Steps:
- Combine dried basil leaves, lemon pepper and onion powder in a small bowl.
- In another small bowl, combine yogurt, cucumber, salt and 1 tsp of herb mixture
- Reserve.
- Shape ground beef into four 1/2-inch thick patties.
- Sprinkle remaining herb mixture over both sides of patties.
- Heat large nonstick skillet over medium heat for 5 minutes.
- Place patties in hot skillet and cook 6-8 minutes, turning once.
- Patties should be cooked to an internal temperature of 160°F.
- To serve, place a burger in each pita half.
- Add two tomato slices and yogurt sauce as desired.

- 1. Place frozen burgers on baking sheet. Brush tops with pepper sauce. Bake at 350 degrees F for 18 to 20 minutes.
- 2. Combine cucumber, yogurt, onion, cumin, salt, and garlic powder. Spoon on top of burgers. Garnish with additional thin cucumber slices and chopped red onion, if desired.
- ON THE GRILL:
- Preheat grill
- Use a food thermometer to be sure patties reach minimum internal temperature of 165 degrees F.
- Helpful Hints: When you want an exotic entree in just a few minutes, this recipe saves the day. Just 20 minutes from start to finish gives you pepper-sauced burgers topped with refreshing cucumber-yogurt sauce. Garnish with a few thin slices of cucumber and chopped red onion for extra pizazz.

- To a food processor, add the chickpeas, potato, onion, tomato, ginger, salt and spices. Pulse until the ingredients are blended, still chunky, not over blended. Just until there are no large chunks of onion. You may need to scrape down the sides of the bowl to help mix properly.
- Add oil to a heavy or cast iron skillet and heat over medium heat. When hot, carefully add the burgers. Cook for 4-5 minutes, until a crust develops.. Do not move or turn, the crust will help the burger stay together. Turn carefully and cook on the other side until a crust develops.

- In a dry pan, toast the cumin seeds, sichuan peppercorns, and red chili flakes. Crush into a coarse powder with a mortar & pestle or spice grinder. Set aside.
- Combine about half of your spice mixture with the lamb, and form into 4 patties. Season both sides of each patty with salt.
- Heat a grill or cast iron skillet over high heat until searing hot. Sear the burgers until crisp on both sides, about 1-2 minutes per side.
- Set aside on a plate to rest, and cover with foil. Add the onion and peppers to the pan along with a little vegetable oil (if you used a cast iron skillet), and fry until caramelized. If you grilled your burgers outdoors, just fry the onions and peppers in a separate pan. Sprinkle with half of the remaining spice mixture.
