned and tender, about 15 more minutes. Transfer the ribs to a cutting board and let cool slightly before carving.

  • Then remove the cling film and pour over the sauce and bake in a moderate oven for 20-30 minutes.

  • Add all ingredients to a sauce pan and simmer for 5 minutes, then place into a blender and blend on high before straining through a sieve. Add water to make a thick sauce.
