SMOKED SPICED EGGPLANT

Smoked Spiced Eggplant image

Fire-roasted eggplant with onions, tomatoes and spices is a dish that Northern Indians are very proud of. It's addictive, comforting, and incredibly delicious.

Provided by Suvir Saran

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 13

1 large red onion
1 large eggplant
1/2 green chili
3 tablespoons canola oil
1 1-inch piece ginger, chopped
2 cloves garlic, chopped
1 tablespoon coriander
1/2 teaspoon cumin
1/4 teaspoon cayenne
2 Tomatoes, chopped
2 tablespoons chopped cilantro
1/2 teaspoon garam masala
1/2 lemon

Steps:

  • Peel and dice the onion; set aside in a mixing bowl. Using tongs, roast the eggplant directly on the burner of a gas stove over medium heat, turning often, until skin is completely blackened and the flesh is soft, about 10 minutes. Alternatively, prick a few holes in the eggplant (to vent steam) and roast it on a rimmed baking sheet in a 500 F oven for about 20 minutes.
  • When eggplant is charred all over, set it aside until it is cool enough to handle. Then pull off skin with your fingers or a knife (discard the skin); finely chop the eggplant with a knife or pass it through a ricer. Set aside. Finely chop green chilies, including their seeds, and set aside.
  • Add oil to a skillet or kadai over medium-high heat, followed by the onion. Cook until edges are brown, but there is still a bit of texture, about 15 minutes. Add ginger and stir; if the onion mixture is sticking to the pan, add a little water to deglaze it. Add garlic and stir; then add coriander, cumin, and cayenne, deglazing as needed with more water to prevent the spices from burning.
  • Add eggplant to the pan and continue cooking, stirring well to combine thoroughly. Add salt to taste, ensuring that all the flavors are balanced. Add tomatoes and stir to combine; then add the desired amount of green chili, follow by cilantro. Season again with salt. Stir in garam masala, a squeeze of lemon juice, stir and serve.

SZECHUAN EGGPLANT

Szechuan Eggplant image

Chinese Eggplant with Szechuan Sauce with chilies and peanuts- a tasty, easy vegan dinner recipe! Serve with Rice, black rice, cauliflower rice, quinoa or rice noodles.

Provided by Sylvia Fountaine

Categories     Main

Time 45m

Yield 4

Number Of Ingredients 18

1 1/2 lbs Japanese Eggplant (about 4 x 10 inch eggplants)
2 teaspoons salt
bowl of water
--
2 tablespoons cornstarch
2-4 tablespoons peanut oil ( or wok oil)
-
4 cloves garlic, rough chopped
2 teaspoons ginger, finely minced
5-10 dried red chilies
1 teaspoon Szechuan peppercorns ( or sub regular peppercorns)
1/4 cup soy sauce or low sodium soy sauce
1 tablespoon garlic chili paste ( or sub 1 teaspoon chili flakes)
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon Chinese cooking wine (or mirin)
3 tablespoons sugar, brown sugar, coconut sugar, maple syrup or alternative
1/2 teaspoon five spice

Steps:

  • Cut eggplant into 1/2 inch thick half-moons or into bite-sized pieces ( see photos). Place in a big bowl covered with water and stir in 2 teaspoons salt. Cover with a plate and let stand 20-30 minutes.
  • In the meantime, chop the garlic and ginger and make the Szechuan Sauce.
  • To make the Szechuan Sauce: Toast the Szechuan peppercorns in a dry skillet over medium heat for 1-2 minutes. Crush. Place these along with the remaining ingredients ( soy, chili paste, sesame oil, rice vinegar, Chinese cooking wine, sugar, and five spice) in a small bowl and whisk. Set by the stove.
  • Drain and rinse the eggplant and pat dry with a towel. Toss with the corn starch.
  • heat 1 -2 tablespoons oil in an extra-large skillet over medium heat. Add half the eggplant spreading them out. You want to get both sides nice and golden, and the insides cooked through -so take your time here and dont rush this step. Let one side brown then turn them over using tongs. This will take about 10 minutes for each batch. ( If in a hurry sometimes I'll use 2 pans.) Set the eggplant aside.
  • Add 1 more tablespoon oil to the skillet, and over medium heat, add the garlic and ginger, stirring for 2 minutes. Turn the fan on, add the dried chilis and stir one minute. Pour the Szechuan sauce into the pan and bring to a simmer for 20 seconds. Add the eggplant back into the skillet, tossing gently for about 1 minute. If it seems dry add a tablespoon of water to loosen.
  • Place in a serving dish and top with scallions and optional peanuts.
  • Serve with rice, cauliflower rice, black rice or rice noodles.

CHINESE EGGPLANT RECIPE WITH GARLIC SAUCE

Chinese Eggplant Recipe With Garlic Sauce image

This Chinese Eggplant Recipe with Garlic Sauce features crispy eggplant bites coated in a sticky, spicy, savory-sweet garlic sauce ⏤ simple but packed with flavor! Perfect for weeknight dinners, this recipe is better-than-takeout and naturally Vegan!

Provided by Damn, Spicy! @ www.damnspicy.com

Categories     Main Course     Side Dish

Time 53m

Number Of Ingredients 12

2 eggplants (chopped into bite sized pieces)
1 tsp kosher salt
2 tbsp cornstarch
2 tbsp peanut oil (or vegetable oil)
1/2 tbsp peanut oil (or vegetable oil)
3 cloves garlic (minced)
1 tbsp ginger (minced)
1/4 cup water
2 and 1/2 tbsp soy sauce (use gluten-free soy sauce for GF eaters)
2 and 1/2 tbsp rice vinegar
2 tbsp brown sugar
1 tbsp cornstarch

Steps:

  • Place the chopped eggplants in a colander, sprinkle with salt and allow to rest for 30-40 minutes. Pat dry, then transfer to a large shallow bowl and add in the cornstarch. Toss until evenly coated on all sides.
  • In a large non-stick skillet over medium heat, add the peanut oil and heat until hot. Add in the eggplants and spread them into a single layer (they shouldn't overlap or they will turn soggy). Cook one side at a time until the eggplants are crispy on the outside and soft on the inside (about 8-10 minutes in total), then remove them from the skillet and transfer them to a clean plate.
  • In a small bowl, add the water, soy sauce, rice vinegar, brown sugar and cornstarch. Mix until combined and the cornstarch is completely dissolved. Set aside.
  • Add the peanut oil to the same skillet, place over medium heat and heat until hot, then add in the garlic and ginger. Stir fry until fragrant (don't let the garlic turn brown). Immediately add in the eggplants, give another whisk to the sauce, then pour it in. Stir until the eggplants are coated evenly and the sauce thickens (you're looking for a sticky maple syrup-like consistency). Turn off the heat and serve immediately! Serve hot as a side or over rice or noodles as a main.

Categories     soups and stews, vegetables, main course

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 14

1 1/2 pounds Italian eggplant, cut into 1-inch cubes
1 1/2 teaspoons kosher salt (Diamond Crystal), plus more as needed
1/3 cup pine nuts or slivered almonds
1 1/4 teaspoons baharat blend (or use another spice blend, such as garam masala)
Freshly ground black pepper
5 1/2 tablespoons extra-virgin olive oil, plus more as needed
1/2 teaspoon finely grated lemon zest
3 fat garlic cloves, finely grated, pressed or minced
2 cups chopped fresh tomatoes (about 1 pound)
3/4 cup chopped fresh herbs, such as basil, mint, cilantro, parsley, dill or any combination, plus more for garnish
4 to 6 large eggs
Lemon wedges, for serving
Plain whole-milk yogurt, for serving
Hot sauce (such as Tabasco), for serving

Steps:

  • Put eggplant in a colander in the sink and toss with 1 teaspoon salt. Let drain while preparing the nuts.
  • In a small bowl, combine nuts, 1/4 teaspoon baharat and a large pinch of salt and pepper. Heat 1/2 tablespoon oil in a large skillet over medium heat. Add pine nut mixture and cook, stirring frequently, until fragrant and toasted, 2 minutes. Pour nuts back into the small bowl and stir in lemon zest. Set aside for serving.
  • Add 3 tablespoons oil to the skillet and heat over medium-high until oil thins out, about 20 seconds. Add enough of the eggplant to fit in one layer without overlapping. Cook eggplant until browned, stirring occasionally, about 7 minutes. Use a slotted spoon to transfer eggplant to a plate. Repeat with more oil and eggplant, taking care not to crowd the pan.
  • When all the eggplant is browned, push the last batch still in the pan to one side. Drizzle the empty part of the pan with a tiny bit of oil and add garlic. Cook until fragrant, about 30 seconds. Return the rest of the browned eggplant back to the pan and stir well to incorporate garlic.
  • Add tomatoes and remaining baharat, 1/2 teaspoon salt and a big pinch of pepper. Reduce heat to medium and simmer, stirring occasionally, until tomatoes and eggplant become stewy, 8 to 10 minutes. Stir in herbs. Taste and add more salt, if needed.
  • Make small hollows into the stewed eggplant with the back of a spoon. Gently crack an egg into each hollow. Season eggs with salt and pepper. Cover with a lid or piece of foil and cook on medium-low until the eggs are just set, but still soft, 4 to 7 minutes. Remove the lid, and garnish with the spiced nuts, more herbs and a squeeze of lemon. Serve with yogurt, hot sauce and more lemon wedges on the side.

  • Fill 1/3 of medium/large pot with canola oil and place over med/high heat. To test if oil is ready, drop in a piece of eggplant and it should bubble and sizzle. Once oil is hot, add enough eggplant to keep it mostly submerged in oil. The eggplant should be bubbling and boiling in the oil the entire time. Cook in 2 to 3 batches depending on the size of your pot. Once eggplant is golden (15 to 20 minutes), remove with a slotted spoon and place in a colander set over a bowl to drain off excess oil. Let it drain in the colander until eggplant is just barely warm then transfer to a large mixing bowl.
  • In a small bowl, combine white vinegar, pressed garlic cloves, minced jalapeños and salt. Stir together and drizzle over cooled eggplant. Toss to combine. Eggplant can be enjoyed right away or refrigerated. It keeps for several weeks and only gets better as the flavors meld.

From healthynibblesandbits.com
Estimated Reading Time 8 mins
  • Slice the eggplant into 2.5 to 3-inch sections. Then, slice each section into batons (or strips) that are about 1/4 to 1/2-inch thick. You don’t need to salt the eggplant for this recipe (see note 5 for more info). Set the eggplant aside.
  • Add 3/4 cup of oil to a wok and heat it over medium-high heat. (See note 5) Once the temperature reaches about 375ºF, it is ready for frying. You can test the temperature with a thermometer or by taking a small piece of eggplant and adding it to the wok. If the oil around the eggplant bubbles rapidly, the oil is ready for frying.
  • Working in batches, add a large handful of eggplant batons to the wok. Flash fry for about 1 minute to 1 minute 30 seconds, flipping the batons halfway. Using tongs, transfer the eggplants into a spider spatula. Give the spider spatula a gentle shake to shake off any excess oil from the eggplant. Then, transfer the flash-fried eggplant to a plate and flash fry another batch of eggplant batons.
  • Eggplant absorbs oil like a sponge. After about 2 or 3 batches of frying, you’ll notice that there’s less oil in the wok. As a result, you’ll want to fry in smaller batches for the remaining eggplant. You can also add more oil to the wok.
