MEXICAN CHOCOLATE TART WITH CINNAMON-SPICED PECANS

- For pecans:
- Preheat oven to 350°F. Spray rimmed baking sheet with nonstick spray. Whisk all ingredients except pecans in medium bowl. Stir in pecans. Spread in single layer on sheet, rounded side up. Bake until just browned and dry, about 30 minutes. Cool on sheet. Separate nuts, removing excess coating. DO AHEAD Can be made 2 days ahead. Store airtight at room temperature.
- For crust:
- Preheat oven to 350°F. Blend first 4 ingredients in processor. Add melted butter; process until crumbs are moistened. Press crumbs into 9-inch-diameter tart pan with removable bottom, to within 1/8 inch of top. Bake until set, about 20 minutes. Cool on rack.
- For filling:
- Bring cream to simmer in medium saucepan. Remove from heat. Add chocolates; whisk until melted. Add butter, 1 piece at a time; whisk until smooth. Whisk in vanilla, cinnamon, and salt. Pour filling into crust. Chill until filling begins to set, about 15 to 20 minutes.
- Arrange nuts in concentric circles atop tart. Chill until set, about 4 hours. DO AHEAD Can be made 1 day ahead. Cover loosely with foil and keep chilled. Serve tart with whipped cream.

Steps:
- Heat the oven to 325 degrees F/160 degrees C.
- Put the chocolate in a bowl. Bring the cream, milk and sugar to a boil in a saucepan. Remove from the heat and add the chopped chocolate, stirring to melt. (Be sure to give it enough time: you don't want little bits floating around in there.) Break the egg and yolk into a bowl. Gradually whisk the chocolate mixture into the egg mixture, taking care to not to scramble the eggs. Strain the mixture into the baked tart shell. Bake until set, about 20 minutes. Cool completely.
SPICED CHOCOLATE TART
Steps:
- For the crust: Preheat the oven to 325 degrees F.
- Combine the cookies and sugar in a food processor and pulse to make fine (but not pasty) crumbs. Drizzle in the melted butter and pulse to combine. Press the crust into the bottom and up the sides of a 9-inch tart pan with removable bottom. Bake on a baking sheet until the crust is set and just golden, about 12 minutes. Cool completely.
- For the filling: Combine the chocolate, cream, butter and dried ginger in a small saucepan and cook over low heat, stirring until the chocolate melts, about 5 minutes. Stir until very smooth. Pour into the cooled tart shell and refrigerate until set, at least 3 hours.
- For the salted caramel: Combine the sugar, corn syrup and 1/4 cup water in a small saucepan. Set the pan over medium-high heat and cook, stirring occasionally, until the sugar is a deep amber, 8 to 12 minutes. Carefully whisk in the cream until smooth. Remove from the heat and stir in the butter, vanilla, kosher salt and cayenne. Pour into a spouted glass measuring cup and let cool until thickened, 1 to 1 1/2 hours.
- When the caramel is cooled and the tart is set, drizzle the caramel over the tart so some of the chocolate is still exposed; save the rest for serving. Sprinkle the tart with flaky sea salt and chopped crystallized ginger. Cut into wedges. (If you make the tart ahead of time, use a warm knife or let sit at room temperature for a few minutes before slicing.)

- For the pastry, chop the plant-based butter up into manageable chunks, then pulse in a blender with the rest of the pastry ingredients until it comes together to a crumbly dough. - To make the crust: In a large bowl, mix together the flour, hazelnut meal, powdered sugar, salt, lightly beaten egg and butter. Using a pastry cutter, a large fork or a potato masher, cut the chilled butter into the flour until it resembles oatmeal flakes with a few pea-sized pieces of butter still visible. When a ball forms, turn out onto a well floured surface. Roll the dough out, if making individual tarts divide the dough into 5. If making one large tart, roll out to fit a 9-inch fluted tart pan. - Place a rack in the upper third of the oven and preheat oven to 350 degrees F. Remove the tart shell from the freezer, bake for 20 - 25 minutes or until the crust just barely starts to turn golden. Remove from the oven and allow tart shell to cool completely before filling.
- To make the filling: In a small saucepan set over low-medium heat, bring the cream to just simmering. Remove it from the heat and stir in the chocolate, vanilla and if using, the chili powder. Mix until smooth and the chocolate is completely incorporated. Whisk a small amount of the hot chocolate cream (about 1-2 tablespoons) into the lightly beaten eggs until smooth.
- Pour the chocolate filling into the prepared pastry and bake it for 12- 15 minutes (for mini tarts) and 18 - 22 minutes for large tart. If the center jiggles slightly, the tart is done. If the filling starts to crack, remove from the oven immediately so as to not overcook it. Allow the tart to cool in the pan on a wire rack for 15 minutes. Remove the tart ring and chill in the refrigerator for at least an hour prior to serving.

(There will be quite a lot of excess dough; refrigerate or freeze it, then use it to make tartlets.) Refrigerate the tart shell for at least 30 minutes while preheating the oven to 200°C (390°F).
