SWEET & SPICY GLAZED PECANS
I love to add these pecans to salads of all kinds. Of course, they are pretty great just as they are! Feel free to adjust the seasoning to suit your individual taste. Also, walnuts and mixed nuts are really good fixed this way.

Steps:
- Preheat oven to 350°F.
- Butter a large, heavy cookie sheet.
- In a small, heavy saucepan, combine first 4 ingredients.
- Over medium heat, stir until sugar dissolves and mixture comes to a boil.
- Boil 2 minutes.
- Add pecans and stir until they are coated with the mixture, about 1 minute.
- Transfer pecans to the cookie sheet, spreading evenly into a single layer.
- Bake until pecans are just starting to brown, about 13 minutes.
- Transfer to another cookie sheet that is lined with wax paper.
- Separate the pecans and cool completely.
- Store in an airtight container.
CANDIED PECANS
These candied pecans are perfect to serve with cocktails or toss over salads, and the best part is that they take just 15 minutes to make!

- Preheat the oven to 350°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the Confectioners' sugar, kosher salt, cayenne pepper, and water.
- Add the pecans to the sugar mixture and stir until the nuts are evenly coated.
- Transfer the pecans to the prepared baking sheet and arrange in a single layer. Do your best to make sure the nuts are evenly spread out (if they are clumped together, they won't cook evenly). Scrape out every last bit of glaze from the bowl and drizzle over the nuts. Bake for 10 to 12 minutes, until the pecans are caramelized and the caramel on the baking sheet is a rich brown color but not burnt. (The nuts around the edges will darken first; watch closely so they don't burn.)
- Immediately slide the parchment off of the hot baking sheet and allow the pecans to cool completely on the countertop (this stops the cooking process and prevents the nuts from burning). Once cool, remove the pecans from the parchment, breaking apart any clusters if necessary, and store in an airtight container for up to two weeks.
- Note: If the nuts are sticky after cooling, that means they are a bit undercooked. Pop them back in the oven for a few minutes and let cool again.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- In a small bowl beat the egg white with the water. Stir in the pecans, mixing until well moistened.

- Mix the salt, cumin, cayenne, cinnamon and cardamom in a small bowl; set aside.

EASY CARAMELISED PECANS

- Put the pecans in a saucepan and turn the heat on. Keep moving the pan a little to make sure they don't burn.
- When the pecans start to brown a little, tip them out into a bowl and put the honey and sugar in the saucepan.
- When it begins to bubble, stir with a wooden spoon. Let it bubble for a minute and then tip in the pecans and stir to coat in the caramel.
- Tip the pecans out onto a piece of non-stick baking paper and leave to cool and harden.

- In a nonstick skillet over medium high heat, melt together brown sugar and water until rapidly bubbling. Add pecans, stirring thoroughly to coat. Cook, stirring, for 3-4 minutes, until fragrant and most of the liquid has evaporated. (But not so long at the sugars burn.)
- Spread pecans into a single layer onto a parchment-lined baking sheet, and use a fork to separate them. Let stand at room temperature for about an hour, until fully cooled, set, and dry. (Pecans will be only very slightly tacky to the touch.)

- Add pecans to a pot of boiling water in two batches, boiling for two minutes Drain and shake off all excess water.
- Sprinkle salt and cayenne over nuts.
- Coat with sugar, allowing the sugar to melt into the pecans.
- Toss the nuts in the strainer, slowly adding all sugar.
- DO NOT USE UTENSIL TO TOSS.
- Carefully add nuts to hot oil.
- Cook until golden brown, about 3 minutes, stirring occasionally.
- Remove with slotted spoon and allow to cool on cookie sheet.
SPINACH AND BLUE CHEESE SALAD WITH SLICED APPLES AND SPICED CARAMELIZED PECANS

- Cut the apple into quarters, remove the stem and the seeds, and cut into very thin slices. Sprinkle lemon juice over the slices and set aside.
- When ready to serve, in a salad bowl, combine the apple, spinach, radicchio, and blue cheese. Season lightly with salt and pepper and toss with the dressing. Adjust seasoning to taste.
- To serve, divide the salad among 4 plates and sprinkle the pecans around each salad.

CARAMELIZED PECANS
Pecans are my favorite and especially when they are caramelized. This recipe is so easy and fast and you can store them in the freezer until you are ready to use them already caramelized. Please follow the recipe and the pictures and you will have beautiful, delicious, caramelized pecans.

- 1. Roast Pecans in oven 10-15 min in oven. *Note: They are roasted properly when they don't taste bitter in the middle and have a snappy crunch to them. Set aside
- 2. In a large nonstick skillet melt butter on medium heat then add brown sugar and mix into a paste. Hold the skillet under the faucet and give it a dash of water with the sink handle. Return to the burner and stir mixing the paste and water while it is bubbling and dissolving the brown sugar. When the water evaporates give it another dash of water to incorporate it into a syrup and let it bubble and boil for a few until it starts to thicken (carmelize). *Note: Make sure the brown sugar is no longer grainy and has melted into a syrup, and the syrup has started to thicken and hold together and is not runny.
- 3. Quickly add the roasted pecans and fold them into the caramelized mixture then quickly empty them onto a tray separated from one another. Let them cool without moving them. *Note This stage has to be done quickly and you must not stir them to much or disturb the carmel coating or it will lose it's shiny sheen and become dull and brittle.
- 4. When they are cool remove from the tray and serve over vanilla ice cream or just as a treat.

SWEET AND SPICY CANDIED PECANS
Steps:
- Gather the ingredients.
- Position a rack in the center of the oven and heat to 350 F. Prepare a baking sheet by lining it with aluminum foil and spraying the foil with cooking spray.
- Spread the pecans on the baking sheet and toast them in the oven until dark and fragrant, about 10 minutes. Stir every 3 or 4 minutes.
- While the pecans are toasting, prepare the coating mixture. Microwave the butter in a large microwave-safe bowl until melted. Stir in the brown sugar, maple syrup, salt, cayenne, and cinnamon.
- Once the pecans are fragrant, remove them from the oven and pour the hot nuts into the coating mixture, reserving the baking sheet. Be careful as it might splutter and hiss. Stir until the nuts are evenly coated.
- Pour the nuts back onto the reserved baking sheet, spreading them out into an even layer.
- Bake for another 10 minutes, stirring after every 3 to 4 minutes. After 10 minutes, remove the nuts from the oven and allow them to cool and crisp up on the baking sheet.
- Once cool, break the nuts apart or coarsely chop them.
- Use them in your favorite recipe or simply serve and enjoy!
