- Arrange 6 slices thick-cut bacon on a rack set on a foil-lined rimmed baking sheet. Bake at 375 degrees F until they just start to crisp, 12 to 14 minutes.
- Microwave 2 tablespoons sugar with 1 teaspoon water until dissolved, about 45 seconds. Flip the bacon and brush the tops with the sugar mixture.
- Sprinkle with seasonings (such as chili powder, pie spice or Cajun seasoning). Continue baking until browned, 12 to 16 more minutes. Drain on paper towels.

- Mix together the brown sugar, cayenne pepper and black pepper, set aside.
- DO NOT PREHEAT THE OVEN
- Getting ready: Cover a rimmed cookie sheet with aluminum foil - cleaning up is much more fun this way. Spray cooling rack with cooking spray - for the same reason as above and set the rack on the cookie sheet. Ok, now you are ready to place the bacon on the rack.
- Drape the bacon across the cooling rack with a little space between strips. If you need to cut some of the bacon in half to fill in the spaces, that is fine.
- Place the bacon on your oven's middle rack and turn the oven to 375 degrees.
- Bake for 20 minutes. Take out the bacon, flip each slice over and sprinkle with the brown sugar mixture on each slice of bacon.
- Bake for 15-20 minutes more. Watch closely for the last 5 minutes - it can burn quickly.

- Place peppercorn, juniper berries,, coriander, and bay leaves in a mortar and pestle and crush until all spices are coarsely ground. Transfer spice mixture to a small bowl, add in kosher salt, sugar, paprika, and pink curing salt; mix to combine. Coat pork belly all over with the cure and place in a large resealable plastic bag. Place in the coldest part of the refrigerator and cure for 5 to 7 days, flipping bag about every 12 hours.
