Sweet and spicy carrot fries--these puppies are magic. Make them in 30 minutes and then watch them disappear!

1 pound carrot, peeled and cut into matchsticks
1 tablespoon olive oil, or as needed
1 teaspoon pure maple syrup
½ teaspoon kosher salt
¼ teaspoon cayenne pepper, or to taste
1 pinch curry powder
1 pinch hot paprika

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large rimmed baking pan with parchment paper.
  • Spread carrots on the prepared baking sheet; toss with enough olive oil to coat. Drizzle with maple syrup and sprinkle with salt, cayenne, curry powder, and paprika. Toss everything together and spread out evenly.
  • Roast in the preheated oven, tossing a few times while they bake, until tender, about 20 minutes. Serve hot.

I'm always on the lookout for alternatives to carb-laden sides. When I tested this recipe, the fries were gone within minutes. It's spicy, but not overwhelmingly so, and it has a soft inside with a crispy exterior. 6 large carrots
1 and 1/2 - 2 tablespoons olive or walnut oil
1 teaspoon paprika
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
scant 1/4 teaspoon cayenne pepper
salt, to taste
pepper, to taste
3 tablespoons ground almonds
2 tablespoons Gefen Ketchup
2 tablespoons Gefen Mayonnaise
1/4 teaspoon Gefen Honey
1/4 teaspoon freshly squeezed lemon juice
pinch cayenne pepper

Steps:

  • Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • Cut carrots in half widthwise, and cut each half into quarters. (Each carrot makes eight fries.) Put them into a medium-sized bowl.
  • Add the oil, paprika, garlic, cayenne pepper, salt, and pepper. Toss to coat evenly.
  • Spread carrots in a single layer, on a Gefen Parchment-lined baking sheet. There should be enough space between them for them to bake properly and crisp up.
  • Bake for 15 minutes. Flip the fries over, sprinkle lightly with ground almonds, and return to oven for another 10 minutes, until crisp and getting brown.
  • In a small bowl, whisk together all sauce ingredients. Taste and adjust seasoning if necessary.

1/2 tablespoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon honey
1 dash chili powder
1 dash cumin
1 dash ginger
1 dash salt and pepper

Steps:

  • Peel and cut carrots into french fry shapes.
  • mix the rest of the ingredients in a bowl, then add carrots and mix again.
  • Place carrorts on a baking sheet.
  • Bake in a 450 F oven for about 45 min., stirring everyonce and a while. Watch carefully to make sure they dont burn. The smaller you cut them the shorted the cook time will be.

3 medium carrots
2 TBSP shredded Parmesan
2 TSP Natural Nutralean or Natural NutraVegan
1 TBSP steak spice
1 TBSP oil of choice, we used olive oil

Steps:

  • Preheat oven to 425.
  • Chop carrots into french-fry-sized pieces. Place in large mixing bowl.
  • In a small bowl, combine protein powder, Parmesan, and steak spice. 
  • Drizzle oil and toss carrot sticks until coated.
  • Add cheese and spice mixture and shake until carrot sticks are coated well. 
  • Line a cooking sheet with parchment paper and lay the carrots in a single layer. *Optional: Sprinkle extra Parmesan on top 
  • Bake for 10 minutes, flip, and bake for 5-7 additional minutes or until edges have darkened.
