The pickling liquid for these grapes includes red wine, vinegar, and common pickling spices like coriander, mustard seeds and hot pepper; it also contains warm spices like cinnamon and star anise along with brown sugar. - Pack grapes into four hot 1-pint jars to within 1-1/2 in. of the top. Divide jalapenos, ginger, cinnamon, star anise, coriander seeds and mustard seed among jars., In a large saucepan, combine brown sugar, vinegar, water, wine and canning salt. Bring to a boil; cook until liquid is reduced to 3 cups, 15-18 minutes., Carefully ladle hot liquid over grape mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

- Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a quart-size mason jar and set aside.
- Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod, and allspice in a saucepan; bring to a boil. Reduce heat to low and simmer until onion is softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
- Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate 1 day before eating.

- Prepare jelly jars and seals by sterilizing them in boiling water.
- Remove grapes from stems; rinse and drain.
- Place grapes in a large heavy-bottomed pan and mash to break skins.
- Add remaining ingredients and bring to a full rolling boil.
- Reduce heat to medium-low and let boil gently for about 20 minutes, stirring occasionally.
- Strain through a food mill or sieve.
- Put strained mixture back into the pan and bring back up to a simmer.

- You will need 2 disks of prepared pie dough, you can't go wrong with my All Butter Vodka Dough Recipe. (This recipe makes 2 disks).If the dough is frozen, allow to thaw in the refrigerator overnight. Remove the dough disks from refrigerator and let it warm up for 10-15 minutes. Roll out the first disk onto a lightly floured surface about 11" round and 1/8" thick.Gently transfer the rolled dough into a 9" pan, leaving a 1"-2" overhang all the way around. Trim the edges and gather the scraps together, wrap scraps in plastic wrap and store in the fridge.Tuck the edge underneath itself to form a ring around the edge of the pie plate.Place the pie shell a lined baking sheet in the fridge and chill while you prepare the topping and filling.
- Roll the second dough disk into a round shape 1/4" - 1/8" thick. Using a straight edge and a pizza cutter or small knife, cut the dough into 1" - 1 1/2" wide strips. - Wash and stem the grapes. Using a sharp knife, cut off the very tip of the grape, right where the stem meets it. Place grapes into two clean jars (leave a little room for the brine).
