GINGER TEA (ADRAK WALI CHAI)



Ginger Tea (Adrak Wali Chai) image

This soothing and invigorating Indian-style Ginger tea, or Adrak wali chai, is made with just four ingredients, and is ready in 10 minutes!

Number Of Ingredients 6

2 cup water
2 teaspoon grated ginger ((about ½-inch piece))
2 teaspoon black tea leaves (or 2 black tea bags like Tetley, Taj Mahal)
¼-⅓ cup low-fat milk ((adjust quantity to taste))
2 green cardamom pods (gently crushed)
sugar/honey (to taste (I skip it))

Steps:

  • Place a sauce pan on medium-high heat. Add water, grated ginger, gently crushed cardamom pods and let the water come up to a simmer.
  • Add tea leaves (or tea bags) and bring everything to a roaring boil.
  • Add milk and bring the tea to a full boil again. Turn off the heat.
  • Using a fine mesh strainer, pout the tea in two cups. Add sugar or honey to taste, if using. Enjoy!

6 cups water, or as desired
1 (4 inch) piece fresh ginger, peeled and coarsely chopped
1 whole star anise pod
6 cardamom pods, bruised
1 cinnamon stick
4 lemons
3 tablespoons unpasteurized honey, or more to taste

Steps:

  • Bring water to a boil in a saucepan; add ginger, star anise, cardamom pods, and cinnamon stick. Zest lemons over the saucepan. Slice lemons in half and squeeze juice into the water. Reduce heat to medium-low and simmer until desired flavor is reached, 5 to 15 minutes.
  • Stir honey into tea and strain tea through a fine-mesh strainer as you ladle into mugs. Add contents in strainer back into saucepan.

6 whole cardamom pods
4 fresh or crystallized ginger slices
2 1-1/2 x 3-inch orange peel strips (orange part only)
6 whole cloves
2 cups low-fat milk
6 teaspoons tea leaves (preferably Darjeeling or Assam)
1/4 cup packed dark brown sugar

Steps:

  • Combine first 5 ingredients in heavy large saucepan. Cover and simmer 10 minutes. Add milk and tea, bring to boil and simmer 2 minutes. Turn off heat and steep 4 to 6 minutes, according to desired strength. Mix in sugar. Strain tea. (Can be prepared 6 hours ahead. Cover and chill. Rewarm before serving.)
