SPICED CHERRY JAM, SMALL BATCH
(Makes four to five 4 oz. jars) The spices really make this jam special. This is the recipe to make if you don't have a ton of cherries or you don't need 12 jars of jam. Note: Test your jam for desired consistency before you pour into jars. Sometimes you may have to cook longer than 1 minute at the end to get it right. Pouring a little hot jam onto a cool plate usually will give you a good indication of doneness.

Steps:
- Pit cherries, then process cherries and their juice in a food processor or chop finely by hand.
- Pour cherries and lemon juice into a non-reactive saucepan and bring to a boil, stirring frequently.
- Stir in cinnamon, cloves, and salt.
- Gradually stir in pectin with a whisk. Bring mixture to a full boil, stirring constantly.
- Add in the sugar, stirring to dissolve.
- Return to a boil, boil hard 1 minute, stirring constantly.
- Remove from heat.
- Skim foam from top with a slotted spoon.
- Pour carefully into 4 oz. jars.
- Wipe rims of jars, place lids on and screw bands on just finger tight.
- Process sealed jars in a hot water bath canner for 10 minutes to seal.
- Place jars onto a dishcloth-covered countertop or cutting board to cool.
- Do not move the jars until they are cooled.
- After they are cooled, test the seals by pressing the center of lid with your finger. If the lids springs up when you lift your finger, it is NOT sealed. Refrigerate any unsealed jars of jam and use them within a few days. Sealed jars are good stored in a dry place for up to a year.

SWEET CHERRY JAM WITH SPICES AND RED WINE
Regular cherry jam I find quite boring, but I also don't like my jam too spicy. The spice bag method works great, because it only adds a hint of spice to the jam.

Steps:
- Inspect 6 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
- Pit and finely chop cherries; measure out 3 1/2 cups. Combine cherries, sugar, and lemon juice in a bowl. Place cinnamon and cloves in a small piece of cheesecloth and tie together to make a spice bag. Add to the pot with the cherries, and marinate in the refrigerator for 8 hours.
- Add the cherries with all the liquid, spice bag, and the pectin in a large heavy saucepan. Slowly bring it to a boil. Stir in red wine. Slowly return mixture to a full rolling boil over high heat. Boil for exactly 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
- Remove pot from the heat. Remove and discard the spice bag. Ladle cherry jam immediately into prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

SPICED CHERRY JAM
Inspired by an Alton brown recipe for blueberry jam, the spices in this jam elevate the flavor to new heights. A very mature taste, but kids like it too. I always make extra batches to use as presents and house gifts.

Steps:
- Place the cherries in a saucepan over medium-low heat.
- Sprinkle with pectin over the cherries followed by the star anise, nutmeg, lemon juice and vinegar.
- Once the cherries start to release their liquid in the bottom of pan, increase the heat to high and bring to a boil.
- Lower heat and boil gently for five minutes occasionally mashing mixture.
- Mash in sugar, add the water, and return to a boil until the mixture reaches gel point. The frozen plate method works well for testing doneness.
- Process the jam using the hot water method for 10 minutes, or refrigerate and enjoy over the next week or so.

SPICED PLUM JAM FROM FRESH PLUMS
Super easy and delicious Spiced Plum Jam, made with fresh plums, and without pectin. Great way to use up extra and/or overripe plums. Perfect for gift-giving too.INTERMEDIATE - Easy recipe to follow, HOWEVER, you will need to understand what to look for in the jam test. Also requires knowledge of sterilizing jars. Will need to exercise caution as the jam and jars will be very hot at this stage. US based cup, teaspoon, tablespoon measurements. Common Measurement ConversionsMakes about 4 - 4 ½ pints.

Steps:
- Wash the plums well. To remove the seeds - first cut the plum in half. Next, cut the plum half with the seed, in half again (into quarters). One of these quarters will have the seed attached, which you can easily pull out. Alternatively, you can cut the plum flesh around the seed.
- Repeat with all the plums.
- Cut all the plums into 1 inch chunks (roughly). It's OK if the plums are a little crushed at this point, since they will be cooked down anyway.
- WEIGH the chopped plums, so you can decide how much sugar needs to be added. Place the plums in a large bowl (large enough to accommodate the sugar that will be mixed in too).
- Add sugar, salt, lemon juice and spices into the bowl. Mix well.
- Cover with plastic wrap and refrigerate for at least 8 hours (or up to 48 hours). Also, place some small saucers / bowls / spoons in the freezer for the jam test (explained below).
- When you're ready to cook the jam, scrape all of the plum-sugar mix into a large pot. Add the grated apple and stir to combine.
- Bring the mixture to a boil over medium-high heat. Stir the mixture to let it heat evenly. Lower the heat to medium - medium low, and cook until the fruits start to soften.
- MASH the plums with a potato masher, OR you can pass about ¾ of the mix through a food mill (this will remove the skins).
- Continue to cook the plums until the mixture reduces and starts to thicken slightly. Stir frequently to prevent the jam from sticking to the bottom and burning. While the jam is cooking, sterilize some heat-proof jam jars and lids.
- Check the temperature of the plum jam every 10 - 15 minutes (more frequently as it thickens more). Cook the jam until the temperature reaches 220°F (105°C).
- If you don't have a thermometer, you can perform the JAM TEST. To do this, drop a little jam on a frozen surface (saucer / bowl / spoon). Then keep it in the freezer for about a minute and check the consistency. If the consistency is jelly-like without being runny, then you've cooked the jam to the right temperature. (If you run a finger through the jam to create a streak, the jam shouldn't join back up in the middle to fill the streak, if it's at the right consistency).
- Remove the pot from the heat.
- Using clean tongs, clean ladles and clean paper towels, carefully ladle hot jam into the hot, sterilized jars. Please be careful, as the jam and jars will be very hot at this stage (wear gloves or oven mitts to protect yourself).
- Screw on the lids while the jars are hot. As the jam and jars cool down, this will create a seal.
- Allow the jars to cool to room temperature completely. Then label and store.

- Place the frozen cherries, sugar, dried cherries, lemon juice, corn starch, almond extract and cardamom to a heavy-bottomed, medium sauce pan over medium high heat. Use either a potato masher or the edge of a spatula to mash the cherries so you have some smaller bits. Bring the mixture to a boil, mashing as you go, and after a minute or two of boiling it should start to thicken. Lower the heat to a simmer and let it cook for 4-5 minutes or until the liquid has reduced a bit and the mixture has thickened. It will continue to thicken as it cools. Set aside to cool completely before assembling the muffins.
- In a medium bowl, whisk together the flour, oats, brown sugar, cinnamon, nutmeg and sea salt. Using a pastry blender or your hands, work the butter into the mixture until it resembles wet sand and when pinched together it holds into clumps. Gently mix in the almonds and place in the fridge. If storing overnight, cover; otherwise it’s fine for an hour-ish. After you bake the muffins you will have some leftover streusel which freezes beautifully, fyi!

- Combine half the pitted cherries, apple, 1 cup sugar and 3 tablespoons lemon juice in a heavy 6- to 8-quart nonreactive pot (see Tips); bring to a boil over high heat. Cook, stirring frequently, until the cherries are soft, 8 to 10 minutes. Discard the apple.
- Run the cherries through a food mill or press them through a chinois into a large, nonreactive bowl. (If you don't have a chinois or food mill, press the cherries through a sieve or colander, using a large spatula or wooden spoon to press out as much juice as possible.)
- Place cinnamon stick, star anise, cloves, vanilla bean and orange zest on a 6-inch square of cheesecloth and tie up with kitchen string to make a little bag.

- If canning, thoroughly wash jars and arrange them in a hot water bath canner. Bring pot with jars to a boil, and process on a rolling boil for 10 minutes.
- Remove the husks from all of your ground cherries, throwing out any fruit with black spots or mold. Wash fruit carefully.
- Grate ginger, zest lemon, and juice both the lemon and lime. Set ginger aside, but feel free to combine the lemon and lime juices.
- Combine ground cherries, sugar, lemon zest and the citrus juice in a large, heavy-bottomed pot. Bring pot to a boil, stirring occasionally. Lower heat to medium and continue simmering until all the ground cherries have burst and dissolved, about 30-40 minutes, stirring occasionally (your whole house will smell like a confectioner’s shop).
