These cinnamon spiced stewed apples are delightful for their antioxidants and gut strengthening benefits. You can enjoy warm or cold for breakfast alongside some porridge or muesli, or try cold as a snack or desert.

8 organic apples (Red Delicious, Pink Lady, Royal Gala, Granny Smith or your chosen apple variety)
1 teaspoon of cinnamon
1/2 cup of water

Steps:

  • 1. Peel 4 apples, leave 4 apples unpeeled to increase the pectin content (see notes) and then dice the apples into evenly sized pieces. It's fine to leave the skin on all the apples if you like, it will just make the stewed apples texture a little more fibrous.
  • 2. Add the apples, water and cinnamon to a medium sized saucepan and cover. Simmer over low heat, stirring occasionally for about 15-20 minutes or until the apple pieces soften and start to break apart.
  • 3. Remove from the saucepan and serve warm or cool depending on your preference.

12 lbs firm tart apples, no more than 2 1/2-inch diameter
12 cups sugar
6 cups water
1 1/4 cups white vinegar, 5
3 tablespoons whole cloves
3/4 cup red hot cinnamon candies or 8 cinnamon sticks
1 teaspoon red food coloring (optional)

Steps:

  • Wash apples. Peel and slice one apple at a time. Immediately cut crosswise into 1/2" slices, remove core area with a melon baller and immerse in ascorbic acid solution to keep the apples from discoloring.
  • In a 6 quart saucepan, combine sugar, water, vinegar, cloves, cinnamon candies, or cinnamon sticks and food coloring (if using).
  • Heat to a boil, stirring constantly until sugar dissolves then lower heat and simmer 3 minutes.
  • Drain apples and add to hot syrup, and cook for 5 minutes.
  • Fill prepared jars with apple rings and hot flavored syrup, leaving a 1/2" headspace.
  • Check for air bubbles and add more liquid if needed to maintain the 1/2" headspace.
  • Process pint or quart size jars in a boiling water bath for 20 minutes .
  • Adjust time according to your altitude.
  • NOTE: This can also be pressure canned. Pressure Canner - Hot pack pints or quarts and process for 8 minutes at the pressure specified according to your altitude and / or style of canner.

1 cup water
1/3 cup (packed) golden brown sugar
2 1/2 tablespoons fresh lemon juice

  • Combine apples, 1 cup water and brown sugar in heavy medium saucepan. Bring to boil, stirring occasionally. Reduce heat, cover and simmer until apples are very tender, about 25 minutes. Uncover and simmer until almost all liquid in saucepan has evaporated, about 6 minutes. Remove from heat. Stir in lemon juice and cinnamon. Cool 30 minutes.

3 medium Granny Smith apples, peeled and diced
½ cup brown sugar
½ cup maple syrup, divided
3 teaspoons ground cinnamon, divided
½ teaspoon ground nutmeg
½ cup milk
2 large eggs
2 (17.5 ounce) cans refrigerated cinnamon roll dough with icing

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place diced apples in a large skillet over medium heat with brown sugar, 1/2 cup maple syrup, 2 teaspoons cinnamon, and nutmeg. Mix together and simmer until apples are tender, 10 to 15 minutes. Drain apples and set aside.
  • Meanwhile, whisk milk, eggs, and remaining 1 teaspoon cinnamon together in a bowl.
  • Open 1 tube cinnamon rolls; set icing aside. Cut each cinnamon roll into 6 pieces. Place all pieces into the milk mixture and mix around until fully covered. Remove from the milk mixture and press into the bottom of the prepared baking dish.
  • Evenly place spiced apples on top of the cinnamon roll layer. Open remaining tube of cinnamon rolls and repeat step 4 (cutting and coating cinnamon rolls), then press on top of the apples to form a top layer. Drizzle remaining 1/4 cup maple syrup over top.
  • Bake in the preheated oven until the top is golden brown and puffy, 30 to 35 minutes.
  • Heat 2 icing packets in the microwave for 5 to 10 seconds; drizzle over the casserole. Serve immediately.

  • Prepare syrup by adding honey to water and heating until the honey is dissolved (this is a nice way to use crystallized honey straight from the jar). Add cinnamon sticks, simmer five minutes. Add apples (with blossom ends removed) to syrup. Simmer five minutes (just to heat through), you don’t want to overcook them, as they will cook more during processing. Apple skins will darken as they cook (think applesauce or baked apples).
  • Load hot apples into hot quart jars, fill with syrup to 1/2 inch headspace. Run you chopstick or small non-metallic spatula between the apples and the jar to remove air bubbles (metal may scratch the inside of the jar). Add extra syrup if needed. Wipe rim clean, screw on lid (not too tight – air must escape during processing).
  • Place jars on rack in canner. When all apples are packed (you should have 4-5 jars), lower jars into water. Make sure jars are covered by 1-2 inches of water. Bring to boil, process (boil gently) 20 minutes. (See peach post for photos of canning setup and jars in canner.)
