Hot and Spicy Green Beans with Tomato image

Not only is this easy to make at home but it's easy to take camping and also cook in the microwave. You can use diced tomatoes, stewed tomatoes, or whole tomatoes as long as you squeeze the whole tomatoes into pieces.

1/4 cup extra virgin olive oil
1 medium onion, thinly sliced
1 lb green beans, trimmed
1/2 teaspoon salt (to taste)
1/4 teaspoon black pepper (to taste)
1 (28 ounce) can diced tomatoes
4 large garlic cloves, peeled and thinly sliced
1 teaspoon sugar
3/4 teaspoon allspice
1/2 teaspoon ground cinnamon

Steps:

  • In a large skillet (approximately 12 inch) with lid, ,heat olive oil over medium heat.
  • Add onion and cook until soft and lightly golden, approximately 4 to 5 minutes.
  • Add the green beans, salt and black pepper, and stir well.
  • Reduce the heat to medium low and cook until the onions are caramelized and the beans start to soften and brown lightly, about 10 minutes.
  • Add the tomatoes, garlic, sugar, allspice and cinnamon.
  • Stir well, reduce the heat to low, cover and cook, stirring occasionally, until the beans are tender throughout, about 15 to 20 minutes.
  • Serve warm or at room temperature.

I had these beans at a dinner party. I'm so glad the hostess was willing to share the recipe. A very unique and different way to serve fresh green beans.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

-2 tbsp extra virgin Spanish olive oil
-4 cloves garlic
-1 onion
-1/2 green bell pepper
-2 cups cooked lima beans
-1/4 tsp KIVA sweet smoked paprika
-1/4 tsp KIVA hot smoked paprika
-1/2 tsp cumin powder
-1 can diced tomatoes
-sea salt
-black pepper
-fresh chives

Steps:

  • Finely dice 1/2 of a green bell pepper, thinly slice 4 cloves of garlic, finely dice 1 onion and reserve 2 cups of cooked lima beans
  • Heat a non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, after 2 minutes add the sliced garlic and diced onions and mix with the oil, after 3 minutes add the diced green bell pepper and mix with the garlic and onions, after 4 minutes add the 2 cups of cooked lima beans, season with a 1/4 teaspoon of hot smoked paprika, a 1/4 teaspoon of sweet smoked paprika, a 1/2 teaspoon of cumin powder, a pinch of sea salt and some freshly cracked black pepper, mix everything together until well combined
  • Next add 1 can of diced tomatoes, season again with sea salt and freshly cracked black pepper, lower the fire to a LOW heat and mix together, let it simmer for 4 to 5 minutes, then remove from the heat and garnish with freshly chopped chives, enjoy!

2 c Black beans cooked
1/4 ts Cayenne pepper ground
2 tb Butter
2 cl Garlic minced or pressed

Steps:

  • In a large saute pan, heat the butter and olive oil over medium heat. Add the onion, garlic, and green and red peppers, and saute 4-6 minutes, until onions are translucent and vegetables are tender. Add the black beans and salt to taste. Add tomatoes and olive oil. Let cook another 5 minutes, until hot throughout. Add cilantro and mix well. Add cayenne pepper to taste and serve hot, garnished with sprigs of parsley. 2 cups basmati rice
2 teaspoons cumin seeds
1 teaspoon fennel seeds
1/2 teaspoon cayenne
1 cinnamon stick
2 tablespoons unsalted butter
1 small red onion, diced
Kosher salt
2 tablespoons extra-virgin olive oil
One 3 1/2- to 4-pound chicken, in parts, breasts halved, thighs and drumsticks separated
Kosher salt
6 medium cloves garlic, grated
2 medium yellow onions, thinly sliced
1/4 teaspoon crushed red pepper flakes
One 15.5-ounce can unsweetened coconut milk
One 14.5-ounce can diced tomatoes
2 bay leaves

Steps:

  • For the rice: Soak the rice in 4 cups of cold water for 30 minutes.
  • For the chicken: Meanwhile, in a large skillet, heat the oil over medium-high heat. Arrange the chicken on a baking sheet in a single layer. Season all sides of the chicken with salt. When the oil begins to smoke lightly, use a pair of metal tongs to carefully add the pieces, skin-side down, to the oil. Do not crowd the skillet. Lower the heat to medium and cook until the skin is browned, 5 to 8 minutes. Flip the chicken and brown the other side, another 5 to 8 minutes. Transfer the chicken pieces to a clean baking sheet and set aside.
  • In the same skillet, add the garlic and onions. Add the red pepper flakes and some salt and cook, stirring frequently, until the garlic and onions turn light brown, 5 to 8 minutes. Add the coconut milk, tomatoes and bay leaves and bring to a simmer. Arrange the chicken pieces skin-side up in a single layer in the sauce. Pour any juices into the sauce as well. Lower the heat and simmer until the chicken is cooked through, 30 to 35 minutes. Discard the bay leaves. Taste for seasoning. Keep warm.
  • To cook the rice: While the chicken is cooking, heat the oven to 250 degrees F.
  • On a baking sheet, combine the cumin, fennel, cayenne and cinnamon stick. Lightly toast the spices in the oven, 1 to 2 minutes. Set aside.
  • Heat a large Dutch oven over medium heat and add the butter and onion. Season with salt and cook until the onion is translucent but not browned, 5 to 8 minutes. Stir in the spices. Drain the rice, reserving the soaking water. Stir in the rice and cook until you hear it crackling, 1 to 2 minutes. Gently stir in the reserved water. Season with salt and bring to a simmer over medium heat. Cover and cook until the water has been absorbed and the rice is fluffy, about 15 minutes. Remove from the heat and allow the rice to rest for 5 to 10 minutes before "forking" it gently onto plates. Spoon the chicken and sauce over the rice and serve.
