SPICED APPLE CHUTNEY
These types of fruit chutneys are some of the most flavorful things you'll ever taste, and perfect condiments for those special occasion holiday dinners. If you like applesauce, you'll find this a fairly familiar experience, and despite the ingredient list, nothing really overpowers the fruit.

Steps:
- Whisk vinegar and sugar together in a large saucepan; add apples, apricots, raisins, shallots, ginger, Aleppo pepper flakes, and star anise. Bring to a simmer, reduce heat to medium-low; stir in garlic, salt, and mustard.
- Simmer mixture, stirring occasionally, until fruit is soft and liquid is reduced, 40 to 45 minutes. Remove from heat and cool to room temperature. Remove ginger pieces and star anise, transfer mixture to a bowl, and refrigerate until chilled. Season with salt and pepper flakes.

SPICED HAM WITH APPLE RELISH
If you think Thanksgiving turkey tastes good as a leftover, try this. The ham's wonderful served cold on a bun with hot or cold relish spooned on the top. - Combine cloves and allspice; rub over ham. Wrap tightly in foil and place in a shallow baking pan. Bake at 325° for 1 to 1-1/2 hours or until a thermometer reads 140° and the ham is heated through., In a large saucepan, combine the first six relish ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer for 25-30 minutes or until thickened. Stir in almonds. Slice ham; serve with the relish.

HAM SPREAD
This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

- Cut up ham to put into food processor, grind on pulse until very coarse. Add the onion and dill pickle relish close to the end of this stage. Put into mixing bowl and add mustard and creamy salad dressing; mix well.

- 1. To cook the ham put ham in a large pan and pour juice over and add water to cover well. Put the pan on to boil then turn down to simmer and cook 10 to 15 mins per pound. Once the ham is cooked leave to cool in the liquid this keeps it moist. Remove when ready to serve but reserve some of liquid to store the leftovers in.
- 2. To make the relish chop the pineapple fairly small, squeeze the skins over the bowl to catch the juices, then add the green onions,lime juice, herbs, chili and then salt to taste, remember the ham will also be fairly salty.

This glazed ham is one of my family's favorites, so I serve it often at holiday time. Currant jelly, mustard and brown sugar add a special flavor.

- Remove the rind from the ham by first making an incision around the shank bone, if there is one. Then run the knife gently but purposefully around the edge of the ham where the rind meets the fat. Gently pull the rind off the ham in one piece, being careful not to remove any of the precious fat.
- Make light cuts in the fat with a sharp knife in a criss-cross pattern. Place the ham on a rack over a baking tray and fill the tray with enough water to cover the base. This will avoid any excess glaze burning in the tray.
- For the glaze, combine all the ingredients in a small pot and simmer over a medium heat for 2 minutes or until it forms a light syrup. Brush one third of the glaze onto the ham and bake in the preheated oven for 35-45 minutes, brushing extra glaze onto the ham every 10 minutes. The ham is ready when it is golden and slightly burnished.
